KETO AIR FRYER SALMON CAKES WITH SRIRACHA MAYO



Keto Air Fryer Salmon Cakes with Sriracha Mayo image

Salmon cakes can certainly be keto-friendly if you just tweak a few ingredients. They make a great dinner or you can serve atop a salad for a delicious lunch. The mixture can get a little sticky, so I spray my hands with cooking spray when handling, and I use a small silicone spatula to help get them off the plate and into the fryer.

¼ cup mayonnaise
1 tablespoon Sriracha
1 pound skinless salmon fillets, cut into 1-inch pieces
⅓ cup almond flour
1 egg, lightly beaten
1 ½ teaspoons seafood seasoning (such as Old Bay®)
1 green onion, coarsely chopped
cooking spray
1 pinch seafood seasoning (such as Old Bay®)

Steps:

  • Whisk together mayonnaise and Sriracha in a small bowl. Place 1 tablespoon Sriracha mayo in the bowl of a food processor and refrigerate the rest until ready to use.
  • Add salmon, almond flour, egg, 1 1/2 teaspoons seafood seasoning, and green onion to the Sriracha mayo; pulse quickly for 4 to 5 seconds until ingredients are just combined, but small chunks of salmon remain. (Do not overprocess as the mixture will become mushy.)
  • Line a plate with waxed paper and spray hands with cooking spray. Form the salmon mixture into 8 small patties; transfer to a plate. Place in the refrigerator until chilled and firm, about 15 minutes.
  • Preheat the air fryer to 390 degrees F (200 degrees C). Spray the air fryer basket with cooking spray.
  • Remove salmon cakes from refrigerator. Mist both sides with cooking spray and gently place in the air fryer basket, working in batches if necessary to avoid overcrowding.
  • Cook in the preheated air fryer for 6 to 8 minutes. Place on a serving platter and serve with remaining Sriracha mayo and a light sprinkling of Old Bay seasoning, if desired.

½ cup mayonnaise
1 teaspoon finely minced garlic
½ teaspoon fresh lemon juice
2 pinches Cajun seasoning
12 ounces salmon, minced
1 tablespoon snipped fresh chives
1 teaspoon dried parsley
1 teaspoon finely minced garlic
½ teaspoon salt
1 tablespoon all-purpose flour, or more as needed
1 lemon

Steps:

  • Mix mayonnaise, garlic, lemon juice, and Cajun seasoning together in a small bowl and refrigerate dipping sauce until needed.
  • Place salmon, chives, parsley, garlic, and salt in a medium bowl and mix well. Add flour and mix well. Divide into 4 equal portions; mold into patties.
  • Preheat air fryer to 350 degrees F (175 degrees C). Cut lemon into 4 slices.
  • Place lemon slices into the bottom of the air fryer basket and place salmon patties on top. Lightly spray patties with cooking spray.
  • Place the basket into the preheated fryer and drop the temperature to to 275 degrees F (135 degrees C).
  • Cook in the air fryer until an instant-read thermometer inserted into the center of a patty reads 145 degrees F (63 degrees C), 10 to 15 minutes. Serve with sauce.

1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chervil
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh chives
½ teaspoon Worcestershire sauce
½ teaspoon Dijon mustard
½ teaspoon seafood seasoning (such as Old Bay®)
½ teaspoon salt
¼ cup panko bread crumbs
2 (5 ounce) packages of fresh salmon

Steps:

  • Preheat an air fryer for 10 minutes to 400 degrees F (200 degrees C).
  • Whisk egg, mayonnaise, parsley, chervil, dill, chives, Worcestershire sauce, mustard, seafood seasoning, and salt together in a bowl. Mix in panko bread crumbs until combined. Gently fold in salmon.

12 oz canned salmon ((or 3 125 g cans); drained, mashed, skin and bones removed if desired)
2 eggs
1/4 cup mayo
1/4 teaspoon salt
1/2 cup breadcrumbs
lemon (zested)
1/2 teaspoon dried dill (or 2 teaspoons fresh)
fresh dill
yogurt or tzatziki
lemon wedges
fresh cucumber

Steps:

  • Mix ingredients together- in a large bowl, use a spatula to mix together the salmon (drained, mashed, and skin/bones removed if you'd like), eggs, mayo, salt, breadcrumbs, lemon zest and dill.
  • Measure out patties- using a 1/2 cup measuring cup, firmly pack the mixture into the cup, then tap it out into the palm of your hand.
  • Form patties- pat gently to form a patty that is no more than 1 inch thick and is of equal thickness across the patty.
  • Cook the patties- heat air fryer to 390°F. Spray the basket with oil, then add patties into the basket. Spray the tops of the salmon patties. Cook for a total of 8 minutes. Spray a second time 1-2 minutes before the patties are cooked through. See note 1 for differences between oven and basket air fryers.
  • Serve- top the patties with the serving suggestions, and enjoy!

1 large egg, beaten
¾ cup panko bread crumbs
½ cup diced onion
⅓ cup mayonnaise
½ lemon, juiced
1 teaspoon dried dill weed
1 teaspoon seafood seasoning (such as Old Bay®)
salt and freshly ground black pepper to taste
avocado oil nonstick cooking spray

Steps:

  • Combine salmon, egg, panko, onions, mayonnaise, lemon juice, dill, seafood seasoning, salt, and pepper in a bowl. Mix to combine and shape into 6 equal-sized patties.
  • Preheat the air fryer to 400 degrees F (200 degrees C). Line air fryer basket with parchment paper and spray with avocado oil.
  • Place salmon croquettes into the basket and spray with avocado oil.

½ cup butter, room temperature
½ cup brown sugar
⅓ cup granulated sugar
1 large egg
1 ½ teaspoons vanilla extract
¾ cup creamy peanut butter
1 ¼ cups flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup granulated sugar, for rolling

Steps:

  • Beat together the butter, brown sugar, and granulated sugar in a medium mixing bowl until light and creamy.
  • Beat in the egg and vanilla extract until just combined. Beat in the peanut butter.
  • Add the flour, baking powder, baking soda, and salt to the mixing bowl and beat until well combined.
  • Place the dough in the refrigerator for 30 minutes to chill.
  • Line the basket of your air fryer with parchment paper and preheat to 350 degrees.
  • Use a medium cookie scoop to scoop out portions of cookie dough. Shape into a ball with your hands and roll through granulated sugar to coat.
  • Arrange the cookie dough in the air fryer basket leaving 1-2 inches between each cookie to allow space for the cookie to spread.
  • Use a fork to lightly press a crisscross pattern into the top of each cookie.
  • Air fry for 5 minutes or until golden brown on the edges and tips of the crisscross pattern. Do not overbake.
  • Let cool for a couple of minutes before carefully removing from the air fryer with a spatula. Cookies will fall apart if not handled gently. Cool completely on a wire rack.

Steps:

  • Pre-heat Air Fryer for about 3 minutes at 400°
  • Spay or brush both sides of Salmon Cakes with oil. Put them into the pre-heated air fryer for 8 minutes, flip, and cook an additional 6 minutes.
  • Mix everything together from the Salmon Cake ingredients and form into 10 small patties, about 2″ in diameter.
  • Pre-heat a nonstick fry pan to medium high (around 7)
  • Spray or brush pan with oil.
  • Cook Salmon Cakes for about 4 minutes per side until crisp and brown.
