SOUTHERN OVEN-FRIED CHICKEN RECIPE

Southern Oven-Fried Chicken Recipe image

A family favorite, true comfort food, and an easy dinner recipe, easy Southern Oven-Fried Chicken, has crispy, fried to perfection crust, juicy, flavorful meat, fewer calories, and less mess than classic fried chicken.

Provided by Sharon Rigsby

Categories     Main Dish

Time 5h15m

Number Of Ingredients 5

2½ tablespoons kosher salt (divided)
6 chicken thighs (bone-in, skin-on)
2 tablespoon unsalted butter
½ cup all-purpose flour
1 teaspoon ground black pepper

Steps:

  • First, mix two cups of water and two tablespoons of kosher salt in a large bowl to brine the chicken. Next, add the thighs and make sure they are completely submerged. Cover, and refrigerate for at least four hours, up to 24 hours.
  • When you are ready to bake the thighs, preheat your oven to 400 degrees F.
  • Remove the poultry from the refrigerator, drain, and pat dry with paper towels.
  • Place the butter in a 9x13 metal roasting pan.
  • Place the pan in the oven to allow it to heat up and the butter to melt. Watch it carefully, and don't let the butter burn; you want the thighs to start cooking as soon as they hit the pan.
  • While the pan is heating, place the flour, remaining salt, and pepper in a large plastic storage bag. Add the thighs, a piece at a time, and shake well until it's thoroughly coated. Shake off any excess flour and repeat with the rest of the chicken.
  • Remove the pan from the oven and place the thighsn in it, skin side down.
  • Oven-fry the chicken for 30-40 minutes, or until the bottom is golden brown and crispy.
  • Remove from the oven and use a spatula and turn the chicken over. Cook for an additional 20 minutes.
  • Remove the chicken from the oven, and drain on paper towels.
  • If desired, season with additional salt and pepper and serve immediately.

THE KITCHEN MAGPIE'S CRISPY OVEN FRIED CHICKEN

The Kitchen Magpie's Crispy Oven Fried Chicken - find out the secret to the most amazing oven fried chicken you will ever eat! Just look at that crispy skin! No crazy batter, either!

Categories     Dinner

Time 1h30m

Number Of Ingredients 8

1 1/3 cups of flour
1 tablespoon garlic powder
2 tablespoons seasoning salt
1 teaspoon paprika
1 teaspoon pepper
2 or 3 eggs
1/3 cup of margarine or butter
one chicken (cut into 8 pieces (2 drumsticks, 2 thighs and the breasts cut into 4))

Steps:

  • In a medium sized bowl, whisk the dry ingredients together.
  • Grease a baking sheet really well and set aside.
  • Beat the eggs and place in a small bowl. Line up your bowls and your baking sheet in this order from right to left; egg, flour, then baking sheet. This will make sense once you start dipping, for a messy cook like me, I have to try and keep things clean once in a blue moon.
  • First, dip your chicken into the flour mixture and cover it completely.
  • Then go to the egg mixture, and cover it again completely, this time with egg.
  • Back to the flour mixture to cover it completely again, trying not to disturb the two other layers you just did.
  • Place the chicken on the baking sheet, and repeat with all the pieces of chicken until they are all done. Now it is time to put them into the fridge and let them sit for 30 minutes. DO NOT skip this part, it helps the layers adhere to not only the chicken, but themselves. And make sure you let the chicken sit in the fridge, in the cold.
  • After the 30 minutes, melt the margarine and pour over the chicken pieces.
  • Preheat the oven to 400°F.
  • Bake the chicken for 40-45 minutes until the breast meat reaches 165 °F and the thigh meat is 180 °F.
  • Remove and serve!

ALABAMA CHICKEN

Alabama Chicken image

My most favorite chicken casserole. I got this recipe from a lady who retired from a job that I took over about 26 years ago. When we had office potlucks, I always requested her to make this. Even though we don't live in Alabama, no other name would seem right for this dish!

CRISPY FRIED CHICKEN

Crispy Fried Chicken image

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

Categories     Meat and Poultry Recipes     Chicken     Fried Chicken Recipes

Yield 8

Number Of Ingredients 6

1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
salt and pepper to taste
2 quarts vegetable oil for frying

Steps:

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
  • Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
  • Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

ALABAMA CHICKEN

Alabama Chicken image

YUMMMMYYYY!! This is similar to a recipe I had years ago for German Stewed Chicken. I lost the recipe and this is the closest thing I have found that resembles it. It is really good and makes quite alot. The combination of different flavors makes for a very different and tasty chicken casserole. Enjoy! Guesstimate on prep and cooking times which includes cooking the chicken and the noodles.
