Make this easy and surprisingly hearty chili with ground chicken or turkey. Simmer 3 hours on stove top, or 8 hours in a slow cooker on Low (3 hours on High).

1 tablespoon vegetable oil
2 pounds ground chicken
3 (15 ounce) cans pinto beans, rinsed and drained
2 onions, halved and thinly sliced
1 (14.5 ounce) can diced tomatoes with juice
1 (14.5 ounce) can Mexican-style stewed tomatoes with chiles, undrained
½ cup water
2 tablespoons brown sugar
2 tablespoons chili powder
2 tablespoons vinegar
2 tablespoons prepared mustard
2 teaspoons salt
¼ teaspoon ground black pepper

Steps:

  • Heat vegetable oil in a soup pot over medium heat. Cook and stir ground chicken in the hot oil until no longer pink and the chicken is crumbly, about 10 minutes. Drain.
  • Stir in pinto beans, onions, diced tomatoes, Mexican-style stewed tomatoes, water, brown sugar, chili powder, vinegar, mustard, salt, and black pepper; bring to a boil. Reduce heat to low, cover, and simmer chili until thickened and flavors have blended, about 3 hours. Stir occasionally and add extra water if needed.

This is my main Chili recipe, it takes less than 1 hour to cook from 'start to devour'. So this is a GREAT weekday dinner, weekend lunch or an entertaining recipe. It will serve 6-8 so you can split it up and freeze half for another time, or serve it to friends like I did with homemade cornbread and red wine! Everyone went back for a second helping (of the Chili and wine ha ha).

Number Of Ingredients 17

1 lb lean ground beef (90% lean or above, you can use frozen)
1 (15 ounce) can beans, of choice (I use Navy or Pinto beans but any canned bean is fine)
1 (15 ounce) can white corn (you can use yellow, or frozen corn)
1 (15 ounce) can tomato sauce
1 (15 ounce) can of 'fire roasted' diced tomatoes (this helps make the chili taste like it was cooked for hours)
1 1/2 cups low sodium beef broth
1/4 cup salted butter (it's ok, the beef is lean, deal with it)
6 stalks celery
1 large onion
1/2 teaspoon black pepper
1/2 teaspoon garlic salt
1/2 teaspoon red chili pepper flakes (optional, does not make chili crazy spicy)
1/4 teaspoon cumin
1/4 teaspoon nutmeg
1 teaspoon paprika
2 tablespoons chili powder (seems like a lot but trust me)
3 milk chocolate, hershey kisses

Steps:

  • chop the celery and onion and place it in pot with 1/2 stick of butter, black pepper, and garlic salt. Cook it down on medium high until the onions start to look clear.
  • add the 1 1/2 cups of low sodium beef broth and 1 lb lean ground beef and bring pot to a medium boil. Allowing the beef to boil a couple minutes really breaks it down to a fine texture (with your help stirring).
  • lower the temp to a simmer and add the cumin, nutmeg, paprika, red pepper flakes, chili powder, tomato sauce, and fire roasted diced tomatoes (with juice).
  • drain and rinse the cans of beans and corn, then add them to the pot and stir well.
  • add 3 milk chocolate Hershey Kisses and stir until they are completely melted (this adds a subtle, unique but delish flavor - plus it is now definitely made with love).
  • cover and simmer on low for 15-30 minutes, stir on occasion.
  • serve in bowl with the toppings of your choice and enjoy!

One-Hour Texas Chili image

One-Hour Texas Chili can be used for Frito pie. You top either a small open bag of Fritos, or a pile of Fritos on a plate, with this beef chili, grated Cheddar cheese and chopped onions. When served on a plate, some people call it a Straw Hat.

6 dried ancho chiles, stems and seeds removed
2 dried chipotle chiles, or substitute canned chipotle chiles and forgo soaking them
2 tablespoons vegetable oil or rendered bacon fat
1 medium yellow onion, quartered
4 cloves garlic, chopped
2 pounds ground beef chuck, preferably coarsely ground passed through the large holes of a grinder only once
4 dried pequin chiles or ¼ teaspoon cayenne pepper
1 tablespoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
Salt
pepper
2 teaspoons masa harina, or as needed
2 tablespoons lime juice
Grated Cheddar cheese, for garnish
Diced onions, for garnish
Pickled jalapeños, sliced, for garnish
Sour cream, for garnish
Fritos, for serving, optional

Steps:

  • In a large heavy skillet, heat the dried ancho and chipotle chiles on medium-high heat about a minute on each side. Turn off the heat, cover the chiles with water and soak them until rehydrated, about 30 minutes.
  • Meanwhile, in a Dutch oven or other large pot over medium heat, heat 1 tablespoon vegetable oil or bacon fat. Add the onions and sauté until they start to brown, about 10 minutes. Add the garlic and cook for 30 more seconds. Transfer to a blender.
  • Form the ground beef into balls the size of marbles. Return the Dutch oven to medium heat, add 1 tablespoon vegetable oil or bacon fat and, when it is hot, add the meatballs. Stir occasionally until lightly browned, about 10 minutes, then remove from the heat.
  • Drain the chiles well, and remove and discard stems and seeds. Add the chiles to the blender. Add the canned chipotles, if using, pequin chiles or cayenne, cumin, oregano, cloves, cinnamon and 1 cup water. Blend until smooth. Add to the Dutch oven with the browned meatballs along with 4 cups water. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes, stirring occasionally.
  • Adjust salt and pepper to taste. If the chili looks too thin, slowly stir in the masa harina. Add the lime juice, and simmer for 15 minutes more. Serve topped with grated cheese, diced onions, pickled jalapeños and sour cream. Or serve as Frito pie: For each serving, mound 1 cup Fritos in a bowl and top with 1 cup chili, ¼ cup grated cheese, 1 tablespoon diced onions, sliced jalapeños and sour cream.

Rich and hearty, but with lots of veggies that have been slow-cooked so that they seem to melt into the other ingredients. Don't scoff at the Tomato Soup in the recipe - it adds wonderful body and a bit of sweetness to balance the spice. If you like it hotter, kick it up with additional hot sauce. Bammmm!

1 tablespoon canola oil
1 cup onion, chopped
1/2 cup carrot, minced
1/2 cup celery, diced
1/2 cup green pepper, diced
1 1/2 lbs ground chuck
2 garlic cloves, minced
1 (10 ounce) can Rotel Tomatoes, diced
1 (11 ounce) can cream of tomato soup (condensed type)
1 (15 ounce) can dark red kidney beans
1 (15 ounce) can ranch style beans or 1 (15 ounce) can chili hot beans
1 (12 ounce) bottle beer or 1 (12 ounce) bottle water
1 tablespoon chili powder
1 tablespoon cumin powder
2 teaspoons oregano
1/2 cup cilantro, chopped
1 tablespoon hot sauce (or more)

Steps:

  • Heat oil in deep pot, add all vegetables and allow to saute slowly for 10-15 minutes, insuring that the vegetables are very soft.
  • When vegetables are soft, add ground chuck right into the pot with the vegetables; brown and stir to break up. Cook until all pink is gone. Drain any excess fat.
  • Add minced garlic, stir and cook another 1-2 minutes.
  • Add all remaining ingredients. Clean out cans with a little water and add that too. Allow to simmer 30 minutes.
  • Serve with chopped onion, cilantro, shredded cheese and sour cream.
