1 Pound Certified Angus Beef Skirt Steak or Flank Steak
1 Red Bell Pepper (Diced)
1 Green Bell Pepper (Diced)
1 Yellow Bell Pepper (Diced)
1 Orange Bell Pepper (Diced)
1/4 Cup Sweet Onion (Diced)
4 Tbsp Fajita Seasoning or 1 Packet
Corn or Flour Tortillas

Steps:

  • Start by cutting the steak against the grain.
  • Spray the air fryer basket with olive oil cooking spray and place the steak in the air fryer.
  • Top with the vegetables and the seasoning evenly.
  • Spray with another coat of olive oil cooking spray.
  • Cook at 390 degrees for 5 minutes.
  • Open the air fryer or Ninja Foodi and mix up the ingredients, being sure everything is well coated with seasoning and add an additional spray of olive oil cooking spray.
  • Cover and cook using the air fryer for an additional 5-10 minutes at 390 degrees to your desired doneness. (We find that cooking for another 7 minutes is a perfect time, after 5 minutes, open it and check to see if it's to your desired doneness, if not add an additional 2-5 minutes.)
  • Serve on warm tortillas.

Well, lots of different ways to make an authentic carne asada but here is how I made mine, and then I made Air Fried Carne Asada for a quick dinner. You can make carne asada tacos--if there's any meat left over that is, because at our house, it was all we could do to wait until the pictures were taken before we dug in.

2 medium limes (juiced)
1 medium Orange (peeled and seeded)
1 cup Cilantro
1 Jalapeño Peppers (diced)
2 tablespoons Vegetable Oil
2 tablespoons White Vinegar
2 teaspoons Ancho Chile Powder
1 teaspoons splenda (or 2 teaspoon sugar)
1 teaspoon Kosher Salt
1 teaspoon cumin seeds
1 teaspoon Coriander Seeds
1.5 pounds skirt steak

Steps:

  • Place all ingredients except the skirt steak into a blender and mix until you get a smooth sauce.
  • Cut the skirt steak into four pieces and place into a zip-top plastic bag.
  • Pour the marinade on the steak and let the meat marinate for 30 minutes, or for up to 24 hours in the refrigerator.
  • Set your air fryer to 400F and place the steaks into the air fryer basket. Depending on the size of your air fryer you may have to do this in two batches.
  • Cook for 8 minutes, or until your steak has reached an internal temperature of 145F. It is critical to not overcook skirt steak, so as to not toughen the meat.
  • Let the steak rest for 10 minutes. Don't rush this stage.
  • Slice the steak against the grain (this part is important) and serve.

This air fryer flank steak is tender and cooked to perfection without heating up a grill or splattering all over your oven. Easy to clean up, healthy, and delicious!

3 tablespoons olive oil
2 tablespoons coconut aminos
1 tablespoon distilled white vinegar
2 large garlic cloves, minced
1¾ pounds flank steak or skirt steak
1/2 teaspoon kosher salt
black pepper
2 cobs corn, cooked or grilled, or frozen corn cooked (about 1½ cups)
1/2 shallot, chopped (about 2 tablespoons)
2/3 cup sliced cherry tomatoes
3 tablespoons chopped cilantro or parsley
1 tablespoon distilled white vinegar

Steps:

  • Mix together the oil, coconut aminos, vinegar, and garlic in a shallow cooking dish that the steak will fit into. Sprinkle salt and pepper on both sides of the steak and place into marinade, flipping to coat both sides. Either return to the fridge to marinate up to 24 hours, or leave on the counter to come to room temperature if you plan to cook within an hour. You should try to marinade the steak at least 1 hour.
  • Remove the steak from the fridge at least 30 minutes before you intend to cook. Preheat your air fryer to 400 degrees Fahrenheit. Place the steak in the air fryer and cook for 5-7 minutes each side (5 for rare at 120-130 degrees internal temp, 7 for medium at 130-135 degrees internal temp). Check the internal temperature once the timer is up and if it's done, place it on a cutting board (preferably with a moat to catch the juices) and cover with foil. Allow it to rest for 10 minutes before slicing thin against the grain of the meat.
  • Meanwhile, stir together the corn, shallot, tomatoes, cilantro or parsley, and vinegar. Add salt and pepper to taste. Allow it to sit for about 5 minutes to soak up the flavors. Serve over the steak.

Skirt steak is an inexpensive cut of beef taken from the diaphragm muscle. It ranks with filet mignon as my favorite juicy and tender cut. It comes in long, narrow strips about 3/4 lb. each. The grain runs across the narrow side and so for serving the steak should be cut into serving-size pieces with the grain so that it can then be cut into bites against the grain.

2 pounds beef skirt steak
2 tablespoons lemon juice
⅓ cup prepared spicy brown mustard
1 pinch salt and pepper to taste
1 cup blue cheese dressing

Steps:

  • In a small bowl, stir together the lemon juice and mustard. Trim away most of the fat from the steaks, and rub with the mustard marinade. Place into a resealable bag, and marinate in the refrigerator for at least 1 hour, and up to 24 hours.
  • Preheat a grill or large skillet for medium-high heat.
  • Grill or fry steaks for about 5 minutes per side, or to your desired degree of doneness. Remove from the heat, and let the meat rest for 5 to 10 minutes to let the juices settle. Cut each steak along the grain into 3 or 4 pieces. Serve with blue cheese dressing.

2 teaspoons salt
½ teaspoon garlic powder
½ teaspoon ground cumin
½ teaspoon jalapeno chili powder
¼ teaspoon chili powder

1 pound skirt steak, sliced into strips against the grain
1 onion, sliced into strips
1 bell pepper, seeded and sliced into strips

Steps:

  • Combine olive oil, salt, garlic powder, cumin, jalapeno chili powder, chili powder, and coriander in a resealable plastic bag. Add steak, onion, and bell pepper, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
  • Line an air fryer basket with a sheet of perforated parchment paper. Add marinated onions, peppers, and steak.
  • Air fry for 5 minutes at 400 degrees F (200 degrees C). Remove the air fryer basket and shake to ensure even cooking. Air fry until steak is cooked through, about 4 minutes longer.
