APRICOT WHITE CHOCOLATE COOKIES
A heavenly cookie with an unbelievable flavor. The nuts are optional, or can be exchanged with other types (almonds and walnuts are also good). For the white chocolate, I chop up 2 Lindt white chocolate and coconut bars because I like the coconut addition, but any other white chocolate bar or white chocolate chips would work just as well.

Steps:
- Preheat over to 350°F (or 175°C).
- In a large bowl, cream together the butter and brown sugar.
- Beat in the egg and vanilla.
- Mix in the flour, baking soda and salt.
- Add the nuts, apricots and white chocolate.
- Spoon onto an ungreased cookie sheet and bake for 8 to 12 minutes. (These cookies don't spread very much, so they can be pretty closely packed onto the cookie sheet).
- Transfer to a cooling rack.

Steps:
- Combine flour and next 3 ingredients; set aside.
- Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition.
- Add flour mixture to butter mixture gradually, beating at low speed until blended. Stir in white chocolate morsels and cranberries.
- Drop cookie dough by heaping tablespoonfuls onto lightly greased baking sheets.
- Bake at 350° for 10 to 12 minutes or until lightly browned on bottom. Remove to wire racks to cool completely.

Steps:
- Preheat oven to 375 degrees.
- Stir together, flour and baking soda. Set aside.
- In large mixing bowl, combine margarine, white sugar, and brown sugar.
- Add eggs, one at a time - beat until incorporated. Add vanilla.
- Gradually, mix in flour mixture. Stir in chocolate and cashews.
- Drop by rounded teaspoonfuls onto parchment lined OR ungreased cookie sheets.
- Bake 6 to 8 minutes, OR until edges are just turning brown. Do not overbake.
- Cool 5 minutes before removing from cookie sheets to cool on rack.
- *Cashews - put cashews in a ziplock bag. Close. Use a rolling pin to break cashews into medium to large pieces.
- NOTE: Yield and Time to Make depends on size of cookies.

CATHY'S WHIPPED SHORTBREAD COOKIES
This is an old family recipe. My Great aunt used to just drop them from a spoon onto a cookie sheet. I use my cookie gun and get about 120 cookies. They are an excellent-melt-in-your-mouth cookie. I decorate them with cherries and icing.

- Cream butter until light and fluffy, then add icing sugar and cornstarch. Mix and whip until light and creamy.
- Then add vanilla and flour (a bit at a time) and whip again until light and creamy.
