1 cup plus 1 tablespoon all-purpose flour (spooned and leveled), divided, plus more for work surface
3/4 cup granulated sugar
1/2 teaspoon fine salt, divided
6 cups drained jarred sour cherries (from three 24-ounce jars)
1 teaspoon pure vanilla extract
1 Basic Pie Crust or store-bought pie crust in a deep-dish 9-inch plate
1 large egg white, lightly beaten
1/2 cup light-brown sugar
1 stick cold unsalted butter, cut into pieces
1/4 cup almonds

Steps:

  • Preheat oven to 375 degrees, with racks in middle and lower thirds. In a large bowl, stir together 1 tablespoon flour, granulated sugar, and 1/4 teaspoon salt. Stir in cherries and vanilla. Brush crust with egg white and fill with cherry mixture.
  • In a food processor, pulse together remaining 1 cup flour and 1/4 teaspoon salt. Add brown sugar, butter, and almonds; pulse until large pieces form. Scatter crumble over cherry filling.
  • Bake on middle rack, with a foil-lined rimmed baking sheet on lower rack to catch drips, until topping and crust are golden, 45 minutes. Tent pie loosely with foil; bake until juices in center are bubbling, 30 to 45 minutes more. Transfer to a rack and let cool. Serve warm or at room temperature. Cover and keep at room temperature, up to 3 days.

The paradox of a fruit crisp is that it's usually not crisp, nor is a fruit crumble necessarily crumbly. Here, however, the crumbs are as crisp as cookies, offering a textural contrast to the puddinglike berries. This delicious treat is at once crispy, crumbly and profoundly fruity.

8 cups mixed berries, such as raspberries, blueberries, strawberries (halved or quartered) and blackberries
2 to 4 tablespoons granulated sugar, depending upon sweetness of berries
1 teaspoon finely grated lemon zest
1 tablespoon quick-cooking tapioca (optional)
1 2/3 cups/208 grams all-purpose flour
1/3 cup/70 grams dark brown sugar
1/3 cup/67 grams granulated sugar
1/3 cup/38 grams sliced almonds, finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon allspice
1/8 teaspoon salt
1/2 cup/8 tablespoons/113 grams melted butter (1 stick)
Vanilla ice cream, for serving (optional)

Steps:

  • Heat oven to 350 degrees. To prepare filling, toss berries with sugar, lemon zest and tapioca (if using). Set aside.
  • To make topping, in a large bowl, whisk together flour, sugars, almonds, cinnamon, ginger, allspice and salt. Stir in butter. Coarse crumbs will form.
  • Pour filling into a 2-quart gratin dish or 10-inch round cake pan (do not grease first). Using your fingers, form topping mixture into 3/4-inch to 1-inch crumbs and spread over cake.
  • Bake until filling bubbles and topping is light golden, about 55 minutes. Let cool slightly. Serve warm or at room temperature with ice cream if you like. Crisp can be made up to 8 hours ahead and kept at room temperature, or warmed up briefly in a 350 degree oven.

1 1 (9 inch) unbaked pie crust (see footnote for recipe link)
½ cup slivered almonds
½ cup light brown sugar
⅓ cup rolled oats
⅓ cup all-purpose flour
¾ teaspoon salt
6 tablespoons cold, unsalted butter, cut into pieces
2 pounds cherries, pitted
½ lemon, juiced
⅓ cup white sugar, or more to taste
¼ cup cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Roll out pie crust and lay into a 9-inch pie pan.
  • Combine almonds, brown sugar, oats, flour, and salt in a large bowl. Work butter into the almond mixture with your fingers, breaking up any large pieces, until incorporated completely. Cover and chill for 15 minutes.
  • Combine cherries, lemon juice, white sugar, and cornstarch. Stir until well coated and no dry lumps remain, 3 to 4 minutes.
  • Pour cherries and any accumulated juices into the prepared pie pan. Press down into the pan. Crumble oat mixture over the top. Place the pan on the prepared baking sheet.
  • Bake in the preheated oven until cherries are bubbling and the crust and crumble topping are browned, about 1 hour 15 minutes. Let cool completely.

1 kg mixed frozen berries and cherries
100 g sugar, (I used a mixture of golden caster, soft brown and demerara)
½ an orange
50 g unsalted butter, (cold)
100 g plain flour
100 g flaked almonds

Steps:

  • Preheat the oven to 200°C/400°F/gas 6
  • Tip the frozen berries into a saucepan with half the sugar and place on a medium heat.
  • Squeeze in the juice of half an orange and cook for 5 to 8 minutes, or until the sugar has dissolved and the fruit has softened. Remove from the heat and leave to cool a little.
  • Meanwhile, cube the butter and place in a mixing bowl with the flour. Rub together with your fingertips until it resembles breadcrumbs, then stir in the almonds and remaining sugar.
  • Transfer the berry mixture to a 25cm x 30cm baking dish and sprinkle over the crumble topping.
  • Bake in the oven for 25 to 30 minutes, or until golden and crunchy. Delicious served with vanilla ice cream.

10 apples (peeled and sliced into thin half moons )
2 tbsp butter
1/3 cup brown sugar
1 tsp vanilla
pinch of salt
1 cup flour
½ cup rolled oats
1 cup sliced almonds
3/4 cup brown sugar
1 tsp cinnamon
½ cup melted butter

Steps:

  • Preheat the oven to 200°C/390°F.
  • Melt the butter in an oven-proof skillet or pan. Add the apples, sugar, salt and vanilla.
  • Cook until the apples are starting to soften and their juices are starting to caramelize.
  • Combine all the crumble ingredients in a bowl and mix well.
  • Top the apples with the crumble mixture.
  • Place in the oven and allow to bake for 20 minutes until golden brown and bubbling.

A perfectly delicious crumble that you won't believe is sugar-free & low carb!

2 1/2 cups of fresh blackberries cleaned
2 tbsp erythitol
3 tbsp THM Gentle Sweet (you could use 2 tbsp of Truvia or a doonnk of stevia)
1/2 tsp almond flavor (you can use vanilla instead of almond)
Crumble Topping-
3 tbsp THM Gentle Sweet
1/2 tsp baking soda
1 cup of almond flour
1/4 cup of oat fiber (if you do not have this just use 1/4 cup more of almond flour or even coconut flour)
1/2 cup of unsalted butter cold
Sprinkle of salt
1/4 cup of slivered almonds

Steps:

  • Mix 2 tbsp of Erythitol & 1/2 tbsp of THM Gentle Sweet with the berries.
  • Add the almond or vanilla flavor and mix.
  • Grease a 9X9 baking dish.
  • Place berries in the baking dish.
  • Mix dry crumble ingredients together except the almond slivers.
  • Cut up the cold butter into chunks.
  • Work the butter into the crumble.
  • Preheat oven to 350 degrees.
  • Sprinkle the crumble over the top of the berries.
  • Sprinkle slivered almonds over the top.
  • Bake at 30 minutes until a golden brown.
  • Serve with homemade low carb ice cream or Breyer's Low Carb Ice Cream or even a scoop of homemade whipped cream.
  • Enjoy!

ORANGE AND ALMOND CRUMBLE CHRISTMAS MINCE PIES



Orange and Almond Crumble Christmas Mince Pies image

Delicious little pies that combine an orange short crust pastry base with mincemeat filling and an almond crumble topping. Serve these warm with whipped cream or brandy butter. This recipe can be made in to one large pie - but I still prefer the dainty individual mini pies! I have two mincemeat recipes posted that can be used in these pies, if you are unable to source good quality commercial mincemeat locally. Recipe #257241 or Recipe #184762. Don't forget to leave a couple out for Father Christmas on Christmas Eve!

Number Of Ingredients 10

100 g butter, chilled and cut into cubes
175 g plain flour, plus extra for dusting
1 tablespoon light brown sugar
1 orange, zest of, finely grated
250 g good quality mincemeat, preferably home-made
50 g cold butter
50 g plain flour
2 tablespoons light brown sugar
2 tablespoons almonds, finely chopped
icing sugar, for dusting

Steps:

  • Make the pastry in a large bowl or food processor by blending the butter into the flour until the mixture resembles breadcrumbs.
  • Stir in the sugar and orange zest and then 2 tbsp water.
  • Bring the mixture together with your hands, adding a few more drops of water if it feels a little dry.
  • Preheat the oven to 180C/375F/gas 4.
  • Roll out half the pastry (keep the other half wrapped in the fridge) on a lightly floured surface. You want the pastry to be very thin, so it is crisp when cooked.
  • Cut out 12 circles of pastry with a plain 6cm cutter (you will need to re-roll the pastry a couple of times) and use to line a 12-hole, non-stick cup cake or mini muffin tin.
  • (It is quite a soft pastry, so any little gaps that form as you are lining the holes can easily be patched up.).
  • Chill while you make the topping.
  • In a small bowl, make the crumble topping by rubbing the butter into the flour until the mixture looks like breadcrumbs. Stir in the sugar and almonds.
  • With a teaspoon, fill each pastry case with mincemeat, gently pressing it down to leave room for the topping.
  • Sprinkle the topping over each pie, place the tin on a baking tray and bake for 20 minutes or until the topping is golden.
  • Leave the pies to cool in the tin before taking them out carefully. They are fragile when hot, so use a small knife to help lift them out.
  • Unless you have two tins, repeat the process with the second batch of pastry, filling and topping.
  • Eat the mini mince pies warm or cold, lightly dusted with icing sugar and served with whipped cream or brandy butter.

Sweet dough for 1 crust pie
1 cup all-purpose bleached flour
3 tablespoons sugar
1/4 teaspoon freshly grated nutmeg
1/2 cup sliced almonds
6 tablespoons unsalted butter, melted
3 pounds firm, ripe, yellow fleshed free stone peaches, about 8 or 9 medium peaches
1/2 cup sugar
2 tablespoons all-purpose bleached flour
1/2 teaspoon almond extract
1/8 teaspoon freshly grated nutmeg
2 tablespoons cold unsalted butter

Steps:

  • To make topping: Combine flour, sugar and nutmeg in a mixing bowl; stir well to mix and stir in sliced almonds. Stir in butter evenly. Set aside for 5 minutes, then, using your fingertips, break the mixture into 1/4 to 1/2-inch crumbs. Set aside again while you prepare the filling.
  • Preheat oven to 400 degrees and set racks at middle level. Roll out bottom crust and arrange in 9-inch Pyrex plate.
  • To make filling: Peel the peaches by cutting a cross in the blossom end of each and dropping them three at a time into a pan of boiling water. Remove after 20 or 30 seconds with a slotted spoon or skimmer and drop them into a bowl of ice water. If the peaches are ripe, the skin will slip off easily. If it does not, remove the skin with a sharp stainless steel paring knife. (If you peel it with a knife, include an extra peach for what you have peeled away.) Hold each peeled peach gently in your left hand over a mixing bowl (if you are left handed reverse.) With a stainless steel paring knife make a cut through to the pit, from stem to blossom end. Make another cut about 3/4-inch to the right of the first one along the outside of the peach. Angle the knife blade back so the cuts meet at the pit. Twist the knife blade upward slightly as a wedge of peach will fall into the bowl. Continue in the same manner around the peach, cutting it into 8 to 10 wedges. Discard the pit and repeat with remaining peaches. Add remaining ingredients, except the butter, to the peaches and stir gently with a rubber spatula to combine. Pour filling into the prepared pastry shell and smooth. Dot with the butter.
  • Scatter the crumb topping evenly over the filling. Place pie on the bottom rack of the oven and bake for 15 minutes. Lower the temperature to 350 degrees and move pie to the middle rack. Bake another 30 minutes, or until the crust and crumble are a deep golden and the juices are just beginning to bubble up. Cool the pie on a rack and serve warm or room temperature.

8 eating apples (Granny Smith or Braeburn work well)
50g golden caster sugar
½ tsp mixed spice
2 tbsp plain flour, plus extra for dusting
500g block shortcrust pastry
1 egg, beaten (optional)
clotted cream, custard or ice cream, to serve
50g plain flour
50g ground almonds
70g golden caster sugar
70g cold butter, cut into cubes
30g flaked almonds

Steps:

  • First, make the crumble. Tip the flour, ground almonds, sugar and a pinch of salt into a bowl, then rub in the butter with your fingers until the mix resembles breadcrumbs. Stir in the flaked almonds and chill until needed. Can be prepared up to two days ahead and chilled.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Peel, core quarter and slice the apples, then tip into a bowl with the sugar, mixed spice and flour. Toss well and set aside. Roll the pastry out on a lightly floured surface until it's large enough to line a 20-22cm pie dish. Line the dish with the pastry, then trim and crimp the edge. Alternatively, re-roll the pastry trimmings into an 80cm-long strip, then cut into three thin, long strips, and arrange into a 1cm-wide plait. Arrange the plait around the edge of the dish, and brush with some beaten egg.
  • Spoon the apples into the base, then scatter over the crumble. Bake on the hot tray for 35-40 mins until the topping is toasted and the pastry is deep golden. Leave to stand for 10 mins, then serve warm with cream, custard or ice cream.

1 cup cracker barrel pancake mix (can substitute but I wouldn't)
1 cup milk
1/2 cup melted butter
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
2 (15 ounce) cans peach slices in heavy syrup or 2 (15 ounce) cans diced peaches in heavy syrup
1/4 cup sugar
1/2 cup brown sugar
1/8 cup flour
1/2 teaspoon cinnamon
1 tablespoon softened butter
sliced almonds

Steps:

  • Mix all batter ingredients in a bowl with wisk until well incorperated and light. Pour into non greased 8 x 8 baking pan.
  • Drain peaches of syrup except for about a tablespoon of juice in each can, and mix with sugar until it has dissolved. Pour over batter but do not mix -- batter will rise over peaches and juices on it's own.
  • Mix all topping ingredients with hands slightly breaking up almonds as you incorperate. Do not place on cobbler yet as the almonds will burn! That step will come later.
  • Place into 375 degree oven for 45 minutes. Then, while leaving cobbler in oven, place crumble topping over cobbler and bake another 10-15 minutes. Watch carefully so that nuts don't burn.
  • Serve while still a little warm with some cinnamon ice cream and enjoy!
