AIR FRYER TOSTONES (FRIED PLANTAINS)



Air Fryer Tostones (Fried Plantains) image

These Air Fryer Tostones are great as a healthier subsitute for chips or buns, whether on the Whole30 diet or you just want to eat healthier!

Number Of Ingredients 4

3 plantains (for air frying, I've found yellowish plantains do the best)
2 TBSP olive oil
spray olive oil (optional)
salt, to taste

Steps:

  • Cut the ends off of plantains and discard.
  • Cut the plantains in half.
  • Slice the skin of the plantain once from end to end.
  • Remove the skin and discard.
  • Cut each plantain into 1/2" slices.
  • Place plantain slices in a bowl and pour olive oil on top.
  • Mix with hands to coat well.
  • Place each plantain slice into air fryer basket.
  • Cook at 350° for 5-6 minutes.
  • Remove plantains from air fryer basket.
  • Place a piece of parchment paper on a plate or cutting board.
  • Place one half cooked plantain slice on the parchment paper.
  • Place another parchment paper on top and using a bowl, press down to flatten the plantain slice.
  • Gently move the flatten plantain with a spatula back to the air fryer basket.
  • Repeat until basket is full (one layer) of plantain pancakes.
  • Spray tops with oil, if desired (this will crisp them up.)
  • Return basket to air fryer and cook for another 3-5 minutes, until golden and slightly crispy.
  • Remove from air fryer and salt to taste.
  • Repeat the process with all plantain slices.
  • Serve with salsa, guacamole, or dip, or use as "buns" for your mini sliders!

These paleo air fryer tostones make the most addicting snack while being extra easy and crispy in the air fryer! You can use minimal amount of oil for this Whole30 and vegan recipe without any frying or splattering.

2 green plantains
1 cup water
1 tsp sea salt (plus more to taste)
5 tsp coconut oil (or avocado oil)
Optional: Lime juice

Steps:

  • Preheat air fryer to 400 degrees F for 5 minutes, and combine water and salt in a large bowl.
  • Cut the ends off the plantains and make a vertical slit through the skin, so you can easily remove the peel.
  • Cut the plantains into 1-inch thick slices.
  • Toss the plantain slices with 2 tsp coconut oil.
  • Cook in the air fryer in a single layer for 5 minutes.
  • Immediately remove the plantains and smash each slice with the bottom of a jar or a mug while they are hot.
  • Dip the flattened slices in salt water quickly and set aside.
  • Brush each flattened slice generously the rest of the coconut oil (3 tsp) front and back.
  • Place back in the air fryer for 5-8 minutes, gently flipping them halfway through, until they are golden and crispy.
  • Sprinkle with lime juice, if using, and sea salt.
  • Serve immediately alone or with your favorite dip like guacamole.

Can we make tostones without frying? We sure do! These crispy, easy-to-make tostones are made with the air fryer, or an oven if that's what you have.

2 plantain (green, unripe)
2 tablespoon olive oil
1 teaspoons salt ((or more, to taste))
1 teaspoons garlic powder ((optional))

Steps:

  • Cut the plantains: Cut the unpeeled plantain into a little under ½ inch [1 cm] thick slices (about 8 slices per plantain).This step is if you are going to boil them, if you are going to microwave them, do not cut or peel them.
  • Precook the plantains (boiled): Place the plantain into a pot and cover with water (plus about an extra inch over it). Boil over medium-high heat for about 20-25 minutes, starting counting from the time it breaks the boil. The plantain slices should be cooked completely, but still firm, if they are even a little raw in the center they will break when crushed. Carefully peel and crush one, if it flattens but not breaks, it's cooked (it will be soft and flexible, that's fine). Once cooked through, remove from the water and pat with a paper towel to whisk away excess moisture. Peel the slices using a tong to avoid burning yourself. Proceed to step 4.
  • Precook the plantains (microwave): Place the plantain, unpeeled, in the microwave, and cook for 3.5-5 minutes (try with 3 ½ minutes, check for doneness and cook more if needed). The peel will break, and you can remove it with tongs to avoid burning yourself. Cut into a little under ½. Proceed to step 4.
  • Flatten: If you have a tostonera (Amazon affiliate link) flatten the slices between two pieces of parchment or wax paper, so the plantain doesn't stick to the tostonera (you may grease the paper with a bit of oil for extra precaution). If you don't have a tostonera, flatten using the bottom of a glass jar, putting the plantain slices between two pieces of paper as described above. In either case, it's best if the slices are very thin (around 3 mm [⅛ "]).
  • Season: Brush the flattened slices with olive oil. Sprinkle with salt and garlic powder.
  • How to cook tostones in air fryer: Preheat the air fryer to 400 ºF [200ºC]. Place the slices of plantain in the air fryer bowl, making sure they are not piled up and return bowl to the air fryer. Cook for 15 minutes or until they turn a light golden color and are crispy around the edges.
  • How to cook tostones in the oven: Preheat the oven to 400 ºF [200 ºC]. Place the slices of plantain on a wire rack, making sure they are not piled. Cook for 15 to 20 minutes or until they turn a light golden color and are crispy around the edges.

Tostones are made with green (unripe) plantains and are a very popular side dish in many Caribbean and South American countries. The traditional method is to twice-fry the plantains in oil, but this air-fried version of my Puerto Rican family's recipe is much lighter as it uses olive oil spray instead of deep-frying.

2 green (unripe) plantains
olive oil cooking spray
3 cups water ((or as needed))
salt (to taste)

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Slice tips off the plantain. Make a vertical cut in the skin from end to end, making sure to cut only through the thick skin and not into the plantain flesh. Cut plantain, still with the peel, into 1-inch chunks. Peel the skin off each chunk starting at the slit you made.
  • Place the plantain chunks in your air fryer basket and spray them with olive oil spray. Air fry for 5 minutes. Meanwhile, prepare a bowl of salted water.
  • Remove the plantain pieces from the air fryer with tongs. Smash to about 1/2-inch thickness using a tostonera (plantain smasher). Soak the smashed tostones in the bowl of salted water while smashing the rest.
  • Remove the tostones from the salted water and pat dry with a paper towel.
  • Return tostones to the air fryer in batches, filling the basket with a single layer each time. Spray the tops with olive oil spray and season with salt; air fry for 5 minutes. Flip with tongs and spray the other side with olive oil spray. Season with salt. Air fry until golden brown and crisp, 4 to 5 minutes more.

4 tbsp Avocado Oil
1 tbsp tbsp Sea Salt

Steps:

  • Preheat your air fryer to 400F
  • Prepare the plantains by cutting off the ends. Use a sharp knife to slice longways down the skin to create an opening for peeling. Peel the skin off.
  • Slice the plantain into 1" rounds.
  • Brush avocado or coconut oil and sprinkle with salt on both sides.
  • Air fry for 5 minutes.
  • Remove from air fryer and place on a cutting board or flat surface. Using the bottom of a heavy jar or cup, smash each piece down flat.
  • Brush each side again with oil.
  • Air fry for an additional 5 minutes at 400F.
  • Remove from air fryer with tongs and sprinkle with more sea salt if desired.

2 large green plantains, sliced into 3/4-inch-thick rounds
1 tablespoon vegetable oil
Kosher salt
Sea salt
Salsa verde, for serving

Steps:

  • Preheat a 6-quart air fryer to 350˚ F. Toss the plantains with the vegetable oil and 3/4 teaspoon kosher salt. Add to the air fryer basket in an even layer and cook until tender, 3 to 4 minutes per side.
  • Transfer the plaintains to a large piece of parchment and cover with another piece of parchment; smash each plantain with the bottom of a glass. Increase the fryer temperature to 400˚ F. Return the plantains to the fryer in an even layer (it's OK if they overlap slightly) and continue cooking until crisp, about 4 more minutes per side. Sprinkle with sea salt. Serve with salsa verde.
