Crispy and nutritious, air fryer chickpeas are very low in calories, making them a good replacement for calorie-laden chips or nuts. So good on salads, too!

1 can (16 oz.) chickpeas, drained, rinsed, and dried ((see note))
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon onion powder
1/8 teaspoon coarse ground black pepper

Steps:

  • Heat air fryer to 400ºF. In medium sized bowl, toss chickpeas with oil, salt, garlic powder, paprika, onion powder, and black pepper.
  • Pour chickpeas into air fryer basket, spreading them out as much as possible.
  • Cook for 12 minutes, shaking 2-3 times during cooking time to ensure even cooking.

1 (15 ounce) can chickpeas, drained and rinsed
1 cup white vinegar
1 tablespoon olive oil
½ teaspoon sea salt

Steps:

  • Combine chickpeas and vinegar in a small saucepan and bring to a simmer. Remove from heat. Let stand for 30 minutes.
  • Drain chickpeas, removing any loose skins.
  • Preheat an air fryer to 390 degrees F (198 degrees C). Spread chickpeas evenly in the basket. Cook until dried out, about 4 minutes.
  • Transfer chickpeas into a heat-proof bowl and drizzle with oil and sea salt. Toss to coat. Return chickpeas to the air fryer and cook, shaking basket every 2 to 3 minutes, until lightly browned, about 8 minutes. Serve immediately.

Crunchy, salty, addictive corn nuts made easy and healthier thanks to the air fryer. This is my basic recipe, but feel free to add additional flavors such as Cajun seasoning, ranch powder, BBQ seasoning, chili powder, taco seasoning, etc.

14 ounces giant white corn (such as Goya®)
3 tablespoons vegetable oil
1 ½ teaspoons salt

Steps:

  • Place corn in a large bowl, cover with water, and let sit 8 hours to overnight to re-hydrate.
  • Drain corn and spread it in an even layer on a large baking sheet. Pat dry with paper towels. Air dry for 20 minutes.
  • Preheat air fryer to 400 degrees F (200 degrees C).
  • Place corn in a large bowl. Add oil and salt. Stir until evenly coated.
  • Place corn in batches in the basket of the air fryer in an even layer. Cook for 10 minutes. Shake basket and cook another 10 minutes. Shake basket and cook 5 additional minutes and transfer to a paper towel-lined plate. Repeat with remaining corn. Let corn nuts cool until crisp, about 20 minutes.

1 cup raw pumpkin seeds, rinsed and dried
1 cup distilled white vinegar
1 ½ teaspoons salt

Steps:

  • Place pumpkin seeds in a bowl. Pour vinegar over the top and let soak for at least 1 hour. Drain off vinegar and stir in salt.
  • Preheat an air fryer to 300 degrees F (150 degrees C). Place seeds in the basket and cook for 30 minutes, shaking the basket every 10 minutes.
  • Transfer seeds to a paper towel lined plate and let sit for 5 minutes.

1 (15 ounce) can chickpeas, drained and rinsed
1 cup white vinegar
1 tablespoon olive oil
1 teaspoon salt

Steps:

  • Combine chickpeas and vinegar in a saucepan. Bring to a boil. Remove from heat and let stand for 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a roasting pan with foil.
  • Drain chickpeas well, discarding vinegar. Spread on the roasting pan and drizzle with olive oil. Sprinkle salt on top and toss to coat.
  • Roast chickpeas, shaking the pan every 8 to 10 minutes, until they are slightly soft on the inside and crunchy on the outside, about 30 minutes. Transfer to a plate lined with paper towels to absorb excess oil. Serve warm or at room temperature.

Steps:

  • Spread chickpeas on a double layer of paper towels, cover with another layer of paper towels, and let dry for 30 minutes.
  • Preheat air fryer to 355 degrees F (180 degrees C).
  • Combine dry chickpeas, nutritional yeast, olive oil, smoked paprika, garlic, salt, and cumin in a bowl; toss to coat.

Extra virgin olive oil spray
1 teaspoon dried spices of your choice

Steps:

  • Drain chickpeas in a colander and transfer to a plate lined with paper towels.
  • Let them dry completely.
  • Transfer the chickpeas to the air fryer basket in a single layer and air fry 380F about 12 to 15 minutes, shaking the basket every 5 minutes until crunchy on the inside, not moist and golden brown on the outside.
  • Transfer the chickpeas to a medium bowl while still hot, spritz all over with olive oil and immediately toss with the spices. Eat at room temperature as a snack or over your favorite salad.

1 large Yukon Gold potato
1 cup distilled white vinegar
½ tablespoon light vegetable oil
salt and ground black pepper to taste

Steps:

  • Peel potato and cut lengthwise into 1/2-inch sticks. Rinse potato sticks under cold running water for a few seconds. Transfer to a large bowl. Add vinegar and just enough water to cover the potatoes. Let soak for 30 minutes.
  • Preheat the air fryer to 320 degrees F (160 degrees C).
  • Drain and pat the potatoes dry. Toss with oil, salt, and pepper in a bowl and transfer to the air fryer basket.
  • Cook in the preheated air fryer until soft but not browned, about 16 minutes. Shake the basket and raise the temperature to 355 degrees F (180 degrees C). Air fry for 6 minutes, shake, and check for doneness. Cook until outsides of fries are crispy and browned, about 6 minutes more. Taste and adjust salt before serving.
