CHOCOLATE ALMOND FONDUE
Steps:
- In a medium saucepan over medium heat, combine half-and-half and almond extract. Heat until bubbles begin to form at edge of cream. Do not boil. Reduce heat to low and stir in chocolate chips, stirring constantly. Once all of the chocolate is melted and incorporated, slowly stir in amaretto until combined.
- Pour chocolate mixture into fondue pot and serve with goodies for dipping.
- Cook's Note: You can use this recipe with a heated chocolate fountain.

A simple dessert custard. Serve with some fresh fruit or canned. Can be made suitable for a gluten-free diet by ensuring the cornflour/cornstarch used is gluten-free. Ready in less than 10 minutes and can be served warm or cold as desired

- Blend the cornstarch with a little of the milk. Add the remaining milk.
- Add the egg and cream, whisk well.
- Pour the mixture into a small saucepan and stir constantly over a low heat until the custard thicks. DO NOT BOIL as your mixture may curdle.
- Alternately, instead of the saucepan mixture-you can use the micro-wave. Use medium low heat and stir at 1 minute intervals until the custard thickens.
- Stir in the ground almonds, vanilla and sugar.
- Serve warm or cold as desired.

- Heat candy coating and half-and-half in heavy 3-quart saucepan over low heat, stirring constantly, until coating is melted and mixture is smooth; remove from heat. Stir in liqueur and cinnamon.

- Shred Gruyere and Swiss cheeses using a hand grater to keep the cheese loose. Add cornstarch and toss to coat cheese. Remove rind from brie and cut into small cubes.
- In a heavy 3-quart saucepan on medium heat bring champagne just to a simmer but do not boil. Reduce heat to low.
- Add shredded cheeses and brie gradually stirring constantly until cheese is melted. Add almond extract and nutmeg.
- Simmer 5 to 8 minutes, stirring constantly, until thickened and smooth. Do not boil.
- Serve in a fondue pot if you have one or keep warm over a canned heat burner or even a small crock pot set to low. Try apple slices and bread cubes for dipping or any item of your choosing.

- Rub inside of a fondue pot with garlic; discard garlic. Pour cider or wine into pot, and place over medium-low heat. When liquid starts to bubble, start adding cheeses by the handful, stirring until melted and combined.
- Whisk together lemon juice and cornstarch in a small bowl until cornstarch dissolves; stir into cheese mixture. Continue stirring until mixture is smooth and bubbling slightly, about five minutes. Season with nutmeg and pepper.
- Transfer fondue pot to the table, and keep warm over the fondue pot warmer. Serve with bread and pickled vegetables.

- Preheat the oven to 325. Heat the milk in a saucepan over medium heat, stirring occasionally, until simmering. Add sugar and stir to dissolve. Turn off heat.
- In a separate bowl, whisk egg yolks for one minute until thick and lemon coloured. Drizzle hot milk into egg yolks, whisking constantly. Stir in 1 teaspoon of almond extract.
