AIR FRYER ROAST CHICKEN
We love the air fryer for all sorts of items, but we love it best for cooking a whole chicken. The skin renders and gets perfectly crispy while the inside stays incredibly moist and flavorful.

- Preheat a 3.5-quart air fryer to 370 degrees F and spray the basket with nonstick cooking spray.
- Rub the outside of the chicken with the olive oil.
- Sprinkle the chicken inside and outside with 1 tablespoon salt and several grinds of pepper. Fill the cavity with the herbs, garlic and lemon. Put the chicken in the basket breast-side up, pushing it down so it does not touch the top of the fryer.
- Roast the chicken until it is golden and crispy and an instant-read thermometer inserted in the thickest part of the thigh, avoiding bone, reads 165 degrees F, 50 to 60 minutes.
AIR FRYER CHICKEN CURRY

- With an air fryer cake barrel or other similar oven-safe dish, place the tomatoes (sliced side up) and onion. Cook at 320°F/160°C for 25 minutes, or until they are soft and charred.
- Once the tomatoes and onions are cooked, add and mix in the garlic, ginger, butter, curry powder, cumin, coriander, smoked paprika, and chili powder. Cook for an additional 5 minutes in the air fryer.
- Puree everything with the heavy cream using an immersion blender or food processor. Cover and set aside.
- Place the cubed chicken in the air fryer basket. Lightly spray the chicken with oil and sprinkle with paprika. Cook in the air fryer at 380°F/190°C for 5-8 minutes, or until cooked through. (The chicken will be done once it reaches an internal temperature of 165°F/74°C with an instant read food thermometer).
- Once the chicken is finished, combine it with the sauce. Warm up the sauce by placing the curry in the air fryer basket and cooking for a final 3-5 minutes.
- Enjoy this recipe with rice and/or naan. Top with the fresh coriander.

- In a large bowl, place chicken and enough water to cover. Add 1/2 teaspoon salt; let stand 15 minutes at room temperature. Drain and pat dry. , Preheat air fryer to 375°. In a another bowl, mix oil, curry powder, onion salt, garlic powder and remaining 1/4 teaspoon salt; add chicken and toss to coat. In batches, place chicken in a single layer on tray in air-fryer basket. Cook until a thermometer inserted in chicken reads 170°-175°, 15-17 minutes, turning halfway through. - Preheat the air fryer to 350˚F (180˚C).
- Pat the chicken dry all over, including inside the cavity, with paper towels.
- In a small bowl, mix together the salt, pepper, garlic powder, and paprika.
- Rub the butter all over the breast side of the chicken, including under the skin of the breasts. Sprinkle the spice mixture all over the breast side of the chicken and rub to coat well. Tie the chicken legs together with kitchen twine.
- Place the chicken, breast-side down, in the air fryer and "fry" for 30 minutes. Carefully flip the chicken breast-side up and continue cooking for 20 minutes more, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
- Enjoy!

- Coat the chicken in the oil and set aside. In a bowl, combine the salt, garlic, paprika and mixed herbs with a good grinding of black pepper, then scatter onto a plate.
- Roll each oiled chicken breast in the seasoning and put in your air fryer basket. Cook at 180C for 18-20 mins, turning after 10 mins. To check it is cooked, pierce the chicken with a knife at the thickest part to see if the juices run clear. Or insert a temperature thermometer and it should read 70C. Serve with rice and greens or a salad.
