ALMOND-CRUSTED TILAPIA
Steps:
- Beat the eggs with the lemon pepper and garlic pepper until blended; set aside. Stir together ground almonds with 1 cup of Parmesan cheese in a shallow dish until combined; set aside. Dust the tilapia fillets with flour, and shake off excess. Dip the tilapia in egg, then press into the almond mixture.
- Melt butter in a large skillet over medium-high heat. Cook tilapia in melted butter until golden brown on both sides, 2 to 3 minutes per side. Reduce heat to medium, and season fillets with salt if desired. Sprinkle the tilapia with the remaining Parmesan cheese, cover, and continue cooking until the Parmesan cheese has melted, about 5 minutes.
- Transfer the tilapia to a serving dish, and garnish with parsley springs and lemon wedges to serve.

Steps:
- Place the almonds and breadcrumbs in a food processor and pulse until coarsely ground into a crumb-like mixture. Place the crumb mixture on a plate or in a shallow bowl.
- Heat oil and butter in a frying pan over medium-high heat.
- Spread each tilapia filet with 1 tablespoon Dijon mustard on both sides. Press the tilapia into the crumbs to get it coated on both sides. I usually do this several times to make sure the whole thing gets covered.
- Place the fish into the frying pan and cook for several minutes on each side, until the outside is browned and the fish is fully cooked. I usually just check the middle of the fish for doneness - pieces will flake off easily when it's done.
- Serve with parmesan, sea salt, or lemon.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a broiling pan with aluminum foil or spray with olive oil cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.
- Mix Parmesan cheese, garlic, buttery spread, almonds, mayonnaise, bread crumbs, lemon juice, seafood seasoning, basil, black pepper, onion powder, and celery salt together in a bowl.
- Arrange tilapia fillets in a single layer on the prepared pan; cover pan with aluminum foil.
- Broil in the preheated oven for 2 to 3 minutes. Flip fillets, cover pan with aluminum foil, and broil for 2 to 3 more minutes. Remove aluminum foil and cover fillets with Parmesan cheese mixture. Broil in the oven until fish flakes easily with a fork and topping is browned, about 2 more minutes.

I made this with concerns of getting more Calcium into my diet. Almonds have 80 mg per 1 ounce. The almonds toasted up so nice giving this dish great flavor.

- Season tilapia with salt, pepper and old bay.
- Dust with flour then dip into egg.
- Press almond slices into the fish.
- Heat butter and oil in an oven proof pan.
- Carefully (so not to lose any almonds) place fillets into hot pan brown for 1 minute and flip gentle (again so not to lose any almonds) squeeze half of the lemon on the fish and place in a preheated 350 degree oven for 10-15 minutes.
- Remove gently to a platter squeeze remaining lemon.
- Garnish with scallions and serve.

This "Healthy in a Hurry" recipe came from Good Housekeeping magazine, September 2008. "Appealingly mild and lean, tilapia still has plenty of heart-healthy omega-3 fats. (Bonus: It is one of the least mercury-laden fish, and is also low in sodium.) Green beans and mushrooms deliver fiber and potassium, while crunchy almonds boast antioxidants." I'd probably skip the oil and take my fats from extra almonds.

- Preheat oven to 425 degrees. From 1 lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice; cut second lemon into wedges. In cup, mix lemon peel and 1 tablespoon juice, 1 tablespoon oil, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper.
- Spray 13" by 9" glass baking dish with nonstick spray; place tilapia, dark side down, in dish. Drizzle tilapia with lemon mixture; top with almonds, pressing them on. Bake 15 minutes or until tilapia turns opaque.
- Meanwhile, in 12-inch skillet, heat remaining 1 tablespoon oil on medium-high 1 minute. Add onion and cook 5 to 6 minutes or until golden, stirring occasionally. Stir in green beans, mushrooms, water, 1/4 teaspoon salt, and 1/8 teaspoon coarsely ground black pepper. Cook about 6 minutes or until most of liquid evaporates and green beans are tender-crisp. Toss with remaining 2 tablespoons lemon juice. Serve bean mixture and lemon wedges with tilapia.

This recipe was created blindly by me getting some frozen tilapia and just throwing together what I had in the pantry. I don't measure a lot of stuff when I cook, so the measurements aren't that exact.

- Preheat the oven the 350 - 375°F.
- First, melt one stick of butter and place in a shallow dish good for drenching. Mix together 1 cup of smashed almonds and breadcrumbs in another shallow dish good for coating,.
- Next dip tilapia in butter then going the the bread crumb mixture and then place in a baking dish or casserole dish.
- Last tuck the 4 tablespoon of butter all around the fish, Do the same thing with the garlic. Sprinkle the juice of one lemon all over the fish. Lastly place and or tuck the thyme and basil all around the fish.
- Place fish in the oven until the fish is cooked ALL the way though. Fish is not something to cook a long time so keep your eye on it.
