KETO AIR FRYER SALMON CAKES WITH SRIRACHA MAYO
Salmon cakes can certainly be keto-friendly if you just tweak a few ingredients. They make a great dinner or you can serve atop a salad for a delicious lunch. The mixture can get a little sticky, so I spray my hands with cooking spray when handling, and I use a small silicone spatula to help get them off the plate and into the fryer.

- Whisk together mayonnaise and Sriracha in a small bowl. Place 1 tablespoon Sriracha mayo in the bowl of a food processor and refrigerate the rest until ready to use.
- Add salmon, almond flour, egg, 1 1/2 teaspoons seafood seasoning, and green onion to the Sriracha mayo; pulse quickly for 4 to 5 seconds until ingredients are just combined, but small chunks of salmon remain. (Do not overprocess as the mixture will become mushy.)
- Line a plate with waxed paper and spray hands with cooking spray. Form the salmon mixture into 8 small patties; transfer to a plate. Place in the refrigerator until chilled and firm, about 15 minutes.
- Preheat the air fryer to 390 degrees F (200 degrees C). Spray the air fryer basket with cooking spray.
- Remove salmon cakes from refrigerator. Mist both sides with cooking spray and gently place in the air fryer basket, working in batches if necessary to avoid overcrowding.
- Cook in the preheated air fryer for 6 to 8 minutes. Place on a serving platter and serve with remaining Sriracha mayo and a light sprinkling of Old Bay seasoning, if desired.

Steps:
- Mix mayonnaise, garlic, lemon juice, and Cajun seasoning together in a small bowl and refrigerate dipping sauce until needed.
- Place salmon, chives, parsley, garlic, and salt in a medium bowl and mix well. Add flour and mix well. Divide into 4 equal portions; mold into patties.
- Preheat air fryer to 350 degrees F (175 degrees C). Cut lemon into 4 slices.
- Place lemon slices into the bottom of the air fryer basket and place salmon patties on top. Lightly spray patties with cooking spray.
- Place the basket into the preheated fryer and drop the temperature to to 275 degrees F (135 degrees C).
- Cook in the air fryer until an instant-read thermometer inserted into the center of a patty reads 145 degrees F (63 degrees C), 10 to 15 minutes. Serve with sauce.

- Mix ingredients together- in a large bowl, use a spatula to mix together the salmon (drained, mashed, and skin/bones removed if you'd like), eggs, mayo, salt, breadcrumbs, lemon zest and dill.
- Measure out patties- using a 1/2 cup measuring cup, firmly pack the mixture into the cup, then tap it out into the palm of your hand.
- Form patties- pat gently to form a patty that is no more than 1 inch thick and is of equal thickness across the patty.
- Cook the patties- heat air fryer to 390°F. Spray the basket with oil, then add patties into the basket. Spray the tops of the salmon patties. Cook for a total of 8 minutes. Spray a second time 1-2 minutes before the patties are cooked through. See note 1 for differences between oven and basket air fryers.
- Serve- top the patties with the serving suggestions, and enjoy!

- Beat together the butter, brown sugar, and granulated sugar in a medium mixing bowl until light and creamy.
- Beat in the egg and vanilla extract until just combined. Beat in the peanut butter.
- Add the flour, baking powder, baking soda, and salt to the mixing bowl and beat until well combined.
- Place the dough in the refrigerator for 30 minutes to chill.
