This is a great recipe to use up leftover turkey or chicken. It does not taste anything like leftovers. Makes about six 2-inch croquette balls. Definitely need to double or triple recipe for large groups as I can eat 2 croquettes easily.

2 slices bread, or more as needed
2 tablespoons butter
3 tablespoons all-purpose flour
½ cup milk
½ cup chicken broth
2 cups diced cooked turkey
1 tablespoon chopped fresh parsley
¼ teaspoon dried rosemary
salt and ground black pepper to taste
1 egg, beaten

Steps:

  • Place bread in a blender and blend until soft crumbs form. Place bread crumbs in a shallow bowl.
  • Heat butter in a saucepan over medium heat until melted. Stir flour into melted butter until dissolved. Mix milk and broth into butter-flour mixture; cook and stir until mixture is thick, about 5 minutes. Remove saucepan from heat and cool mixture.
  • Mix turkey, parsley, rosemary, salt, and pepper into cooled mixture. Form turkey mixture into balls. Place balls on a plate and refrigerate until chilled, at least 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Dip balls in the beaten egg, allowing excess to drip back into bowl. Press balls into bread crumbs until coated. Arrange balls on a baking sheet.
  • Bake in the preheated oven until cooked through and browned, 25 to 30 minutes.

Make sure your turkey is fully thawed on the inside. If not, it won't cook properly. Your turkey will still be raw on the inside if it's cooked slightly frozen! Cooking times will vary depending on size of turkey. Whole, thawed turkey usually cooks at a rate of 15 min./lb. Use an instant read thermometer! Makes about 4 cups of gravy.

14 lb. raw Whole Turkey
6 Tablespoons butter (, cut into slices)
4 cloves garlic (, sliced thin)
1 Tablespoon kosher salt (, or to taste)
black pepper (, to taste)
Olive Oil ((or oil of choice), to coat turkey)
1 1/2 cups chicken broth
3/4 cup all purpose flour ((for the gravy))

Steps:

  • Thaw your turkey completely on the inside cavity. Remove and giblets and neck bones from the turkey cavity (many times the giblet pack will be tucked under the skin by the neck). Pat the turkey dry.
  • Tuck the butter slices and garlic in-between the skin and the turkey breasts. Rub olive oil over the turkey and season with salt and pepper.
  • Place the lower rack in the air fryer and spray with oil. Place the turkey breast side down in the air fryer. Pour in 1/2 cup of broth over the turkey. Place the extender ring and lid on the air fryer.
  • Air Fry the turkey at 350°F for about 2 1/2 to 3 hours.
  • Every 30 minutes, baste with chicken broth (the first 2 bastes will be with the remaining broth. After that, baste from the broth & juices at the bottom of the air fryer).
  • After cooking for 2 hours, take off the air fryer lid and extender ring. Lift the turkey out, flip to breast side up, and then place back into the air fryer. Baste the turkey and then place the extender ring and lid back on
  • Continue to Air Fry at 350°F until the turkey reaches an internal temperature of 165°F at the thickest parts of the thigh, wings and breast, and the juices run clear when you cut between the leg and the thigh (about 30 minutes - 1 hour).
  • Let rest for about 15-20 minutes.
  • While the turkey rests, make the gravy. Remove the lower rack from the air fryer. Leaving the turkey juices and broth in the air fryer, skim the chunks from the drippings and broth.
  • Place flour in a medium bowl. Ladle in about 1 cup of the drippings and broth into the flour and whisk until smooth. Pour the flour mixture into the air fryer basket with the remaining drippings and broth. Whisk until smooth.
  • Place the air fryer lid back on and Air Fry at 400°F for 10 minutes or until thickened, whisking a couple times while cooking.

½ tsp. salt ((or as much or as little as you like - You can also wait until after they are cooked to add the salt to your liking.))
½ tsp. ground rosemary

Steps:

  • Divide the meat into equal portions.
  • Press each section into burger patty, making sure to put deeper well in the center.
  • Sprinkle the spices over each burger (⅛ tsp. each of each spice, or as you like)
  • Air fry at 400 F. for 15 minutes, or until the center of the patties reach 165 F. on a meat thermometer.
  • Serve with your favorite burger toppings.

1/2 cup grated Parmesan cheese
1/2 cup shredded Swiss cheese
1 shallot, finely chopped
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1 teaspoon minced fresh sage or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups finely chopped cooked turkey
1 large egg
2 tablespoons water
1-1/4 cups panko bread crumbs
Butter-flavored cooking spray
Sour cream, optional

Steps:

  • Preheat air fryer to 350°. In a large bowl, combine mashed potatoes, cheeses, shallot, rosemary, sage, salt and pepper; stir in turkey. 1 (14.5 ounce) can salmon, drained and flaked
1 large egg, beaten
¾ cup panko bread crumbs
½ cup diced onion
⅓ cup mayonnaise
½ lemon, juiced
1 teaspoon dried dill weed
1 teaspoon seafood seasoning (such as Old Bay®)
salt and freshly ground black pepper to taste
avocado oil nonstick cooking spray

Steps:

  • Combine salmon, egg, panko, onions, mayonnaise, lemon juice, dill, seafood seasoning, salt, and pepper in a bowl. Mix to combine and shape into 6 equal-sized patties.
  • Preheat the air fryer to 400 degrees F (200 degrees C). Line air fryer basket with parchment paper and spray with avocado oil.
  • Place salmon croquettes into the basket and spray with avocado oil.
  • Air fry until croquettes are golden brown, 8 to 10 minutes. Flip croquettes over, spray with avocado oil, and air fry an additional 4 to 7 minutes. Cook in batches if necessary.

6 tablespoons butter
1/2 cup flour
1 cup milk
1 cup chicken broth
2 teaspoons lemon juice
2 tablespoons snipped parsley
2 teaspoons grated onion
1/2 teaspoon celery salt
Dash each pepper, paprika, and nutmeg
4 cups ground, cooked turkey
3/4 cup fine bread crumbs
2 eggs mixed with water
Flour, for dredging

Steps:

  • In a medium-size saucepan, melt butter. Blend in flour and add milk and chicken broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
  • Add lemon juice, snipped parsley, and onion. Stir in celery salt and a dash each of pepper, paprika, and nutmeg. Cool.
  • In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly. With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs.
  • Lightly shape balls into cones. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Again, dip croquette in egg/flour and roll in bread crumbs. Fry croquettes in deep-fat fryer for approximately 3 minutes or until brown. Drain. Serve with turkey gravy.
