AIR FRYER BREAD
We tried all sorts of ways to make bread if you are without an oven -- and this was one of our favorites. The crust emerges golden and crisp and the interior is light and airy.

Steps:
- Butter a 6-by-3-inch round pan and set aside.
- Combine the butter, yeast, sugar, salt and 1 cup warm water in a stand mixer fitted with the dough hook attachment. With the mixer on low speed, add 1/2 cup of the flour at a time, waiting for each addition to be fully incorporated before adding more. Once all of the flour is added, knead on medium speed for 8 minutes.
- Transfer the dough to the prepared pan, cover and let rise until doubled in size, about 1 hour.
- Add the pan with the dough to a 3.5-quart air fryer and set to 380 degrees F. Cook until the bread is dark brown and the internal temperature registers 200 degrees F, about 20 minutes. Let cool in the pan 5 minutes, then turn out onto a rack to cool completely.
AIR FRYER SOURDOUGH BREAD
Fragrant sourdough bread made in an air fryer. This method is perfect for the hot months when you don't want to heat up the kitchen but still want fresh homemade sourdough. The bread should be stored wrapped in a clean cloth inside a plastic bag. It will keep for about 3 days.

- Combine bread flour, spelt flour, sourdough starter, oil, and salt in the bowl of stand mixer. Begin to knead using the dough hook. Add water until all the ingredients combine and begin to pull together; you may not need all the water. Knead on low speed for 5 minutes.
- Fold the dough into a ball. Place inside an air fryer-safe baking dish. Cover with plastic wrap and allow to double in volume, 5 hours to overnight.
- Preheat the air fryer to 390 degrees F (200 degrees C). Remove the plastic wrap and score the loaf.
- Place the baking dish in the air fryer and cook until loaf is browned, about 20 minutes. An instant-read thermometer inserted into the center should read at least 190 degrees F (88 degrees C). Allow to cool before slicing.

- Combine ingredients, in the order listed in a bread machine. Choose the dough only setting (typically 1 hour and 28 minutes) to mix, knead and rise (be sure that the "heat" function is off - you do not want to bake in the machine!).
