Sweet and spicy wings! You can make two batches of the sauce, use one as a marinade before grilling the chicken, and pour the second batch over the chicken after it is grilled. It is not mandatory to do it this way, just better!

6 pounds chicken wings, separated at joints, tips discarded
1 ½ cups Louisiana-style hot sauce
¾ cup butter
1 cup honey
1 pinch garlic salt
1 pinch ground black pepper
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Grill the chicken 8 to 12 minutes on each side, or until juices run clear. (You can deep fry or bake the chicken instead if you want to, but it is best when grilled.) Remove chicken to a large roasting pan.
  • In a saucepan over medium heat, mix the hot sauce, butter, honey, garlic salt, black pepper, and cayenne pepper. Simmer about 10 minutes, until blended and heated through. Pour the sauce over the grilled chicken wings and stir to coat.

These spicy, savory Buffalo Wings grill up fast, and have just the right amount of spice for a your next party or game day gathering! Perfectly charred and slightly sweet, they pack a nice little kick and big, bold flavor.

3 pounds chicken wings
1½ cups Frank's Original Hot Sauce
1 cup cola (DO NOT use diet cola! Try to use one with real sugar.)
2 teaspoons paprika
½ cup butter (melted)
¼ cup maple syrup (or honey)

Steps:

  • Mix the all Wing Sauce ingredients together in a medium bowl. Pour half of the sauce into a larger bowl. Set the remaining sauce aside.
  • To the sauce in the larger bowl, add the chicken wings and toss to coat evenly coat.Cover with plastic wrap and refrigerate to marinate for at least one hour, and up to 24 hours. You can also marinate the chicken in a resealable plastic bag.
  • Pour the remaining sauce into a small saucepan. Bring to a low simmer over MEDIUM-LOW. Simmer, stirring frequently, for 20-25 minutes; until wing sauce has reduced by about one-third.Set reduced wing sauce aside.
  • Preheat grill on MEDIUM; about 350°F [176°C]. Allow the grill to heat up for about 10 minutes (or until it fully up to heat) before you use it. The grating should be hot before you place the chicken to the grill.Using tongs, place the marinated wings on the preheated grill.Grill wings, turning every 3 to 5 minutes, for a total of 15-20 minutes, or until done. Cover the grill when not actively turning the wings.Remove wings from grill as they get done.
  • In a large bowl, toss the grilled wings with about half of the sauce reduction. Save the rest to serve alongside the wings.
  • Serve with celery sticks, reserved wing sauce, and Blue Cheese Dip.

½ cup kosher salt
¼ cup sugar
1 tablespoon gochugaru, (Korean chile flakes)
2 lb chicken wings
1 ginger, peeled and sliced - 3 in (7 cm)
8 cloves garlic, peeled
4 scallions, cut into 2 in (5 cm)
3 cups olive oil, plus more as needed
¼ cup rice vinegar
¼ cup soy sauce
½ cup honey
4 cloves garlic, minced
2 tablespoons fresh ginger, grated
¼ cup gochujang, (Korean chile paste)
2 cups cornstarch, divided
1 cup all purpose flour
2 teaspoons kosher salt
1 ¾ cups water
toasted sesame seed
fresh cilantro leaf
scallion, sliced

Steps:

  • Dry brine the wings: Set a wire rack inside a rimmed baking sheet.
  • In a small bowl, combine the salt, sugar, and gochugaru.
  • Add the wings to a large bowl and sprinkle with the dry brine, tossing to coat evenly. Arrange the wings right side up on the wire rack and refrigerate, uncovered, for at least 4 hours, or overnight.
  • Confit the wings: Preheat the oven to 300°F (150°C).
  • Transfer the brined wings to an 8 x 11-inch baking dish. Scatter the ginger, garlic, and scallions around the wings. Pour the olive oil into the baking dish, adding more oil if needed to ensure the wings are fully submerged.
  • Cover the baking dish with aluminum foil and place on a rimmed baking sheet. Bake for 2½-3 hours, until the meat starts to pull away from the bones, but is still intact and tender.
  • Line a baking sheet with foil. Remove the wings from the oven and let cool slightly. Lift out of the oil and drain well, then set on the prepared baking sheet. Transfer to the refrigerator and chill for at least 1 hour. If desired, reserve the leftover oil to confit more wings. The oil will keep in an airtight container in the freezer for up to 2 month.
  • Meanwhile, make the sauce: In a medium pan over medium heat, combine the rice vinegar, soy sauce, honey, garlic, ginger, and gochujang. Cook, stirring often, until the sauce is bubbling and thickened, 3-4 minutes. Remove the pan from the heat and set aside.
  • Fry the wings: Heat the canola oil in a large Dutch oven over high heat until it reaches 350°F (180°C).
  • Make the batter: Add 1 cup of cornstarch to a large bowl and set aside. Add the remaining cup of cornstarch to a separate large bowl, along with the flour, salt, and water and whisk until smooth with no lumps.
  • Coat a chicken wing in the cornstarch, shaking off excess, then gently dredge the wing in the batter, letting any excess drip off.
  • Working in 2 batches, add the wings to the hot oil and fry for 4-5 minutes, until golden brown and crispy. Transfer to a paper towel-lined baking sheet to drain.
  • Transfer the wings to a large bowl and pour the sauce over. Toss to coat well.
  • Transfer the wings to a serving platter and pour more sauce over, then garnish with toasted sesame seeds, cilantro, and scallions.

2 lb chicken wings, rinsed and patted dry
¼ cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon cayenne pepper

1 teaspoon black pepper
⅔ cup water
peanut or vegetable oil, for frying
½ cup buffalo sauce
ranch or blue cheese dip, for serving

Steps:

  • In a bowl, toss ¼ cup (30 grams) of cornstarch and the chicken wings together until fully coated. Transfer the wings to a wire rack and let rest and dry out for 20 minutes, ideally in the fridge if you have space.
  • In a medium bowl, whisk together the remaining ½ cup of cornstarch, the flour, paprika, garlic powder, cayenne, baking powder, salt, and pepper. Gradually whisk in the water, breaking up any lumps and mixing until smooth. The batter should be slightly runny.
