Yes, you can do more with almond butter than spread it onto toast. Here, the nut butter makes for a hearty sauce that beautifully soaks in the flavor of the spices and gives the green beans a rich coating. This is a hearty side that can also become a full meal-just add rice, paratha or roti.

2 tablespoons neutral oil, such as canola or vegetable oil
1 pound green beans, trimmed
Kosher salt and freshly ground black pepper
1 tablespoon freshly ground coriander seeds
1 clove garlic, minced
3 tablespoons creamy unsalted almond butter
1 tablespoon lemon juice
Cooked rice, paratha or roti, for serving, optional

Steps:

  • Heat the oil in a large skillet over medium-high until shimmering. Add the green beans, 1/2 teaspoon salt and 1/4 cup of water. Cover and cook until the green beans are al dente, 3 minutes.
  • Uncover, add the coriander, garlic and 1 1/4 teaspoons pepper, and toss to coat. Add the almond butter, reduce to low heat and cook, tossing frequently, until the almond butter melts and the green beans are evenly coated, 2 to 4 minutes. When the green beans are done, they should still retain a slight crunch and the spices should be very fragrant. Turn the heat off and stir in the lemon juice. Taste and adjust the salt as needed. Serve with rice, paratha or roti if desired.

3 lbs raw green beans (fresh or frozen)
1 1/2 sticks salted butter
or use unsalted butter and add 3/4 tsp salt when you begin to melt the butter in the skillet
1 1/2 cups sliced almonds
Grated Parmesan to taste - optional

Steps:

  • Rinse green beans. Snip the bases off on all the green beans.
  • Fill a large soup pot 2/3 with water and bring to a rapid boil. Add 2 Tbsp salt. Add beans and boil 6 to 7 minutes, until crisp-tender.
  • Drain beans immediately and rinse them with cold water to stop the cooking process, then place them in your serving dish.
  • In a large skillet, over medium heat, melt 1 stick of butter. Add shaved almonds to the skillet and stir them until they are golden. Watch them closely once they start to golden because they can burn quickly beyond this point.
  • Melt in the rest of the butter (1/2 stick), stir and pour the buttery almonds evenly over the green beans.
  • Use tongs to lightly toss the beans with the buttery almonds, but not too much because the almonds tend to escape to the bottom of the dish.

1 envelope onion soup mix
2/3 cup slivered almonds, toasted
2 tablespoons grated Parmesan cheese
1 teaspoon paprika
6 tablespoons butter, melted

Steps:

  • In a large saucepan, combine the beans, water and soup mix. Bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15-20 minutes. , In a small bowl, combine the almonds, cheese and paprika. Drain beans; drizzle with butter and sprinkle with almond mixture. Toss to coat.
