I got this salsa recipe from my sister, and my children and I have been making batches of it ever since. We pair pint jars with packages of tortilla chips for zesty Christmas gifts. When the kids give this present to their teachers, they can truthfully say they helped make it. -Pamela Lundstrum, Bird Island, Minnesota

This receipe is a combo of different recipes my fiance and I found online, with a little of our own ideas! People always ask us to bring this to parties. The lack of seeds is what makes this salsa mild, the flavor is awesome without the hot effects! Great for people who like tasty but not hot salsa!

CANNED SALSA THAT TASTES LIKE FRESH SALSA

Canned Salsa that Tastes like Fresh Salsa image

This recipe is for canned salsa that tastes just like fresh salsa. It is mild to medium in heat, but can be adjusted by adding more or less tomatoes and peppers to taste. Unlike most salsas, you do not need to simmer this salsa for hours before canning. So it tastes very fresh!

Categories     Food

Time 1h15m

Number Of Ingredients 15

35 medium to large tomatoes (I prefer Romas)
4 jalapenos (with seeds)
3 green bell peppers
2 red bell peppers
3 onions (any variety)
1 cup vinegar
2 teaspoons cumin powder
1 tablespoon cayenne pepper
2 tablespoons salt
2 tablespoons sugar
1/4 cup brown sugar
2 tablespoons + 1 teaspoon garlic powder
1 tablespoon minced garlic
juice of 1 lime (optional)
handful of cilantro (optional)

Steps:

  • Prepare jars by sanitizing them in bleach water, or in a hot rinse cycle in the dishwasher.
  • Wash vegetables.
  • Chop Peppers and Onions with a food processor or blender. Dump in a very large mixing bowl.
  • Add spices and vinegar to the mixing bowl.
  • Add Lime Juice and chopped Cilantro (optional) to the mixing bowl.
  • Core and chop Tomatoes with a food processor or blender. You can peel beforehand if you'd like, but I rarely peel my tomatoes for this salsa recipe.
  • Strain the juice from the tomatoes before adding to the mixing bowl. I like to catch the tomato juice and can it to use in soups.
  • Combine all ingredients. Taste with a torilla chip. Adjust the heat by adding more tomatoes (for milder taste) or more jalapenos (for a spicier taste).
  • Fill jars with salsa. Wipe the rim clean, and top with a lid and ring.
  • Process jars for 45 minutes. (adjust based on altitude)

THE BEST HOMEMADE SALSA FOR CANNING

The Best Homemade Salsa for Canning image

The BEST homemade salsa for canning. Have fresh tomatoes? Then you'll want to make this salsa, either hot or mild. It's so delicious and inexpensive to make!

2 1/2 cups chopped green bell peppers
2 1/2 cups chopped white onion
4 medium jalapeños, chopped (see notes)
8 large cloves garlic, chopped
6 teaspoons canning salt
1 cup white vinegar
1 (12-ounce) can tomato paste

MILD SWEET SALSA

Mild Sweet Salsa image

I always like blazing salsas. That's just me. But when it comes to my daughter, or my family and guests, I need to have something for those who don't like pure fire. This is one of the salsas I use then. One thing I like about this one, is that the flavoring is a bit fresher and not as typical of the mild salsas that taste like diced tomatoes. I think the basil is the secret weapon- it has a little bite, but it is cool to the taste. Whatever it is, everyone seems to like it!

  • Peel the tomatoes. This is really easy done by washing the tomatoes, then boiling them for 1 to 3 to 5 minutes (depending on the tomatoes) in hot water, then plunging them into a pan, sink or large bowl of very cold water. The skins will pull off easily.
  • Wash the peppers, stem and seed them, then chop finely (food processor with pulse button is fine) and add to pot.
