When you're home alone and don't want to run to the store or grab takeout, you can still have crispy fries with that salt and vinegar kick. You can double this recipe if you're in the mood for more.

Steps:
- Peel potato and cut lengthwise into 1/2-inch sticks. Rinse potato sticks under cold running water for a few seconds. Transfer to a large bowl. Add vinegar and just enough water to cover the potatoes. Let soak for 30 minutes.
- Preheat the air fryer to 320 degrees F (160 degrees C).
- Drain and pat the potatoes dry. Toss with oil, salt, and pepper in a bowl and transfer to the air fryer basket.
- Cook in the preheated air fryer until soft but not browned, about 16 minutes. Shake the basket and raise the temperature to 355 degrees F (180 degrees C). Air fry for 6 minutes, shake, and check for doneness. Cook until outsides of fries are crispy and browned, about 6 minutes more. Taste and adjust salt before serving.

- Preheat air fryer to 360°. Using a mandoline or vegetable peeler, cut potatoes into very thin slices. Transfer to a large bowl; add enough ice water to cover. Soak for 15 minutes; drain. Add more ice water and soak another 15 minutes., Drain potatoes; place on towels and pat dry. Spritz potatoes with cooking spray; sprinkle with salt. In batches, place potato slices in a single layer on tray in greased air-fryer basket. Cook until crisp and golden brown, 15-17 minutes, stirring and turning every 5-7 minutes. If desired, sprinkle with parsley.

- Place vinegar in a large soup pot and bring to a boil. Add potatoes and boil for 5 minutes. Remove from heat, cover, and let sit for 30 minutes.
- Line a baking sheet with paper towels. Drain potatoes but do not rinse. Arrange potato slices on the baking sheet, making sure none are overlapping. Cover the top of the potatoes with paper towels. Repeat layers until all potatoes have been dried.
- Preheat an air fryer oven to 400 degrees F (200 degrees C) according to manufacturer's instructions. Place the basket rack in the top slot. This will act as a shield so that the fan does not blow the chips around once they start to fry.
- Arrange potatoes slices on the remaining 3 racks and lightly sprinkle with salt. Place racks in the air fryer oven and cook for 10 minutes. Remove the top rack of chips and transfer chips to a plate. Set timer for 2 more minutes and then remove the next highest rack of chips. Set timer for 1 minute for the final rack of chips. Serve immediately.

Steps:
- 1. PREP/PREPARE
- 2. Yukon gold are the best for this recipe; second best would be red potatoes. Russets will not work, because they will fall apart when boiled.
- 3. Gather your ingredients (mise en place).
- 4. Place the water in a pot and bring up to the boil.
- 5. While the water is coming up to the boil, cut up your potatoes. I leave the skins on; however, if you prefer, you can peel before cutting... Up to you.
- 6. Add the salt, and apple cider vinegar to the boiling water, then add the potatoes.
- 7. As soon as the pot comes back to the boil, set a timer for 4 minutes.
- 8. After 4 minutes, remove from the water, drain on paper towels, and allow to cool down for 15 minutes.
- 9. While the taters are cooling, whisk together the oil coating ingredients in a small bowl.
- 10. Throw in the fries and toss to evenly coat.
- 11. Add them to the basket of your air fryer, set the temperature to 400f (205c), and cook until crispy, about 14 - 16 minutes, depending on the thickness of the fries.
- 12. Chef's Note: About every 2 - 3 minutes, shake the basket. This will keep the fries from sticking together and allow them to evenly cook.
- 13. PLATE/PRESENT
- 14. Serve while nice and hot with your favorite dipping sauce. Enjoy.
- 15. Keep the faith, and keep cooking.
