EASY ALMOND JOY CHIA PUDDING
I enjoy making this coconut milk chia pudding recipe because it's easy and I can find all of the ingredients at my local market. There is no baking required, and it's served in individual jars for guests. For more flavor, add shredded coconut. -Ashley Altan, Hanover, Maryland

- In a bowl, combine the liquid, chia seeds and the sweetener of choice (I use a liquid monk fruit sweetener but granulated works too). Add in the vanilla and stir, let this mixture sit 10 minutes.
- While the chia seeds are sitting, whip the heavy cream and add in the peanut butter. You can choose to add sweetener to this too, but I leave mine plain.
- To layer the jars, add 2 tbsp. of the peanut butter mixture at the bottom and create a smooth seal across the jar. Divide up the chia pudding into two servings and add half into each jar. Top with 2 tbsp. of strawberry sauce/ jelly or berries of your choosing.

- To a small skillet or saucepan, add the blueberries and orange juice. Warm over medium-high heat until bubbling. Then lower heat to medium and cook for 2 minutes - stirring occasionally. Remove from heat and add chia seeds. Stir to combine.
- Divide the compote between three (amount as original recipe is written // adjust if altering batch size) small serving dishes (like these from Weck), and set in the refrigerator to chill.
- In the meantime, add almond and coconut milk to a blender, along with vanilla (optional), maple syrup, and peanut butter. Blend on high to fully combine. Taste and adjust flavors as needed, adding more maple syrup for sweetness or peanut butter for saltiness.
- Add chia seeds and pulse a few times to incorporate, being careful not to blend as you want the chia seeds left whole.
