The Best Crepes image

Our classic crepe is versatile enough to go sweet or savory, just omit the vanilla if going the savory route. The rest time here is key; the flour absorbs the milk as it sits giving you a more tender crepe and golden color.

Number Of Ingredients 8

2 cups milk, at room temperature
4 large eggs, at room temperature
1 1/4 cup all-purpose flour (see Cook's Note)
2 tablespoons sugar
2 teaspoons pure vanilla extract
1 1/2 teaspoons kosher salt
1 tablespoon unsalted butter, melted
Vegetable oil, for the pan

Steps:

  • Add the milk, eggs, flour, sugar, vanilla and salt to a blender. Puree on high speed until completely smooth and slightly thickened and creamy, about 1 minute. Add the melted butter and puree until incorporated, 30 seconds more. Let the batter rest in the blender carafe for at least 1 hour at room temperature or refrigerate up to 24 hours. The longer you allow the batter to rest and hydrate, the lighter and softer the texture of the crepes will be; overnight is ideal.
  • Before cooking, re-blend the batter at high speed for 30 seconds. This will reincorporate the ingredients, a vital step in getting an even golden color on the crepes. Wipe 1/2 teaspoon of oil on a large crepe pan or a 10-inch nonstick skillet with a paper towel. You don't want to see any drops of oil in the pan, just coat with the thinnest layer. Heat the pan over medium heat until hot.
  • Ladle 1/4 cup batter into the pan. Working quickly off the heat, swirl and shake the pan to evenly coat the bottom with the batter. Return to the heat and cook the crepe, reducing the heat if it's browning too quickly, until the edges are light golden, about 2 minutes. Slide a spatula underneath to loosen the crepe and carefully flip it over. Cook on the other side until a few brown spots appear, 15 to 30 seconds. Transfer to a plate. Repeat with the remaining batter, wiping pan with oil each time. Stack the crepes on the plate as you go (you should have about 15 total). Let the crepes cool for 10 minutes before serving or filling.
  • For fillings, we suggest Nutella and bananas or peanut butter and jelly for sweet crepes. Ham and cheese makes a great filling for savory crepes.

Here is a simple but delicious crepe batter which can be made in minutes. It's made from ingredients that everyone has on hand.

1 cup all-purpose flour
2 eggs
½ cup milk
½ cup water
¼ teaspoon salt
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  • Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.

2 cups milk
1/4 teaspoon salt
1/2 teaspoon sugar
4 tablespoons unsalted butter, plus more for pan and serving
1 1/4 cups all-purpose flour
1 tablespoon grapeseed oil, or vegetable oil
3 large eggs
1/2 cup beer
Alice's Raspberry Jam
Freshly squeezed lemon juice, for serving
Sugar, for serving

Steps:

  • In a medium saucepan, heat milk, salt, sugar, and butter until butter has melted. Let cool to room temperature.
  • Place flour in a medium bowl. Make a well in the center, and add oil and eggs. Beat until the batter is too stiff to beat and is smooth, 2 to 3 minutes. Add the milk mixture little by little, beating until smooth. Strain the batter through a fine sieve, and then whisk in beer. Chill overnight.
  • Heat a crepe pan over medium-high heat until a drop of water sizzles in the pan. (The first crepe may stick a little if your pan is not heated to the proper temperature.) Rub the pan with a little butter, wiping out the excess with a paper towel. Ladle a thin layer of the batter (about 2 tablespoons) into the center of the pan, tilting and rotating the pan to cover the bottom as thinly and evenly as possible. Lightly brown the first side for 1 to 2 minutes. Gently flip the crepe over, and brown the other side for about a minute. Turn out onto plastic wrap. The crepes may be covered and kept at room temperature for a few hours or refrigerated for up to two days. To reheat crepes, place in a covered baking dish, and transfer to an oven heated to 400 degrees until heated through.
  • To serve, spread warm crepes with jam or butter. Drizzle lemon juice over the butter, and sprinkle with sugar. Fold into quarters, and serve immediately.

  • In a small saucepan, gently heat 1/2 cup of the milk with the butter, salt and sugar until the butter is melted. Let cool to room temperature, about 20 minutes.
  • Meanwhile, whisk together the flours in a medium bowl. Make a well, and add the eggs and oil. Whisk until very smooth, gradually adding in the beer and the cooled butter/milk mixture. Chill the batter for at least two hours in the fridge, or up to a couple of days. Remove from the fridge and stir in enough of the remaining 1/2 cup of milk until the batter reaches the consistency of heavy cream.
  • To cook the crepes, heat a well-seasoned 8 or 9" crepe pan or skillet over medium heat. Swirl about half a teaspoon of butter or oil in the pan, then wipe it out with a paper towel. (Unlike pancakes, you don't want a lot of fat in the pan, just enough to prevent the crepes from sticking. If your pan is well-seasoned, you will only need to oil it once before you begin, but wipe the pan with a bit more butter if your crepes begin to stick.) Pour 3 - 4 tablespoons of batter into the pan and swirl it to coat it evenly. If you've poured in too much batter, you can pour the excess back into the bowl. If you have some holes in your crepe, you can dab on a bit of batter to fill them up. This may take a bit of practice, but you will soon be swirling like a pro.
  • Let the crepe cook until lightly golden on the first side, about a minute, then flip and cook another 30 seconds or so on the second side. (I like to use a small, metal, offset spatula to pry up a side of the crepe, then I bravely use my fingers to flip it over.) Slide the crepe onto a large plate, and continue with the batter, stacking the crepes as you go, until you've used it all up. (If you want this to go faster, you can use two pans: one to cook the first side, then flip it into the second pan to finish cooking while you start another one in the first pan.)
