AUNT ALICE'S NO GRATE (BUT GREAT) CARROT CAKE
This is just one of the many great recipes from my Aunt Alice who was a wonderful cook. Hope you will like it as much as we do.

Steps:
- 1. In a mixing bowl combine flour, sugar, baking soda,and cinnamon. Mix well with a fork.
- 2. Add egg, vanilla, pineapple, coconut, oil and nuts. Add carrots and mix well.
- 3. Pour mixture into an 8x8 greased pan. Bake at 350' for 55 minutes.
- 4. Cool. Serve plain or with your favorite topping. Enjoy !!
ALICE BAY CARROT CAKE
A delicious moist carrot cake. I adapted this recipe from the Alice Bay Cookbook; just adding a couple of items to suit my taste.

- Preheat oven to 350°F.
- In a large bowl, mix sugar, oil, eggs and vanilla. Sift dry ingredients together, and gradually add to wet mixture. Stir in grated carrots and nuts. Pour into a greased and lightly floured 9 X 13-inch pan or 3 9-inch round layer cake pans.
- Bake for 40 - 45 minutes until toothpick comes out clean. Remove from oven and cool on a wire rack. Frost with Cream Cheese Frosting.
- CREAM CHEESE FROSTING.
- 1 8-oz. package cream cheese, softened.
- 3/4 cup butter, softened.
- 1 pound confectioners' sugar.
- 1/2 cup chopped nuts (optional).
- 2 teaspoons vanilla extract.
- Cream butter and cream cheese. Add sugar and mix well. Add nuts and vanilla. Spread on cooled cake.

- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line two 20-cm (8-inch) springform pans with parchment paper. Do not butter the pans.

- Preheat oven to 300°F (149°C). Line a large baking sheet with parchment paper or a silicone baking mat. Spread the chopped pecans on the sheet and toast for 7-8 minutes. Remove from the oven and allow to cool for 10-15 minutes.
- Turn the oven up to 350°F (177°C). Grease two or three 9-inch cake pans, line with parchment paper, then grease the parchment paper. Parchment paper helps the cakes seamlessly release from the pans.
- Whisk the brown sugar, granulated sugar, oil, eggs, applesauce, and vanilla together in a large bowl until combined and no brown sugar lumps remain. In another large bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves together. Pour the wet ingredients into the dry ingredients and, using a rubber spatula or wooden spoon, fold the ingredients together until just combined. Fold in the carrots and 1 cup of the toasted pecans. (The rest of the pecans are for garnish.)
- Pour/spoon the batter evenly into the cake pans. If using three cake pans, bake for 20-24 minutes. If using two cake pans, bake for 30-35 minutes. Test the center with a toothpick. If it comes out clean, the cakes are done. If not, continue to bake until cooked through. Do not over-bake. Allow the cakes to cool completely in the pans set on a wire rack. The cakes must be completely cool before frosting and assembling.

- Make the Carrot Cake: Preheat oven to 350 degrees F. Grease three 9-inch cake pans, line the bottoms with a round of parchment, grease the parchment, then flour the pans and tap out the excess. Set aside.
- In a large bowl, whisk together the eggs, sugars, vegetable oil, and vanilla extract until thoroughly combined and there are no lumps of brown sugar. Add the flour mixture and, with a rubber spatula, gently stir until mostly combined. Add the carrots, pineapple, pecans, raisins and coconut and fold together until thoroughly combined.
- Divide the batter evenly between the three prepared cake pans and bake until a toothpick inserted in the center comes out with clean, 22 to 28 minutes. Cool the cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
