This delicious cherry sauce is the perfect accompaniment for your cheesecake, pound cake, waffles, rice pudding, ice cream and more!

1 1/2 cups canned cherries plus 1/2 cup of the light syrup from the can (or fresh or frozen cherries plus 1/2 cup water)
3 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon butter (vegans: use an oil-based spread)
1 tablespoon cornstarch dissolved in 1/4 cup water
1/2 teaspoon quality pure almond extract

Steps:

  • Place the cherries and the syrup or water in a small saucepan along with the sugar, butter and lemon juice. Bring to a boil. If using fresh or frozen cherries, reduce the heat and simmer for another 3 minutes. Stir in the cornstarch mixture, stirring continually until the sauce is thickened, about 1 minute. Remove from heat and stir in the almond extract.
  • Cover and store in the fridge where it will keep for up to a week.
  • Serve warm or at room temperature.

For the Rice Pudding:
1 cup arborio rice
1 1/4 cup water
4 cups milk
1/4 teaspoon salt
2 teaspoons finely grated lemon zest
2 tablespoons sugar
4 ounces chopped blanched almonds
For the Risalamande:
2 cups heavy whipping cream
1/4 cup sugar
2 teaspoons vanilla bean paste (*not extract*)
1/2 teaspoon quality almond extract
Cherry Sauce (warm, for serving (click the link for the cherry sauce recipe))
Sprigs of fresh mint for garnish (optional)

Steps:

  • Bring the rice, salt, lemon zest, sugar and water to a boil in a medium-sized stock pot. Boil for 3 minutes, add the milk and return to a boil. Reduce the heat to low, cover and simmer for 30-35 minutes, stirring occasionally, increasing the frequency during the last 10 minutes to prevent scorching. Stir in the chopped blanched almonds.
  • Let the rice cool and then chill for several hours or overnight.
  • Beat the cream until it starts to thicken. Add the sugar, vanilla bean paste and almond extract and beat until stiff peaks form. Be careful not to over-beat. Stir the cream mixture into the rice pudding.(Note: The rice will may be very stiff. Stir it to loosen it up and then stir it more after the cream has been added to break up any clumps.)
  • Serve the Risalamande at room temperature with the warm cherry sauce.

2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 1/3 cups granulated sugar
1/2 cup butter or margarine, softened
1/2 cup vegetable oil
4 eggs
1/2 cup milk
1 can (12.5 oz) almond pastry filling
1 1/2 cups fresh cranberries
1 cup granulated sugar
1/3 cup dried cherries, halved
2 teaspoons cornstarch
3/4 cup orange juice
1 cup whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease bottom and side of 12-cup fluted tube cake pan with shortening; lightly flour. Mix flour, baking powder, salt and cinnamon; set aside.
  • In large bowl, beat 1 1/3 cups granulated sugar, the butter, oil and eggs with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 5 minutes, scraping bowl occasionally. Beat in flour mixture, milk and pastry filling on low speed until blended. Spread in pan.
  • Bake 55 to 65 minutes or until toothpick inserted in center of cake comes out clean. Cool 20 minutes; remove from pan to wire rack. Cool completely, about 2 hours.
  • Meanwhile, in 2-quart saucepan, cook all Cherry-Berry Sauce ingredients over medium-high heat, stirring occasionally, until cranberries pop and mixture boils and thickens slightly. Store covered in refrigerator.
  • In chilled small bowl, beat all Sweetened Whipped Cream ingredients with electric mixer on high speed until stiff peaks form. Serve cake with whipped cream and warm sauce.

7 tablespoons plus 3/4 cup sugar
3/4 cup short-grain or medium-grain rice
1 vanilla bean, split lengthwise
1/2 cup sliced almonds, toasted
1 cup chilled whipping cream
1 16-ounce package frozen pitted cherries, thawed
1 lemon, quartered
1 tablespoon cornstarch mixed with 1 tablespoon water

Steps:

  • Combine milk, 5 tablespoons sugar and rice in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean and bring to boil. Reduce heat to medium and simmer until rice is tender and mixture is thick, stirring frequently, about 35 minutes. Discard vanilla bean. Mix in almonds. Pour rice pudding into 13x9x2-inch metal baking pan; cool completely.
  • Using electric mixer, beat cream and 2 tablespoons sugar in medium bowl until medium peaks form. Fold cream into rice pudding mixture in pan. Cover and refrigerate until cold, about 4 hours. (Can be made 1 day ahead. Keep refrigerated.)
  • Cook cherries, lemon and remaining 3/4 cup sugar in heavy medium saucepan over medium heat until cherries are tender, stirring occasionally, about 5 minutes. Add cornstarch mixture and bring to boil, stirring constantly. Discard lemon. Spoon pudding into bowls. Spoon hot cherry sauce over.

1 teaspoon salt
1 jar (12 ounces) cherry preserves
1/4 cup cider vinegar

Steps:

  • Sprinkle roast with salt; place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 30 minutes., In a small saucepan, bring the preserves, vinegar, corn syrup and spices to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Set aside 3/4 cup for serving. Stir almonds into remaining mixture. , Brush roast with some of the glaze. Bake 35-50 minutes longer or until a thermometer reads 160°, brushing frequently with remaining glaze. Let stand for 10 minutes before slicing. Serve with reserved cherry mixture.

2/3 cup cherry preserves
2 tablespoons red wine vinegar
1/8 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
2 tablespoons blanched sliced almonds
4 (4 ounce) pork loin chops, 1/2 inch thick

Steps:

  • Combine the preserves, wine vinegar, cinnamon, cloves and nutmeg in a saucepan and mix well.
  • Bring to a boil.
  • Boil for one minute, stirring occasionally.
  • Remove from heat.
  • Stir in the almonds.
  • Pour 1/3 of mixture into a glass measure to use for basting.
  • Reserve the remainder to serve as a sauce with the chops.
  • Grill the pork chops 4 to 6 inches from the heat source over medium-hot coals for 4-5 minutes on one side.
  • Turn and grill on the other side, basting well with the cherry almond sauce.
  • Continue grilling until the desired degree of doneness is reached when measured in the center of each chop.
  • (145°F for medium rare; 160°F for medium; 170°F for well-done).
  • Serve with the reserved cherry almond sauce.

2 cups halved red candied cherries
½ cup blanched slivered almonds
½ cup cake flour
1 cup butter, softened
1 cup white sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
4 eggs
1 ¾ cups cake flour
2 teaspoons baking powder
½ teaspoon salt
⅓ cup milk

Steps:

  • Combine cherries, almonds, and 1/2 cup flour in a bowl; mix until fruit is well coated.
  • In another bowl, combine 1 3/4 cups flour, baking powder, and salt. Stir well to blend.
  • Cream butter or margarine, sugar, and flavorings together until light and fluffy. Add eggs one at a time, beating for one minute with mixer on high speed after each addition. Add flour mixture to creamed mixture alternately with milk, starting and ending with flour mixture. Stir in floured fruits and nuts. Spread batter into greased and floured bundt or tube pan.
  • Bake at 300 degrees F (150 degrees C) for 55 to 65 minutes, or until toothpick inserted in center comes out clean. Cool cake in pan for 10 minutes, then turn out onto wire rack to cool completely. Wrap cooled cake in aluminum foil, and store in cool place for several days to allow cake to ripen.

1 teaspoon vanilla
1 cup blanched whole almonds (about 4 ounces)
1/2 cup all-purpose flour
1 cup sugar
3/4 teaspoon salt
6 large egg whites
1/3 cup sliced almonds
Accompaniment: sour cherry sauce:
3 cups sour cherries (about 1 1/2 pounds)
1/2 cup sugar
1/2 cup water
1 teaspoon cornstarch mixed with 1 tablespoon water

Steps:

  • To make the torte:
  • In a small saucepan melt butter over moderately low heat and continue to heat until golden brown with nutlike fragrance. (Bottom of pan will be covered with brown specks.) Cool butter to warm and stir in vanilla.
  • Preheat oven to 375°F. Butter and flour a 9-inch round cake pan, knocking out excess flour.
  • In a food processor finely grind whole almonds with flour, 2/3 cup sugar, and 1/2 teaspoon salt.
  • In a large bowl with an electric mixer beat whites with remaining 1/4 teaspoon salt until they hold soft peaks. Add remaining 1/3 cup sugar gradually, beating until meringue just holds stiff peaks. Fold in nut mixture gently but thoroughly. Fold in butter gently but thoroughly (batter will deflate) and spread in pan.
  • Sprinkle top of batter evenly with sliced almonds and bake torte in middle of oven 35 to 40 minutes, or until it begins to pull away from side of pan and a tester comes out clean.
  • Cool torte in pan on a rack 15 minutes and invert onto rack. Flip torte right side up and cool completely. (Torte may be made 1 day ahead and kept in an airtight container at room temperature.)
  • Serve cake with sauce.
  • To make the sauce:
  • Working over a heavy saucepan pit cherries. In pan bring cherries, sugar, and water to a boil. Stir cornstarch mixture and add to sauce, stirring. Simmer sauce 2 minutes and cool to room temperature. (Sauce may be made 2 days ahead and chilled, covered. Bring sauce to room temperature before serving.) Makes about 3 cups.

  • Combine cherries, lemon juice and almond extract in a blender and puree until very smooth and almost fluffy. Transfer to a medium bowl and set aside.
  • In a large, clean, metal bowl, beat egg whites on medium speed until very soft peaks form. Continue to beat while slowly adding sugar in a steady stream. Beat until peaks are stiff but not dry. Use a rubber spatula to beat one-third of egg whites into cherry puree. Gently fold puree into remaining egg whites. Divide this mixture among ramekins and smooth the tops. Bake just until well-risen and beginning to brown, 12 to 14 minutes.
  • To serve, immediately bring soufflés to the table. Pass around warm chocolate sauce, so that each person may split his soufflé in the middle and spoon in sauce if desired.
  • For warm chocolate sauce: Heat 2 or 3 inches of water in a small saucepan to a low simmer. Combine chocolate with butter and heavy cream in a heatproof bowl that fits over saucepan - bowl should not touch water. Stir until chocolate melts. Remove from heat and stir well until smooth; serve immediately. (Sauce may be reheated by setting it over simmering water as in preparation.).
