Cooking your pancakes in the air fryer is a great option for those mornings when you're in a hurry. These will be ready and on your table in less than 10 minutes and there's no need to preheat your air fryer oven! Top with butter and sugar-free maple syrup (such as Walden Farms®).

nonstick cooking spray
½ cup pumpkin puree
½ cup peanut butter
2 eggs
1 teaspoon vanilla extract
½ teaspoon pumpkin pie spice
½ teaspoon baking soda
2 packets stevia sweetener (such as Truvia®)
1 pinch salt

Steps:

  • Line the air fryer basket with parchment paper and spray with cooking spray.
  • Combine pumpkin puree, peanut butter, eggs, vanilla, pumpkin pie spice, baking soda, sweetener, and salt in a bowl. Stir until well combined.
  • Working in batches if necessary, place about 3 tablespoons batter for each pancake on the parchment paper in the air fryer basket, leaving about 1/2 inch space in between.
  • Place basket in the air fryer oven and cook at 300 degrees F (150 degrees C), without flipping, until the bottom side is fully cooked, 4 to 6 minutes. Repeat with remaining batter.

Start the day right with a pillowy and fluffy serving of these air fryer pancakes. They're made with buttermilk and wheat flour.

2 cups wheat flour
1½ cups buttermilk
3½ tbsp melted butter
1 large egg
4 tsp baking powder
½ tsp vanilla extract
½ tsp salt

Steps:

  • Take a bowl and add flour, salt, and baking powder whisk through. Melt the butter. Take a second bowl, add the eggs, and whisk. Add the buttermilk, vanilla extract, and melted butter. Whisk all the wet ingredients through.
  • Add the wet ingredients to the dry ingredients and stir them into a thick batter. Let the batter rest for 4 minutes.
  • In the meanwhile preheat the air fryer to 375 degrees F for 4 minutes with the cake barrel or pizza pan inside. Spray the cake barrel or a pizza pan with cooking spray or add a little bit of butter.
  • Pour pancake batter in the pan, return into the air fryer and cook for 3 minutes then turn and cook for another 2 minutes. Take the pancake out and keep it warm. Repeat until all batter is cooked.
  • Serve and enjoy.

190 ml Semi Skimmed Milk
1 Tsp Cinnamon
1 Tsp Vanilla Essence
Philips Air Fryer
Hand Mixer

Steps:

  • Place the pancake mix in a mixing bowl and mix the milk into the dry mix. Scrape down the sides with a fork and give it an extra mix with a fork. Pour the pancake mix into two silicone baking pans.
  • Place the baking pans into the air fryer, one at a time until cooked, or in two air fryers if you have two.
  • Air fry for 8 minutes at 180c/360f.
  • Allow to cool for 2-3 minutes and then remove from the silicone and serve on a plate with your favourite pancake sauce.
