My go-to breakfast. It's delicious and doesn't take very long to prepare. Serve with toppings such as chia or flax seeds and strawberries, blueberries, blackberries, etc.

½ cup old-fashioned rolled oats (such a Quaker®)
½ cup vanilla-flavored almond milk
1 tablespoon ground cinnamon
1 banana
1 tablespoon almond butter

Steps:

  • Place oats, almond milk, and cinnamon in a pot over medium heat. Cook until desired consistency is reached, 5 to 8 minutes.
  • Mash banana and almond butter together in a separate bowl until creamy. Pour mixture into the cooking oatmeal. Stir for about 1 minute; remove from heat.

I find it works well with some vanilla extract instead of almond and topped with crunchy peanut butter and a drizzle of honey! If you like your oatmeal just a bit thicker, use a little less milk or cook for a little longer.

1 small banana
1 cup almond milk
1 tablespoon honey
1 teaspoon almond extract
¼ teaspoon ground cinnamon, or more to taste
1 pinch salt
½ cup rolled oats

Steps:

  • Mash half the banana in a saucepan. Whisk almond milk, honey, almond extract, cinnamon, and salt with the mashed banana until smooth; bring to a boil and stir oats into the mixture. Reduce heat to medium-low and cook at a simmer until the oats are tender and the moisture has been absorbed to your desired consistency, 5 to 7 minutes. Transfer oatmeal to a bowl.
  • Dice remaining banana half. Top oatmeal with banana and more cinnamon, as desired.

This is easily the most delicious almond butter I've ever tasted! The secret to this incredible nut butter is to coat the almonds in maple syrup, hemp hearts, chia seeds, and flaxseeds, and then roast it all until fragrant and golden. After processing for about 5 to 10 minutes, it turns into the creamiest, "drippy" nut butter ever. I love adding a healthy portion of cinnamon, fine sea salt, and pure vanilla bean powder (or extract) to take it over the top. You'll be enjoying this spread straight out of the processor bowl-I can promise you that! I recommend using a heavy-duty food processor when making nut butters; the smaller machines just don't have the power to do the job and might burn out.

2 cups whole raw almonds
2 tablespoons whole flaxseeds
2 tablespoons hemp hearts
1 tablespoon chia seeds
3 tablespoons (45 mL) pure maple syrup
1/2 tablespoon (7 mL) coconut oil
1 teaspoon ground cinnamon
1/4 to 1/2 teaspoon fine sea salt, to taste
1 teaspoon (5 mL) pure vanilla extract or 1/2 teaspoon (2.5 mL) pure vanilla bean powder

Steps:

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. In a large bowl, mix together the almonds, flaxseeds, hemp hearts, chia seeds, and maple syrup until combined.
  • Spread the almond mixture onto baking sheet in an even layer. Bake for 30 minutes, stirring once halfway through.
  • Remove from oven and allow the almond mixture to cool for 10 minutes before placing into a food processor.
  • Add the almonds into the food processor along with the coconut oil. Process for about 5 to 10 minutes, stopping to scrape the bowl every 60 seconds, or as needed. (Be sure to leave the processor chute uncovered so the steam from the almonds can escape.) The mixture will be very drippy and smooth when ready.
  • Add in the cinnamon, salt, and vanilla and process until combined.
  • Remove the almond butter and store in a glass jar or a container with an airtight lid. If the almond butter is still warm, allow it to come to room temperature before securing the lid.

3 cups water
1 1/2 cups rolled oats (you may use steel cut oats or a mixture if desired)
1 dash salt
1/2 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 teaspoon ginger powder
1 teaspoon vanilla extract (to the water)
1 teaspoon flaxseed oil

Steps:

  • Add the cinnamon, cardamom, and ginger powder to the water to boil. Some people add their oatmeal to the water after it begins to boil, but I find that adding the oatmeal at the same time, before it begins to boil, actually gives the oatmeal a very smooth, rich flavor. Once you boil the oatmeal for about fifteen minutes and it boils down into a porridge, add a fruit of your choice. Great fruits to add are strawberries, blueberries, apples, or bananas while it's still warm so that it cooks into the oatmeal. You may also add golden raisins and/or almonds. This adds a little crunchy texture to it. Other things that you can add to your oatmeal are granola and flax seeds or wheat germ. Again, that adds somewhat of a nutty taste to it and adds a little bit of texture.
