These are the best crunchy beef taquitos with all that cheese!

Number Of Ingredients 5

1 pound ground beef
1 packet taco seasoning
4 ounces chopped green chiles
1 cup shredded pepper jack cheese
15 corn tortillas

Steps:

  • Brown the beef in a large skillet over medium heat. Drain fat.
  • Add the taco seasoning, green chiles, and ¼ cup of water to the beef and simmer for 5 minutes.
  • Add the tortillas to a microwave safe plate and cover with a damp paper towel. Microwave for 30 seconds.
  • Fill each tortilla with about 2 tablespoons of the beef mixture, top with cheese, and roll tightly.
  • Place the taquitos seam side down in an air fryer basket, being sure not to overcrowd the basket.
  • Spray with nonstick spray.
  • Cook at 400 degrees for 6-7 minutes or until taquitos are as crispy as you'd like.
  • Serve with salsa, sour cream, and queso for dipping.

These taquitos are air fried, which makes them healthier than deep fried ones. Using shredded rotisserie chicken provides a quick prep but you can always use home-cooked chicken. Serve with sides of sour cream, Mexican tomato sauce, and guacamole, or your choice of sides.

1 teaspoon vegetable oil
2 tablespoons diced onion
1 clove garlic, minced
2 tablespoons chopped green chiles (such as Ortega®)
2 tablespoons Mexican-style hot tomato sauce (such as El Pato®)
1 cup shredded rotisserie chicken
2 tablespoons Neufchatel cheese
½ cup shredded Mexican cheese blend
1 pinch salt and ground black pepper to taste
6 each corn tortillas
1 serving avocado oil cooking spray

Steps:

  • Heat oil in a skillet. Add onion and cook until soft and translucent, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add green chiles and Mexican tomato sauce; stir to combine. Add chicken, Neufchatel cheese, and Mexican cheese blend. Cook and stir until cheeses have melted and mixture is completely warmed, about 3 minutes. Season with salt and pepper.
  • Heat tortillas in a skillet or directly on the grates of a gas stove until soft and pliable. Place 3 tablespoons of chicken mixture down the center of each tortilla. Fold over and roll into taquitos.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Place taquitos in the air fryer basket, making sure they are not touching, and mist with avocado oil. Cook in batches if necessary. Cook until golden brown and crispy, 6 to 9 minutes. Turn taquitos over, mist with avocado oil, and air fry for an additional 3 to 5 minutes.

These Air Fryer Taquitos will be a family favorite in no time. They are delicious and super fun to eat and they are also simple to make in the air fryer with just seasoned ground beef, cheese, and tortillas!

1 pound lean ground beef
1 tablespoon chili powder
½ teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon cumin
1 tablespoon tomato paste
1 cup cheddar cheese (freshly grated)
½ cup mozzarella cheese (freshly grated)
12 flour tortillas (I used 7 inch tortillas)
olive oil spray
Optional Garnish: guacamole, salsa, sour cream, cilantro and shredded iceberg lettuce

Steps:

  • In a medium frying pan, brown ground beef.
  • Add spices and tomato paste, stir to combine cook until meat is cooked through and no longer pink.
  • Preheat Air Fryer to 400 degrees.
  • Place a tortilla on a plate, add about 3 tablespoons of ground beef in the center and then top with shredded cheeses.
  • Roll tortilla and secure filling with a toothpick along the seam.
  • Repeat steps 4-5 with the remaining tortillas.
  • When the Air Fryer is hot, spray or brush the tray with olive oil and place the taquitos in a single layer on the tray, seam side up. Brush the tops of the taquitos with more olive oil. Cook the taquitos at 380 degrees for 4 minutes, flip, and cook for 4 more minutes.
  • Serve immediately and garnish with fresh cilantro if desired. Serve with guacamole, salsa, and sour cream for dipping and shredding iceberg lettuce on the side.
