2 tablespoons celery seed
1 tablespoon paprika
1 tablespoon ground nutmeg
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion salt
2 tablespoons dried marjoram
1 tablespoon kosher salt
1 1/2 tablespoons light brown sugar
1 tablespoon freshly ground black pepper
2 sides of Alaskan salmon, each 3 1/2 pounds
Extra-virgin olive oil

Steps:

  • Combine all spices. Generously rub the spice mixture on the flesh side of the salmon and drizzle with a light coat of oil. Place the salmon on the grill, flesh side first. Let cook for about 7 to 10 minutes each side.

1 (12 to 16 pound) King salmon, filleted into 2 halves with the skin on
1/2 cup brown sugar
1/4 cup kosher salt
2 quarts water
1 cup anise flavored liqueur
2 tablespoons extra virgin olive oil
2 tablespoons wild fennel pollen or ground fennel seed
1 tablespoon kosher salt
1/2 tablespoon fresh ground black pepper
2 large Alder or Cedar planks

Steps:

  • Mix sugar, salt, water, and anise flavored liqueur. Pour over salmon halves in a 3-inch deep pan. Marinate, chilled, in the brine mixture for 4 to 8 hours. Remove from brine and pat dry. Brush the salmon with oil. Season with wild fennel pollen, salt, and pepper. Place on Alder plank and soak in cold water overnight. Sometimes a nail through the tail end is used to hold the salmon in place. Lean the plank against an Alder wood fire that has mostly died down to very hot coals. Be careful not to let the plank catch fire. The heat and the smoke from the fire will cook and season the salmon. Serve right off the plank.

8 (4 ounce) fillets salmon
½ cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 ½ teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
½ teaspoon salt

Steps:

  • Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
  • Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
  • Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.

2 lbs wild alaskan salmon fillets (8 4-oz filets)
kosher salt
fresh ground black pepper
1/2 cup peanut oil
3 tablespoons soy sauce
3 tablespoons rice wine vinegar
3 tablespoons sherry wine
4 tablespoons scallions, chopped (green onions)
1/2 cup brown sugar
1/2 cup pure honey
2 large garlic cloves, minced
1 tablespoon fresh ginger, minced
1 teaspoon onion powder
2 tablespoons lemon zest
1 teaspoon crushed red pepper flakes
2 teaspoons sesame oil
1 dash liquid smoke flavoring
1 pinch kosher salt
cooking spray (to oil the grates) or vegetable oil (to oil the grates)
1 lemon, cut into wedges

Steps:

  • Wash the salmon filets and pat dry with paper towels; salt and pepper to taste. Place the filets in a large glass casserole dish.
  • In a medium size mixing bowl, combine together the peanut oil, soy sauce, vinegar, sherry, green onions, brown sugar, honey, garlic, ginger, onion powder, lemon zest, red pepper flakes, sesame oil, liquid smoke and salt. Whisk ingredients together, blending well.
  • Pour marinade over the salmon filets and cover tightly with plastic wrap. Marinate in the refrigerator for 4 to 6 hours.
  • After marinating, generously coat each filet with the marinade and wrap separately in heavy duty aluminium foil.
  • Before firing up your outdoor grill/BBQ, lightly oil the grates. Cook one of two ways (1) COALS: Set your coals about 5 inches from the grate; bbq the salmon fillets 5 minutes per side, or until fish just flakes with a fork. (2) GAS GRILL: Preheat grill for high heat. Place filets on the grates and grill for 7-8 minutes each side, or until fish is flaked easily with a fork.
  • COOK'S TIPS: Take care not to overcook your salmon - It will lose its juices and flavor if cooked too long. Discard any leftover marinade, OR bring it to a boil, cook for 5 minutes, and spoon over salmon when serving.
  • For a complete meal, serve the grilled salmon fillets with lemon wedges, a chilled bottle of Merlot, scoop of fluffy white rice, and a lightly-dressed fresh spinach salad. Be sure to brace yourself for NO LEFTOVERS!

1 salmon fillet, about 1 1/2 to 2 pounds
2 lemons
2 tablespoons Dijon mustard
1/2 cup olive oil
Freshly ground pepper to taste
About 24 sage leaves
Coarse sea salt to taste

Steps:

  • Wipe the salmon fillet dry with paper towels. Combine the juice of one lemon, mustard, two tablespoons olive oil and pepper in a small bowl. Chop six sage leaves and add them. Mix thoroughly and spread the mixture on both sides of the salmon. Allow to marinate about 30 minutes.
  • Meanwhile, preheat grill or broiler. Heat the remaining olive oil in a small frying pan and saute the sage leaves until they are crisp. Drain them on paper towels.
  • Season the salmon with salt and grill or broil the fillet about six minutes on each side or until it reaches the desired degree of doneness. Sprinkle with sauteed sage leaves, garnish with remaining lemon cut into quarters and serve.

12 ounces fresh wild alaskan salmon (with skin)
salt and pepper
1 tablespoon olive oil
4 tablespoons butter, divided
6 -8 fresh sage leaves, chopped
1/2 onion, julienned
1 garlic clove, minced

Steps:

  • Heat olive oil, and 1 tablespoons butter in medium frying pan over medium-high heat.
  • Lightly salt skin side of salmon.
  • Rub flesh side of salmon with half of sage, salt and pepper to taste.
  • Place salmon skin side down in pan. Cook until salmon is cooked halfway through. Don't worry about burning the skin as it can take a good deal of heat and tastes better the crispier it gets.
  • Remove salmon from pan and set aside.
  • Add remaining butter, sage, onions and garlic to pan. Sautee until onions are slightly transparent.
  • Return salmon to pan flesh side down and cook 3-5 minutes or until cooked through and flaky.
  • Remove from pan and serve immediately with onions on top.
