These are salmon fillets in a tasty, tangy sauce with a little heat! Serve with rice and a simple stir-fry of baby corn, shiitake mushrooms and snow peas.

8 (4 ounce) fillets salmon
½ cup peanut oil
4 tablespoons soy sauce
4 tablespoons balsamic vinegar
4 tablespoons green onions, chopped
3 teaspoons brown sugar
2 cloves garlic, minced
1 ½ teaspoons ground ginger
2 teaspoons crushed red pepper flakes
1 teaspoon sesame oil
½ teaspoon salt

Steps:

  • Place salmon filets in a medium, nonporous glass dish. In a separate medium bowl, combine the peanut oil, soy sauce, vinegar, green onions, brown sugar, garlic, ginger, red pepper flakes, sesame oil and salt. Whisk together well, and pour over the fish. Cover and marinate the fish in the refrigerator for 4 to 6 hours.
  • Prepare an outdoor grill with coals about 5 inches from the grate, and lightly oil the grate.
  • Grill the fillets 5 inches from coals for 10 minutes per inch of thickness, measured at the thickest part, or until fish just flakes with a fork. Turn over halfway through cooking.

4 salmon fillets
salt and pepper to taste
1 tablespoon onion powder
1 teaspoon crushed red pepper flakes
¼ cup olive oil
¼ cup fresh lemon juice
4 cloves garlic, minced
3 tablespoons white balsamic vinegar
2 tablespoons white sugar
2 tablespoons chopped green onions
2 tablespoons chopped cilantro

Steps:

  • Season fillets with salt and pepper, onion powder, and red pepper flakes. Set aside in a baking dish.
  • In a medium bowl, mix together olive oil, lemon juice, garlic, balsamic vinegar, sugar, green onions, and cilantro. Pour marinade over salmon; cover, and refrigerate overnight, or at least 6 hours.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange salmon on a broiling sheet. Place in a preheated oven, and bake for 5 minutes. Increase heat to 500 degrees F (260 degrees C), turn fillets, and broil 5 minutes more.

1 ½ pounds Alaska king salmon fillet, skinless and cut into 1 ¼ inch strips
2 Tbsp. olive oil
3 Tbsp. soy sauce
6 Tbsp. honey, divided
3 Tbsp. fresh lemon juice
½ Tsp. ground ginger
2 Tbsp. green onions, chopped diagonally
1 Tsp. sesame seeds, toasted
1 Pinch coarse sea salt

Steps:

  • Rinse the salmon and dry it with paper towels.
  • In a bowl, put the olive oil, half of the honey, soy sauce, lemon juice and ginger and mix well.
  • Reserve half of the sauce for the glaze.
  • Place the salmon on a deep dish and cover it with the saucer. Let marinate in the refrigerator for 30 minutes.
  • Preheat the oven to 450F.Place the salmon strips on a baking dish. Discard the sauce.
  • Cover with aluminum foil and bake for 10 minutes.
  • Take away the salmon from the oven.
  • Set the oven to broil on high-
  • Abundantly brush the salmon with the reserved sauce.
  • Broil for 2 to 4 minutes until the salmon turns to an appetizing brown color. While broiling don't leave the oven unattended.

Steps:

  • Add all marinade ingredients to a small bowl and mix together.
  • Add salmon to a glass container or plastic bag and pour marinade sauce overtop. Container should be small enough so that salmon can soak up the sauce. Seal the bag/container and let sit in fridge for 1-2 hours before cooking. Salmon can also marinade overnight in the fridge.
  • Preheat oven to 450°F. Line a baking sheet with parchment paper. Place salmon fillet skin side down on the baking sheet. Bake for 12-15 minutes or until salmon is easily flaked with a fork. (If you have small salmon fillets, just cook for less time).
  • Heat a frying pan over medium-high heat with cooking oil. Once the pan is hot, add the salmon so skin side is facing up. Cook for 2-3 minutes then flip over so skin side is down. Pour the leftover marinade sauce over top of the salmon and cook for another 3-5 minutes. I like to watch the clock during this time because I'm not a fan of overcooked salmon.
  • At this point, depending on how thick the salmon is, the sides of the salmon should have just turned white and it should be cooked. To check you can use a fork to see if the salmon flakes easily. If it does, and the insides aren't translucent, then it's cooked. Remove from heat.
  • Heat barbecue to medium heat, place salmon on the grill, skin side up. Cover and let cook for about 5 minutes, then flip. Pour extra marinade over top and cook an additional 5 minutes. Salmon will be done when easily flaked with a fork.
  • Lightly coat the inside of the air fryer tray or basket with olive oil or cooking spray. Add the salmon fillets skin side up to the tray. Cook at 400°F for 10 minutes, then flip them over and pour leftover marinade on top. Cook an additional 10 minutes, or until fully cooked.

Steps:

  • In a small saucepan, combine the first six ingredients. Cook and stir until sugar is dissolved. , Meanwhile, grill salmon, covered, over medium-hot heat for 5 minutes. Turn salmon; baste with the butter sauce. Grill 7-9 minutes longer, turning and basting occasionally, or until the salmon flakes easily with a fork.

2 lbs salmon fillets (coho)
6 ounces amber beer (alaskan)
6 ounces soy sauce
8 garlic cloves, pressed
2 pieces gingerroot, finely grated (2 inches pieces)
3/4 cup cilantro, finely chopped

Steps:

  • Mix all of the ingredients, except the salmon, in a bowl to make the marinade.
  • Place the fish fillets in a freezer bag, add the marinade, squeeze all the air out of the bag and seal the bag. Allow the fillets to marinate for 12 to 24 hours.
  • Heat up your grill and over indirect heat grill the fillets, skin side down.
  • Cook until the fish flakes at the thickest parts of the fillet. You can test this by using a fork and lightly brushing it over the area.
  • The Plate : Serve with roasted red bell peppers and cold Alaskan Amber Beer.

Heat oven to 375 degrees F. Transfer salmon and some of the onions to a spray-coated baking dish. Cover pan and roast about 15 minutes, cooking just until fish is opaque throughout.
