- Mix the soy sauce (2 tablespoons), toasted sesame oil (1 tablespoon), honey (1 tablespoon) kosher salt (1/2 teaspoon- OMIT if marinating for more than a couple hours, see notes), pepper (1/4 teaspoon), and cayenne pepper (1/4 teaspoon) until honey is fully dissolved. Pour over the ahi tuna steaks and turn over to coat completely. Optional: allow to marinate for at least 10 minutes, or up to overnight in the refrigerator. Also optional: Reserve a spoonful or two of the marinade before coating the fish for drizzling on top after you've cooked it.
- Heat a medium skillet (preferably non-stick or a well-seasoned cast iron skillet) on medium-high to high until very hot ( or medium medium-high for nonstick). I recommend giving cast iron 3-5 minutes to get hot and nonstick about 1 minute, depending on how thick it is.
- Add the canola oil (1 tablespoon) to the hot pan. Sear the tuna for 2 minutes on each side for medium rare (1.5 minutes on each side for rare; 3 on each side for medium). (Note: different burners get hotter depending on your stove. Use your best judgement whether you use medium, medium-high, or high heat, as the marinade may burn if too high heat is used)

- In a bowl, combine the eggs, lemon zest, lemon juice, bread crumbs, parmesan cheese, celery, onion, garlic powder, dried herbs, salt and pepper. Stir the mixture to make sure everything is combined. Gently fold in the tuna until just combined.
- Lay perforated air fryer baking paper inside base of air fryer. Lightly spray the paper. (if not using a liner, spray enough olive oil spray at the base of the air fryer basket to make sure the patties do not stick)
- Scoop 1/4 cup of mixture, and shape into patties about 3-inches wide x 1/2-inch thick and lay inside basket. Makes about 10 patties. If patties are too soft to handle, chill them for at about 1 hour or until firm. This will make them easier to handle during cooking.
- Spray or brush top of patties with oil.Air Fry at 360°F, 10 minutes, flipping half way. Spray the tops again after you flip the patties. Serve with your favorite sauce and lemon slices.

- Prepare 4-ounce tuna steaks by sprinkling a small pinch of salt and pepper on one side of each portion. For this recipe, you need steaks that are at least 1-inch thick. Set the tuna steaks aside, and make your air fryer breading on a clean plate. Combine almond flour, parmesan cheese, onion powder, garlic powder, italian seasoning, and lemon pepper seasoning. If your lemon pepper seasoning does not include salt, you may wish to include an extra pinch of salt in the breading.
- Turn on your air fryer to preheat to 375 degrees. You do not need to dredge the tuna steaks before breading them. Use a clean hand to press each tuna steak into your plate of breading, making sure all exposed sides are coated. Flip the steaks and roll the edges in the breading as necessary to ensure a full but thin layer of coverage. Arrange all breaded tuna steaks on your air fryer tray.
- Cook the tuna steaks for 20 minutes or until the tops of the tuna steaks are golden brown and the tuna is cooked through. This recipe makes a well-done tuna steak. For a more rare steak, turn the air fryer up to as high as 425 degrees and cook until the breading on top of the steaks turn golden. Allow the finished tuna steaks to rest for a few minutes before slicing. Allow them to cool entirely before locking them away in containers in your refrigerator.
