Almond-Crusted Pork Chops with Apples image

My mom always cooked this dish in a heavy cast-iron skillet and every time she heated the pan, it had a fragrance of pure food history. In this recipe, take care to grind the almonds fine enough so they adhere as a crust.

3/4 cup whole almonds, toasted
3/4 cup panko breadcrumbs
1 teaspoon finely grated orange zest (reserve the orange)
4 boneless pork chops (each about 8 ounces and 3/4-inch thick)
Kosher salt and freshly ground black pepper
5 tablespoons Dijon mustard
2 large whole eggs
Extra-virgin olive oil, enough for a shallow frying pan
2 tablespoons (1/4 stick) unsalted butter
2 large shallots, minced
2 Golden Delicious apples, peeled, sliced 1/4-inch thick, then diced
1 teaspoon (1 sprig) chopped fresh rosemary
Kosher salt and freshly ground black pepper
1 teaspoon (packed) light brown sugar
Juice of 1 orange (about 1/3 cup)
1/2 cup chicken stock

Steps:

  • Preheat the oven to 200 degrees F.
  • To make the pork chops: In a food processor, pulse the almonds into crumbs. Mix the breadcrumbs and almonds in a shallow dish and stir in the orange zest. Season the mixture and the pork chops with salt and pepper. In another dish, mix the mustard and eggs together. Brush the chops with the mustard mixture and dredge all over in the crumbs.
  • Heat a large ovenproof skillet over medium heat and add about 1/2 inch of the oil. When the oil is hot, brown the chops on both sides, about 3 to 4 minutes per side. Remove them to a baking sheet fitted with a wire rack and cook in the oven until they reach an internal temperature of 145 degrees F.
  • To make the apples: Pour the fat out of the skillet, then wipe the skillet and set over medium heat. Melt the butter. Add the shallots, apples and rosemary, and toss until the apples begin to brown, about 3 minutes. Add the sugar, orange juice, stock, and some salt and pepper, and bring to a simmer. Cook just until the sauce comes together, about 15 minutes. Remove the pork chops from the oven and serve with the apples.

1/2 cup smoked almonds
1/2 cup dry bread crumbs
2 large eggs
1/3 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
4 boneless pork loin chops (1 inch thick and 6 ounces each)
2 tablespoons olive oil
2 tablespoons butter
1/2 cup reduced-fat mayonnaise
1/4 cup honey
2 tablespoons Dijon mustard

Steps:

  • In a food processor, process the almonds until finely chopped. Transfer to a shallow bowl; add bread crumbs. In another bowl, beat the eggs. In a large bowl, combine flour, salt and pepper. Add 1 pork chop at a time and toss to coat. Dip pork chop in eggs, then coat with almond mixture. , Preheat oven to 400°. In a large skillet over medium heat, cook chops in oil and butter until lightly browned, 2-3 minutes on each side. Transfer to a rimmed baking sheet; bake, uncovered, until a thermometer inserted in pork reads 145°, 10-15 minutes. Meanwhile, in a small bowl, combine the mayonnaise, honey and mustard. Serve with pork chops.

I love a thick cut pork chop and find that giving it a good long sear before flipping it and packing on a buttery flavorful crust makes for a warming weeknight dinner. The apples and onions are a classic pair and roast away while you focus on getting you chops browned and cooked to juicy perfection.

4 Gala apples, cored and cut into 1/2-inch-thick wedges
1 medium red onion, cut into 1/2-inch-thick wedges
5 tablespoons olive oil
Kosher salt and freshly ground black pepper
3/4 cup panko breadcrumbs
4 tablespoon unsalted butter, melted
2 tablespoons whole-grain mustard
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves
Four 1- to 1 1/4-inch-thick bone-in pork rib chops (about 12 ounces each)
1 bunch rainbow Swiss chard, stems cut into 1/2-inch pieces, leaves cut into 2-inch pieces
1/4 cup low-sodium chicken broth
1 tablespoon apple cider vinegar

Steps:

  • Position oven racks in the upper and lower third of the oven and preheat to 450 degrees F.
  • Toss the apples and onion in a large bowl with 2 tablespoons of the oil, 1/2 teaspoon salt and a few grinds of pepper. Spread into an even layer on a rimmed baking sheet. Roast on the lower oven rack until tender and caramelized, 25 to 30 minutes.
  • Meanwhile, toss together the panko, butter, whole-grain mustard, Dijon, thyme and a few grinds of pepper in a medium bowl until well combined (the breadcrumbs should hold together when squeezed). Season the pork chops generously on both sides with salt and pepper.
  • Heat 2 tablespoons of oil in a large saute pan over medium-high heat until shimmering and very hot. Add the pork chops and cook, undisturbed, until well browned, 4 to 5 minutes. Flip the chops, then press some of the mustard-panko mixture onto the top of each chop. Transfer the saute pan to the upper rack of the oven and roast until the panko is browned and the pork reaches an internal temperature of 145 degrees F, 6 to 8 minutes more.
  • Heat the remaining 1 tablespoon oil in another large saute pan over medium-high heat. Add the Swiss chard stems, a pinch of salt and a few grinds of pepper. Cook, stirring, until crisp-tender, about 2 minutes. Add the chard leaves and chicken broth and continue to cook, stirring, until the chard is wilted and the broth has almost completely evaporated, 2 to 3 minutes more. Stir in the vinegar, then season with salt and pepper.
  • Divide the pork chops, apples and chard among 4 dinner plates. Spoon any pan juices from the chard over the vegetables and serve warm.

I couldn't find quite what I was looking for so I combined a couple of recipes together and made these pork chops for company the other night. The almonds make a wonderful brown crispy crust that was refreshingly different an delicious. I rarely measure when i cook so the amounts are approximate.

1 lb pork chop
1 cup ground almonds
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 egg (beaten)
1 -3 tablespoon water
1/4 cup finely diced onion
2 -3 garlic cloves
1 (11 ounce) can mandarin oranges (drained and liquid reserved)
4 tablespoons Dijon mustard
2 tablespoons soy sauce
fresh parsley (optional)
olive oil

Steps:

  • Mix ground almonds, salt, and peppers.
  • In a small bowl mix egg and water.
  • Spread almond coating in a shallow dish or plate.
  • Dip chops in egg wash and then dredge in almond mixture. Set aside.
  • Heat oil in a pan and sauté onions and garlic until lightly browned. Remove from pan and set aside.
  • Brown chops in oil over medium heat. 2-3 minutes on a side or until golden brown.
  • Meanwhile mix liquid from oranges, soy sauce, and mustard.
  • Add sauce to chops and turn heat down to low let simmer for 5 minutes or until chops are cooked through.
  • Top with mandarin oranges and fresh parsley.

Pretzel-Crusted Pork Chops With Orange-Mustard Sauce image

from the September 2006 Bon Appetit magazine. Crushed pretzels make a better-than-breadcrumb crust. This tastes great with or without the balsamic reduction, but if you choose to use the reduction please use the best balsamic vinegar you can, because since it is the only ingredient in the reduction, the flavor is dependent on the quality of the balsamic. I think these chops are just incredible, and the rest of my family enjoyed them too.

2 oranges
3/4 cup water
1/4 cup sugar
2 cups whipping cream
1/4 cup Dijon mustard
1/2 cup all-purpose flour
3 large eggs
2 cups crushed pretzel sticks (about 5 ounces)
8 thick center-cut pork chops
6 tablespoons butter, divided

Steps:

  • Simmer balsamic vinegar in small saucepan over medium heat until reduced to 2/3 cup, about 10 minutes.
  • Transfer to small pitcher.
  • Do Ahead: Balsamic reduction can be made 3 days ahead; cover and let stand at room temperature.
  • Using vegetable peeler, remove peel from oranges (orange part only) in long strips.
  • Slice peel lengthwise into very thin strips.
  • Place peel in heavy small saucepan and add enough cold water to cover peel by 1 inch.
  • Bring to boil; strain.
  • Repeat two more times.
  • Return peel to same saucepan.
  • Add 3/4 cup water and sugar.
  • Boil until almost all liquid is absorbed, stirring occasionally, about 10 minutes; drain.
  • Do Ahead: Candied orange peel can be made 2 days ahead; place in small bowl, cover and refrigerate.
  • Mix cream, mustard and 2 Tbs candied orange peel in heavy small saucepan.

  • Spoon 2 Tbsp sauce onto each plate and place chop atop sauce.
  • Drizzle with balsamic reduction and garnish with remaining candied orange peel.

Candied orange peel is really not hard to make; just more time consuming. This recipe would be great for entertaining because most of the components can be made beforehand.
