BASIL ALMOND PESTO RECIPE

Make your own delicious pesto at home using fresh basil and almonds. The perfect compliment to your favorite protein, pasta or vegetable recipes!

1/3 cup Olive Oil
1/4 cup Almonds, Slivered or raw; skins is fine
1 large Garlic Clove, Peeled
1/4 cup Parmesan Cheese, Grated
1 Tbsp Fresh Lemon Juice
1/4 tsp Salt
1/4 tsp Pepper
2 cups Fresh Basil Leaves, Removed from stem, rinsed and dried

Steps:

  • In a food processor, add all of the ingredients, except basil.
  • Blend/puree well until almonds are almost a paste. About 1 minute.
  • Add the basil leaves and pulse until they are all incorporated.
  • Scrape into a small jar and it's ready to eat!

Almond Basil Pesto Sauce is low carb and gluten free. Delicious on meats, burgers, and on a low carb pizza crust.

⅓ cup almonds (toasted)
2 cups fresh basil leaves
¼ cup parsley (Italian flat leaf)
3 cloves garlic
⅔ cup olive oil
½ tsp sea salt
¼ tsp black pepper
¼ cup parmesan cheese *optional (omit for dairy free)

Steps:

  • Preheat oven to 400 F, and place almonds on a baking sheet.
  • Toast almonds for 7 to 10 mins until lightly golden brown. Remove and cool.
  • Add almonds and all the ingredients to a processor, and pulse until combined and the texture of a thick pasty sauce.

Serve over warm pasta with a side salad and a nice loaf of bread. I also spread this on toast. If you have left over, put in a small jar and drizzle some olive oil over the top. Keep refrigerated.

½ cup Parmesan cheese
¼ cup whole raw almonds
¼ cup extra-virgin olive oil, or more as needed
1 clove garlic, peeled

Steps:

  • Combine basil, Parmesan cheese, almonds, olive oil, and garlic in a food processor. Pulse until blended. Pour in more olive oil, with the processor running, until pesto is thick and smooth.
