HOMEMADE PUB CHEESE
Also known as beer cheese, a creamy spreadable cheese often found at bars and casual eateries. It's also a good item to incorporate into a charcuterie or snack board. Serving suggestions are carrots, celery, crackers, crostini, pretzels, or pita chips.

Steps:
- To quickly remove any carbonation, pour the room temperature beer into a bowl, and whisk occasionally for 5 to 10 minutes.
- Combine Cheddar cheese, cream cheese, Worcestershire, mustard powder, garlic powder, and onion powder in a food processor. Pulse until the ingredients are mixed.
- Turn food processor to high and slowly pour in beer through the feed tube; blend until smooth. If mixture is too thick, add a bit more beer to reach your desired consistency.
- Transfer to a serving bowl and sprinkle with chopped chives. Store in the fridge, tightly covered, for up to 10 days.

- Place cheese, garlic, worcestershire sauce, ground mustard and jalapeno in food processor fitted with blade. Pulse until the mixture is very crumbly.
- With processor running, stream in ginger ale. Process until smooth. You may need to stop and scrape down the sides.

- Cheese ... Add the cheese to a small bowl and microwave 1-2 minutes on medium low heat until the cheese is soft. You don't want it completely melted, just soft and able to stir. Cooking times will depend on your microwave and the bowl you choose. Just check in 30 sec intervals and stir until soft.
- Add the horseradish, worcestershire, garlic, shallot (grate the shallot over the bowl so you get the juice), mustard, and season with a pinch of salt and pepper to taste. Mix well to combine and add more horseradish if needed. I use 1/4 cup, but you can use less if you prefer. Cover and refrigerate for at least 3-4 hours to firm up; or, overnight if possible to let the flavors develop.
- Serve ... Crackers or bread sticks are my favorite, and pretzels are also very good; but, you can also reheat and serve warm with: broccoli, cauliflower, asparagus, and even baby red potatoes. Note: I do prefer to lightly blanch the vegetables first and served chilled with the cheese dip. But, that is a personal preference. ENJOY!
