AIR FRYER STUFFED MUSHROOMS
Air frying is the perfect way to cook stuffed mushrooms, especially for smaller quantities. The air fryer cooks them quickly and gives the mushrooms a perfect texture. If you fill the 8 oz's of mushroom caps full, you won't have much left over. But if you decide to fill the mushrooms with less filling, then you'll have some left over. All air fryers are different and some cook much hotter than others. Once you cook your first batch, you'll know more of what works for your model of air fryer and size of food. These recipes were tested on basket style air fryers.

Steps:
- Removed the stems from the mushrooms, then dice the stems and set aside about 1/2 of the diced stems.
- In a bowl make the filling: mix together the cream cheese, garlic powder, paprika, chili powder, salt and pepper until smooth. Fold in the reserved diced mushroom stems.
- Spray the mushroom tops with oil spray. Make sure to spray liberally, because if you don't spray the tops of mushrooms enough, they might dry out during air frying. Fill the cavity of mushroom tops with the cream cheese mixture. Place the mushrooms in the air fryer basket (only place the mushrooms a single layer - if needed cook in multiple batches).
- Air Fry at 360°F/180°C for 6-8 minutes, depending on the size of the mushrooms.
- Top the stuffed mushrooms with grated cheese. Air Fry at 360°F/180°C for another 1-2 minutes, or until the cheese is melted. Let the mushrooms cool slightly then garnish with minced parsley and serve. Serve warm or at room temperature.

- Clean the mushrooms and remove the stems. Place the stems in a food processor.
- Add in the cooked sausage, cream cheese, parsley, garlic clove, and cheese to the food processor.
- Blend to make it a finely chopped consistency.
- Spray the air fryer basket or foil with olive oil cooking spray.
- Stuff each mushroom and place on the foil or basket. (Note - this took 2 batches for my Ninja Foodi, making about 8-12 at a time.)
- Spray evenly with another coat of cooking spray.
- Cook in the air fryer on 390 degrees for 8 minutes.
- Carefully remove and serve.

SAUSAGE STUFFED MUSHROOMS

- Wash the mushrooms and remove the stems. Chop stems finely and set mushroom caps aside.
- Combine sausage, cream cheese, mushroom stems, parmesan, and Italian seasoning.
- Coat the outside of the mushrooms with olive oil.
- Using a spoon, fill each mushroom cap with the filling.
- Preheat air fryer to 370 for 4 minutes.
- Put the stuffed mushrooms into the preheated air fryer basket. Depending on the size of your air fryer, you may need to cook them in 2 batches.
- Cook for 7 minutes total at 370.
- Serve immediately.

OVEN / AIR FRYER STUFFED MUSHROOMS
Steps:
- Preheat air fryer to 370°F(190°C).
- Clean and prepare mushrooms as desired, removing stems and setting aside mushroom caps to stuff with filling.
- In a skillet, melt oil or butter and add shallot and garlic and cook until fragrant, 3-4 minutes. Remove from the pan.
- Add sausage and break up to cook through, 5-6 minutes.
- Combine sausage, onion mixture, cream cheese, chopped Sunsweet® Pitted Dates, parmesan cheese, almond flour, and parsley in a bowl.
- Spoon 1-2 Tbsp mixture into each mushroom cap. Finish with a sprinkle of parmesan on top.
- Add 7-10 stuffed mushrooms into preheated air fryer and cook for 8 minutes, until browned. Carefully remove cook mushrooms and repeat with 2nd batch.
- Serve garnished with parsley and enjoy!
- Preheat oven to 400°F (200°C).
- Follow same procedure as outlined above, except transfer stuffed mushrooms on a prepared baking sheet before finishing with a sprinkle of parmesan.
- Bake 20 minutes, until browned and cooked through. Serve garnished with parsley.

- Using a damp cloth, gently clean mushrooms. Remove stems and discard.
- Mince scallions and separate white and green parts.
- Preheat an air fryer to 360 degrees F (182 degrees C).
- Combine cream cheese, Cheddar cheese, the white parts from the scallions, paprika, and salt in a small bowl. Stuff filling into the mushrooms, pressing it in to fill the cavity with the back of a small spoon.
