When I first started out making wedges, the one thing I was intimidated by was how to cut potatoes into the perfect shape wedge. Getting them crispy was another insane issue I had. It is actually the complete opposite, and they are so easy to make. I prefer them over making fries, and have included step-by-step photos of cutting the perfect wedge.

4 medium russet potatoes
1 cup water
3 tablespoons canola oil
1 teaspoon paprika
¼ teaspoon ground black pepper
¼ teaspoon salt

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until fork-tender, about 20 minutes. Drain. Place in a bowl and refrigerate until completely cool, about 30 minutes.
  • Combine oil, paprika, black pepper, and salt in a mixing bowl. Cut cooled potatoes into quarters and toss into the mixture.
  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Add 1/2 the potato wedges to the air fryer basket, placing them skin-side down and being careful not to overcrowd.
  • Cook until golden brown, 13 to 15 minutes. Repeat with remaining wedges.

1 cups cheddar cheese
1/2 cup bacon bits
1/2 cup green onions (chopped)
1/2 tbsp oil (avocado or olive oil spray)

Steps:

  • Place potato skins in one row in an air fryer basket. Spray them with oil. Air fry for 5 minutes at 360°F.
  • Top each potato skin with a generous handful of cheddar cheese.
  • Sprinkle with bacon bits. Air fry for 5 more minutes or until they are golden brown and the cheese is gooey and melted.
  • Top with green onions, sour cream and/or salsa.

1 batch Air Fryer Baked Potatoes
1 cup Cheddar Jack Cheese (shredded, divided)
8 slices Bacon (cooked, and chopped)
1/2 cup Sour Cream
Fresh Chives (chopped)

Steps:

  • Preheat the air fryer to 385F/196C.
  • Cut the cooled baked potatoes in half lengthwise. Use a small spoon to carefully remove the potato from the inside, leaving a ¼-inch "rim" attached to the shell.
  • Brush or spray potatoes with cooking oil. Generously season with salt and pepper.
  • Place the potatoes into the air fryer basket, skin side up. Cook for 10 minutes, flipping halfway through cooking time.
  • Sprinkle half of the cheese evenly inside each of the potato skins. Cook for 5 more minutes, or until potato skin is golden brown and cheese is melted.
  • Remove to a plate and repeat with any remaining skins. Load up with sour cream, bacon, more cheese, and chives, and serve warm.

4 baking potatoes (small)
2 tablespoons olive oil
1 cup shredded cheese
4 strips of bacon, cooked and crumbled (optional for topping)
1/2 cup sour cream (optional for topping)
coarse salt and ground black pepper for seasoning
1 diced green onion (optional for topping)

Steps:

  • Clean and dry potatoes. Coat the skins with olive oil and sprinkle with salt. Pierce a few holes in the potatoes with a fork.
  • Place potatoes in the air fryer basket. Cook at 390 degrees for 30 minutes.
  • Let potatoes cool and then cut in half lengthwise. Scoop out inside of the potato leaving a little to hold the shape of the skin.
  • Season the inside of the potatoes with salt and pepper. Add in shredded cheese and then place skins back in air fryer.
  • Cook at 390 degrees for 5 minutes to melt the cheese.
  • Top with your favorite toppings like sour cream, bacon and green onion.

4 medium russet potatoes (pre-baked)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 slices cooked and crumbled bacon (grease reserved)
1 tablespoon olive oil (only if not using bacon grease)
1/2 cup cheddar cheese (shredded)
3 green onions (sliced)
1/4 cup sour cream

Steps:

  • Cook the potatoes using your preferred method. See methods in post.
  • Half the potatoes lengthwise. Scoop out the center of the potato to leave 1/4" of flesh around the skin.
  • Coat the potatoes with the reserved bacon grease or olive oil. Sprinkle with salt and pepper.
  • Add the potatoes in a single layer to the air fryer basket. Cook for 5 minutes at 400 degrees F. Open the basket and add the cheese and bacon crumbles to the center of each potato. Cook for 2 more minutes, until the cheese is melted.
  • Transfer the potato skins to a plate and top with green onions and sour cream. Serve right away with additional toppings, if desired.
