MOCHIKO CHICKEN

This is Hawaii's version of popcorn chicken! Marinate chicken overnight in a mochiko flour batter, then deep fry till crisp and golden.

Number Of Ingredients 9

2 pounds boneless, skinless chicken thighs
1/4 cup mochiko flour
1/4 cup cornstarch
1/4 cup sugar
1/4 cup soy sauce
2 eggs
1 teaspoon salt
6 cloves garlic, minced
1/4 cup green onions, chopped (optional)

Steps:

  • Chop the chicken into 1-inch, bite-size pieces.
  • Mix all the other ingredients (mochiko flour, cornstarch, sugar, soy sauce, eggs, salt, garlic, and green onions) together in a bowl.
  • Add the chicken to the bowl and marinate overnight (or at least 8 hours) in fridge.
  • Fill a small pot 1" high with vegetable oil. Deep fry on medium-high heat until the chicken is crisp and golden brown. This takes about 6 minutes. Eat with rice ^_^

1 Pound Chicken thighs
2 tbsp Soy sauce
2 tbsp Mirin
1 tsp Grated ginger
1 tsp Grated garlic
Salt and pepper to taste
4 tbsp Potato starch

Steps:

  • Cut the chicken up into bite size pieces
  • Put the chicken into a ziploc bag along with the marinade ingredients: soy sauce, mirin, ginger, garlic, and salt and pepper.
  • Marinade the chicken in the refrigerator for at least an hour. Overnight is preferred.
  • Remove the excess marinade from the bag.
  • In a separate bowl or ziploc toss the chicken in the potato starch to give it a nice even coating.
  • Place the chicken in the air fryer on top of the wire rack and apply a light coating of light olive oil spray so that there aren't any dry potato starch spots left.
  • Set the air fryer to 390F for ten minutes. Flip the chicken half way through.

Make easy Hawaiian mochiko chicken without the deep frying with this air fryer adapted recipe! Bonus: it's also naturally gluten free.

2 lbs boneless, skinless chicken thighs
1/4 cup soy sauce
1/4 cup sugar
3 cloves garlic (minced)
1 tsp ginger (grated)
1 egg
1/4 cup green onion (chopped)
2 tbsp cornstarch
3/4 cup mochiko
1/4 cup cornstarch
1 tsp kosher salt
canola or vegetable oil spray

Steps:

  • Cut chicken thighs roughly into 1.5-2 inch cubes
  • Whisk all marinade ingredients together
  • Pour marinade over chicken, coating all sides well, and marinate for at least 2 hours. Marinating overnight is HIGHLY recommended.
  • When ready to air fry, whisk mochiko, salt, and cornstarch together.
  • Shake off excess marinade from chicken and lightly coat in the breading mixture. The breading may become wet and sticky; that's okay.
  • Preheat air fryer to 390 degrees F.
  • Place breaded chicken into basket. (You may need to air fry in two batches, depending on how large your air fryer is).
  • Spray with canola oil, particularly targeting any areas of breading that are still dry.
  • Air fry at 390 degrees F for 10-12 minutes (depending on how thick your chicken pieces are), shaking and spraying again with oil halfway through.
  • Mochiko chicken can be served hot or at room temperature as part of a musubi. Leftovers will keep in the fridge.

3 cups cottonseed oil or 3 cups corn oil, for deep-frying
1/2 cup mochiko sweet rice flour
1/2 cup cornstarch
1/2 cup sugar
1/2 cup chopped green onion
1/2 cup soy sauce
4 large eggs, beaten
4 garlic cloves, minced
1 teaspoon salt

Steps:

  • Combine marinade ingredients, and marinate chicken overnight in refrigerator.
  • Allow excess marinade to drip off each piece before putting into oil.
  • deep-fry until done.
