Almondaise image

Almond mayonnaise! Putting here for safekeeping. Another great recipe from Melody Prettyman.I saw her on 3ABN TV.

Yield 2 cups

Number Of Ingredients 8

1 cup water
1/2 cup whole almond
1/2 cup water
1/2 teaspoon salt
1 teaspoon onion powder
1 teaspoon mustard powder
1/2 cup olive oil (light is preferable)
2 tablespoons lemon juice

Steps:

  • Bring the 1 cup water and the almonds to a boil. Drain and rinse with cold water and remove skins.
  • In blender or food processor, blend blanched almonds, 1/2 cup water, salt, onion powder and mustard powder. Blend until very smooth.
  • While blender is running, slowly pour in olive oil until mixture thickens. Pour into a bowl and fold in lemon juice.

1/4 cup ground almonds
1/4 cup water
1 -2 garlic clove
1/4 teaspoon sea salt
1 lemon, juice of
fresh dill, handful
3 drops stevia or 3 drops agave nectar
1 pinch cayenne (optional) or 1 pinch freshly grated horseradish (optional)
1/2 cup extra virgin olive oil

Steps:

  • Put first 4 ingredients in blender.
  • Process on high for 1 minute.
  • Add lemon juice, dill, stevia and cayenne.
  • Drizzle oil into the running blender until the mixture emulsifies.
  • Keep refrigerated for up to 5 days.
