Toad in the Hole is a traditional English dish of sausages cooked in a delicious batter. My recipe uses an air fryer to make this dish quickly and easily!

1/2 cup All-Purpose Flour
4 Eggs
1 cup Whole Milk
1/2 teaspoon Kosher Salt
1/2 teaspoon Ground Black Pepper
2 tablespoons Dijon mustard
2 tablespoons vegetable oil (or melted lard or bacon fat)
4 Sausages (about 4 ounces each)

Steps:

  • In a medium bowl, mix flour, salt, and pepper.
  • Make a well in the middle and break in the eggs and milk. Whisk the eggs and milk and then mix slowly into the flour. You want a batter that's about as thick as pancake batter. If it's too thick, add water or milk. Cover the batter and let it rest while you finish the rest of the steps.
  • Put oil into a heatproof 6 x 3 pan. Cut sausages in half and place them into the oil. Set the air fryer to 400F for 15 minutes.
  • Carefully pour in the batter on top of the oil and sausages.
  • Set the air fryer to 360F for 20 minutes, or until the batter has risen and is browned on top.

1 sheet frozen puff pastry, thawed
4 tablespoons shredded Cheddar cheese
4 tablespoons diced cooked ham
4 eggs
1 tablespoon chopped fresh chives

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Unfold pastry sheet on a flat surface and cut into 4 squares.
  • Place 2 pastry squares in the air fryer basket and cook 6 to 8 minutes.
  • Remove basket from air fryer. Use a metal tablespoon to press each square gently to form an indentation. Place 1 tablespoon of Cheddar cheese and 1 tablespoon ham in each hole and pour 1 egg on top of each.
  • Return basket to air fryer. Cook to desired doneness, about 6 minutes more. Remove tarts from basket and let cool 5 minutes. Repeat with remaining pastry squares, cheese, ham, and eggs.
  • Garnish tarts with chives.

8 frozen turkey breakfast sausage links
2 large eggs
1 cup 2% milk
1/2 cup all-purpose flour
1 teaspoon onion powder
1 teaspoon stone-ground mustard
1/8 teaspoon salt
1/8 teaspoon pepper
Optional: 1 bacon strip, cooked and crumbled, and minced parsley

Steps:

  • Preheat air fryer to 400°. Cut sausages in half widthwise. Arrange in a greased 6-in. round baking pan. Place pan on tray in air-fryer basket. Cook until lightly browned, 6-8 minutes, turning once. , Meanwhile, in a large bowl, whisk eggs, milk, flour, onion powder, mustard, salt, and pepper. If desired, stir in bacon; pour over sausages. Cook until puffed and golden brown, 10-15 minutes. Serve immediately and, if desired, garnish with parsley.

You know that something with a name like this is going to be good and this truly is! The traditional recipe itself is very simple but the method for making it is not, so I developed this "cold oven cheater method" which is much safer and easier. The end result is an amazing flavor and texture combination of fatty sausage links, crispy, puffed, and tender Yorkshire pudding, and delicious onion gravy. And the gravy is so good you'll want to eat it on just about anything (and everything!)

4 large eggs
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pinches cayenne pepper
1 cup all-purpose flour
1 tablespoon all-purpose flour
¾ cup whole milk
¼ cup cold water
¼ cup vegetable oil
4 links pork sausage
2 tablespoons butter
1 large red onion, minced
kosher salt to taste
3 tablespoons all-purpose flour
2 cups chicken broth
¼ teaspoon Worcestershire sauce
1 teaspoon balsamic vinegar
2 tablespoons Onions, spring or scallions (includes tops and bulb), raw
1 teaspoon chopped fresh chives, or to taste

Steps:

  • Prepare batter: Combine eggs, salt, pepper, cayenne, 1 cup plus 1 tablespoon flour, and milk in a large bowl; whisk thoroughly until batter is very smooth and no lumps remain. Whisk in water. Cover and let rest at room temperature for 1 hour.
  • Prepare sausages: Heat vegetable oil in a skillet over medium-high heat. Add sausages and cook until browned, 2 to 3 minutes per side. Remove from the heat and transfer to a buttered 9x12- or 9x13-inch baking dish. Pour oil from the skillet over the sausages; brush oil with a pastry brush all over the bottom and up the sides of the dish.
  • Start onion gravy: Melt butter in the same skillet over medium-high heat. Add onion and salt; saute until soft and starting to brown, 5 to 6 minutes.
  • While onion is cooking, pour batter in and around the sausages. Place in the center of a cold oven and turn temperature to 500 degrees F (260 degrees C). Set oven timer for 30 minutes.
  • While toad in the hole cooks, finish onion gravy: Stir in flour and cook for about 2 minutes. Whisk in chicken broth and return to a simmer. Add Worcestershire sauce and balsamic vinegar and simmer until gravy thickens up and reduces, about 5 minutes. Reduce heat to low and stir in green onions. Taste and adjust seasoning.
  • When timer goes off, remove toad in the hole from the oven; it should be browned and puffed. Spoon gravy over the sausages and garnish with green onions and chives.
  • Serve with extra gravy.

  • Add the sausages to the Actifry with the oil and cook for 5-8 minutes, with the paddle in, until they're slightly browned and the pan and oil are hot
  • Whilst the sausages are cooking, mix the Yorkshire pudding ingredients in a mixing bowl using a whisk or fork until smooth
  • After 5-8 minutes, remove the paddle using a tea-towel or oven mitts, and replace with tin foil (see images above) making sure to cover the gap so the batter can't leak through. I tend to take the pan out, put the foil under, then put the pan back in - try not to take too long at this step though as you want the oil to remain as hot possible.
