AISHA'S APPLE PUFF PASTRIES

I make this puff pastry apple recipe with my mom. Its really fun to eat and yummy in the end. You can serve it with powdered sugar. I thought of this recipe myself while I was picking apples in the grocery store.

2 apples, peeled and diced
2 tablespoons honey
1 tablespoon brown sugar
½ teaspoon ground cinnamon
1 sheet puff pastry, cut into 8 squares

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add apples, cover, and steam until tender, about 15 minutes.
  • Mix softened apples, honey, brown sugar, and cinnamon together in a bowl.
  • Spread puff pastry squares on a flat work surface. Place 1 tablespoon of the apple mixture in the middle of each square. Fold the corners of each square upward and pinch the edges together to make sure the filling stays in place. Put the squares on a baking sheet.
  • Bake in the preheated oven until the pastry rises and turns golden brown, 20 to 25 minutes.

This is a combination of at least 3 recipes. I was feeling motivate to make an apple pie, then a crostata and got lazy. I didn't feel like making a pastry crust. So I searched and searched and found that puff pastry was an option, so here ya go! Enjoy! Prep times includes thaw time for the puff pastry sheet.

1 puff pastry sheet, thawed
1 egg, for egg wash
1/2 teaspoon water for egg wash
4 granny smith apples, medium, peeled, cored, sliced thin
1/2 cup sugar
sea salt, pinch
allspice, small pinch
1/8 teaspoon cinnamon
2 tablespoons butter, cold and diced
1 teaspoon sugar, Sugar in the raw, for sprinkling on crust (optional)
1/4 cup apricot preserves
1 tablespoon calvados, substitute water

Steps:

  • Preheat oven to 400°F.
  • Thaw 1 sheet of puff pastry, about 30-40 minutes. Once thawed, unfold. If it cracks, press the seams together with wet fingers.
  • Place on a baking sheet lined with parchment paper. *a four sided baking sheet works best in case of drips.
  • Halve apples, core>with melon-baller, peel apples. Slice into thin half moons. Place into a bowl. NOTE: *It is important to slice them thin or the pastry sheet will be done before the apple bake tender.
  • Combine sugar and spices. Pour over the apples and toss to coat.
  • You will make 3 rows of apples, leaving almost an inch of pastry exposed, all the way around.
  • Overlap the apple slices one on top the other covering the apple by 2/3 because the apples will shrink while baking. Dot apple slices with butter.
  • Make egg wash (mix egg and water together) and brush over the exposed pastry crust.
  • Bake for about 15 minutes. Rotate once during baking. If the crust is puffed up and golden brown and apples tender, it's done.
  • Meanwhile -- In a glass bowl add the calvados to the apricot preserve. Warm in the microwave for 20-30 seconds and stir. Warm a bit longer if necessary to thin.
  • While the galette still hot, brush with apricot & calvados mixture.
  • Serve warm with a small scoop of vanilla ice cream.

1 package (2 sheets) frozen puff pastry, defrosted
4 small (6 ounce) Granny Smith apples
3/4 cup sugar
6 tablespoons (3/4 stick) cold unsalted butter, small-diced
3/4 cup apricot jelly or warm sieved apricot jam
3 tablespoons Calvados, rum, or water

Steps:

  • Preheat the oven to 400 degrees. Line 2 sheet pans with parchment paper.
  • Cut each sheet of puff pastry into 4 squares. Divide the pastry between the prepared sheet pans and refrigerate while you prepare the apples.
  • Peel the apples and cut them in half through the stem. Remove the stems and cores with a sharp knife and a melon baller. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across the pastry and place one slice of apple on each side of the arranged slices. Sprinkle the apples evenly with the sugar and dot them with the butter.
  • Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Don't worry! The apple juices will burn in the pan but the tarts will be fine! When the tarts are done, heat the apricot jelly together with the Calvados until bubbly and brush the apples and pastry completely with the jelly mixture. Loosen the tarts with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.

1/3 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
4 cups chopped peeled apples
1 package (17.3 ounces) frozen puff pastry, thawed
TOPPING:
3 tablespoons butter, melted
2 tablespoons sugar
1/4 teaspoon ground cinnamon
Vanilla ice cream, optional

Steps:

  • In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. Serve warm with ice cream if desired.

This apple slab pie is easy and quick to make and you don't even have to struggle with making your own dough; a store-bought puff pastry will work just fine. You can use your favorite apples for this but there's nothing quite like a caramelized, slightly tart granny smith. I should say this though; if you're serving more than 4 people, you ought to double the recipe and make 2. That's easy since a package of puff pastry comes with two sheets!

1 lb 2 large apples (I used granny smith apples), peeled, cored and cut into 1/3" slices
4 Tbsp unsalted butter
1/4 cup brown sugar (lightly packed)
1 tsp ground cinnamon
1 sheet (8 or 9 oz frozen puff pastry, thawed (I used Pepperridge Farms))
All purpose flour for dusting
1 egg (lightly beaten for egg wash)
Coarse sugar for sprinkling (I used raw sugar)

Steps:

  • In a large skillet, melt 4 Tbsp butter over medium heat. Add sliced apples and cook, stirring occasionally until lightly browned (6-8 min). Reduce heat to low and stir in 1/4 cup brown sugar and 1 tsp cinnamon. Continue to simmer, stirring occassionally until apples are soft and caramelized (5 min).
  • Lightly dust a sheet of parchment paper with flour. Place your thawed puff pastry dough over it and roll it out slightly to flatten the top (9 1/2 x 10 1/2 inches). Cut puff pastry dough in half down the center to make two pieces (each 4 3/4 x 10 1/2 inches)
  • Arrange apples in a tight row lengthwise down the middle of one puff pastry sheet leaving a one inch border on all sides. Pour remaining syrup from the apples over the top of the apples. Brush your beaten egg around the edges of your pastry. Top with the second pastry sheet and press down on the edges to seal.
  • Cut 6 (1-inch wide) slits down the center of your pastry to create vents.
  • Brush the pastry with egg wash and sprinkle the top generously with coarse sugar. Bake at 400˚F for 15-17 min or until top is golden brown.

These are easy to make and really tasty. I just made another batch and found that I like them even better using brown sugar. I also had to add 2 tsp of flour as a thickener to this batch because the apples released a lot of juice.

9 puff pastry, squares (5x5)
5 apples, peeled, cored and sliced into wedges
1 teaspoon lemon juice
4 tablespoons butter
1 teaspoon cinnamon
1/3 cup brown sugar
4 tablespoons cream (you can use half and half)
3 tablespoons turbinado sugar

Steps:

  • 1. Prepare apples. I peel them and then use a corer/slicer that gives you 8 wedges. Cut each wedge into 3 pieces. Place cut apples in a bowl of water with the lemon or lime juice as you cut it so it won't discolor. When you are done cutting all apples, drain them well.
  • 2. In a very large skillet, melt the butter over a low/medium heat and toss in the apples.
  • 3. Sprinkle with cinnamon and sugar. I use golden delicious apples (NOT red delicious, which will turn to mush) Cortlands are really good too. If you use a tart apple, like granny smith, you will need to increase the sugar to 1/2-2/3 cups.
  • 4. Cook the apples until they are a little soft, but not cooked to mush. Cool for 5 minutes.
  • 5. Fill the 5x5 inch puff pastry squares & close in a triangular shape, pinching the edges well all around. Place on a baking sheet.
  • 6. Brush cream on each one & sprinkle with raw sugar.
  • 7. Place in preheated 400 degree oven until nicely browned. It usually takes about 20 minutes, but watch after 15 minutes, so that they don't burn. I have found that they bake best on the middle shelf. The tops burn on the top shelf and the bottoms burn on the bottom shelf, so bake in two batches if you have to.
