The most crucial step to cooking a good steak? Getting a good sear, a crust, on the outside of the steak. The air fryer makes this happen all over the steak without doing any work (you don't even have to flip it!) - just throw the steaks in the basket and the hot air circulates around the steak, creating a crust and providing the perfect internal temperature. Season the steaks with your favorite steak rub, or use my go-to spice blend below in the Mealthy Tip. Air Fryer Broccolini is pictured with the steak in this photo and hot tip: if you're only cooking one steak (solo dinner party!) you can cook the broccolini at the same time.

2 boneless ribeye steaks, 1/2 pound each, about 1-inch thick
1 tablespoon favorite steak rub
1 teaspoon kosher salt
1 tablespoon unsalted butter

Steps:

  • Rub steaks with steak rub and salt. Allow to rest at room temperature for 15 to 30 minutes. The longer you allow them to rest with the rub on, the more flavorful they will be! Preheat air fryer for 5 minutes at 400°F (200°C). Arrange steaks in a single layer in air fryer basket, working in batches as needed and cook about 9 minutes for medium rare. The internal temperature should read at least 145°F (63°C). Transfer steak to a cutting board and put half the butter on each steak. Allow to rest for at least 5 minutes before slicing into 1/2-inch thick slices.

2 (8-oz.) beef strip steaks (1-in. thick)
1 teaspoon kosher salt
1/2 teaspoon black pepper, divided
Cooking spray
1/4 cup salted butter, softened
2 tablespoons finely chopped fresh flat-leaf parsley
1 large garlic clove, grated
1 teaspoon finely chopped fresh rosemary
1/4 teaspoon grated lemon zest (from 1 small lemon)

Steps:

  • Let steak stand at room temperature for 30 minutes.
  • Sprinkle both sides of steaks evenly with salt and 1/4 teaspoon of the pepper. Preheat air fryer to 400°F for 10 minutes. Place steak in fryer basket, and coat top with cooking spray. Cook until desired degree of doneness, 6 minutes for medium-rare, 8 minutes for medium, 10 minutes for medium-well, or 12 minutes for well done. Remove steaks from basket; let rest 5 minutes.
  • Meanwhile, stir together butter, parsley, garlic, rosemary, zest, and remaining 1/4 teaspoon pepper in a bowl until combined. Serve butter alongside steaks.

Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, at room temperature
1 tablespoon finely chopped fresh parsley

1 small clove garlic, finely grated
1/4 teaspoon crushed red pepper flakes

Steps:

  • Allow the steak to sit at room temperature for 30 minutes before cooking.
  • Preheat a 3.5-quart air fryer to 400 degrees F. Season the steak on both sides with a generous pinch of salt and several grinds of black pepper. Place the steak in the center of the air fryer basket and cook until desired doneness, about 10 minutes for medium-rare, 12 minutes for medium and 14 minutes for medium-well. Transfer the steak to a cutting board and allow to rest, about 10 minutes.
  • Meanwhile, mash together the butter, parsley, chives, garlic and crushed red pepper in a small bowl until combined. Slice the steak against the grain into 1/4-inch-thick pieces. Top with the garlic-herb butter.

4 teaspoons grill seasoning (such as Montreal Steak Seasoning®)
¼ cup olive oil
½ cup reduced-sodium soy sauce

Steps:

  • Combine steaks, soy sauce, olive oil, and seasoning in a large resealable bag. Marinate meat for at least 2 hours.
  • Remove steaks from bag and discard the marinade. Pat excess oil off the steaks.
  • Add about 1 tablespoon water to the bottom of the air fryer pan to prevent it from smoking during the cooking process.
