Steps:
- Preheat air fryer to 400˚F.
- Combine Panko crumbs, Parmesan cheese, Italian Seasoning, paprika, salt, and pepper in a medium shallow bowl; whisk to combine.
- Place egg in a separate bowl.
- Dip each zucchini stick in egg and then dip into the Parmesan mixture, making sure all sides are well coated.
- Place zucchini fries in a single layer inside the air fryer basket. You will have to do this in batches since all the zucchini fries will not fit into the Air Fryer basket at once.
- Spray zucchini fries with cooking spray.
- Cook for 9 to 10 minutes, or until golden and crispy.
- Remove from air fryer and serve.

- Set air fryer to 10 minutes at 400 degrees F. Turn it on and allow it to preheat while you get the zucchini ready.
- Dry the zucchini strips between layers of paper towels.
- Whisk the egg and water in a bowl.
- Pour the almond flour into a plastic zip lock bag.
- Dredge the zucchini through the egg mixture.
- Drop the zucchini into the bag with almond flour and shake to coat all of the pieces.
- Once the air fryer is ready, place the zucchini in the basket in a single layer.
- Cook for 10 minutes, turning once. If you have a wire rack insert, you don't need to turn it.
- Serve with your favorite sauce. See the notes at the bottom for my recipe.

- Wash and dry the zucchini. Cut the zucchini into ½-inch sticks. Set aside.
- Crack the eggs into a bowl and whisk them. Set aside.
- Pour the flour into a second, ideally shallow, bowl. Set aside.
- In a third bowl, combine spices and bread crumbs. Set aside.
- Coat the zucchini: Dredge the zucchini sticks through the flour, then the egg, then through the bread crumb mixture. Be gentle with the zucchini and pat the bread crumbs on all sides.
- Put the zucchini pieces into the air fryer basket and generously spray with oil. Air fry at 400 degrees F or 200 degrees C for 10 to 12 minutes. Flip halfway through cook time and spray again with oil.
- Serve with marinara dipping sauce and enjoy!

- Cut the ends of each zucchini. Then cut each zucchini into half (length wise), then cut each piece in half again so that you have 4 long wedges. Cut each wedge in half so that you have 8 wedges total that are equal in size and width (each about 3 inches long). Set aside.
- Spray the bottom of the air fryer pan with non-stick cooking spray.
- Pull out 3 small mixing bowls. In the first bowl, mix together flour, garlic powder, and salt and pepper.
- In the second bowl, beat the eggs.
- In the third bowl, mix together the panko breadcrumbs, regular breadcrumbs, and Parmesan cheese. You can also add salt and pepper if desired.
- Working with just a few zucchini pieces at a time, dip each zucchini in the flour mixture, then the egg mixture, and then the breadcrumb mixture.
- Place the breaded zucchini in the bottom of an air fryer pan (I had to do 2 batches because I had so much zucchini).
- Set air fryer for 375 degrees.
- Cook for 15 minutes, flipping zucchini half way through cooking time (right around 8 minutes).
- Remove zucchini and enjoy! We love to dip these in ranch or marinara sauce.

- Cut zucchini into two or three 3-inch pieces, then spiralize each piece.
- Whip egg in a shallow bowl until foamy. Carefully pour melted butter into egg and whip until blended.

- Trim and cut zucchini lengthwise in two parts, then half from the center lengthwise. Cut each quadrant into 4 pieces lengthwise. Set aside. In a medium bowl add eggs, mix in salt, garlic powder, black pepper, and lemon zest. Mix well. In a small rimmed baking sheet or rimmed plate, combine seasoned bread crumbs (see note 1) with cheese or potato chips (if using). Set aside.
- Add sliced zucchini into the egg mixtures. Toss with tong to fully coat in eggs. Transfer egg-coated fries, one at a time into the bread crumbs, roll and press gently to cover in crumbs. Keep setting aside in a plate or on the empty side of the baking sheet. Repeat until all zucchini sticks are breaded.
- Insert air fryer rack in air fryer. Preheat air fryer at 390 degrees Fahrenheit at Air Fry setting for 3 minutes.
- Once preheated, off and open fryer. Arrange prepared zucchini on the fryer rack in 4-5 layers, crisscrossing each layer to better circulate the hot air. Set the air fryer to air fry for 8 minutes at 390 degrees Fahrenheit. Keep an eye in last 2 minutes.
- Transfer hot Zucchini Fries to serving platter. Repeat Step-4 for batch 2. Serve while still hot!
