KETO MOZZARELLA STICKS
Crispy low carb mozzarella sticks filled with cheese that oozes out when you bite into them. Dip these kid friendly keto mozzarella sticks in your favorite low sugar marinara sauce or ranch.

- Cut each mozzarella string cheese stick in half. Set aside.
- Using three shallow bowls, add almond flour to one bowl. Whisk 2 eggs in the second bowl. Add ground pork rinds to the third bowl.
- Working with one halved cheese stick at a time, first dust with almond flour.
- Then dip in egg wash.
- Next dredge in ground pork rinds. Repeat with remaining cheese sticks. Do a second dip in the egg wash and dredge in ground pork rinds for each cheese stick.
- Place each cheese stick on a baking tray and freeze for 2 hours or until hardened. This will prevent the cheese from melting before the outer coating is cooked.
- Instructions for frying (preferred): Add avocado oil to a small skillet. Heat over medium heat. Once oil is heated, drop in a few mozzarella sticks and fry for about 30-45 seconds. Remove and place on a paper towel lined plate to soak up excess oil.
- Instructions for baking: Preheat the oven to 400 degrees. Bake for 6 minutes or until golden brown and cheese starts to melt out.
- Instructions for air fryer: Air fry at 390 degrees for 3-4 minutes.

- Place the almond flour, garlic powder, parsley flakes as well as salt and pepper to taste into a shallow bowl or plate and mix together well.
- Add the beaten egg to a bowl.
- Place the crushed pork rind crumbs into another shallow bowl or plate.
- Cut the mozzarella string cheese sticks in half across the middle forming a total of 16 cheese sticks.
- Roll the cheese sticks into the almond flour mixture, then dip into the egg before finally dredging in the pork rind crumbs.
- Place the breaded cheese sticks onto a parchment lined tray, and place into the freezer for a minimum of 2 hours and up to overnight. The more frozen the cheese sticks are, the easier it will be to air fry them without them melting too quickly.
- Preheat the air fryer to 400 degrees if needed.
- Place the frozen cheese sticks into the air fryer, and cook for 6-8 minutes until browned and softened, but not completely melted.

- Cut the cheese sticks in half. Then crack the egg into a small bowl and beat it until it is all mixed together. Measure out the Parmesan cheese into another bowl. Add the basil and garlic powder to the Parmesan cheese and whisk together to combine.
- Dip your cut mozzarella piece into the Parmesan mixture first, then into the egg, and then again into the Parmesan. Place the dipped mozzarella stick onto a baking sheet lined with parchment paper. Repeat until you've dipped all the mozzarella pieces. Put the baking sheets into the freezer for an hour.
- Preheat the oven to 400. Bake the frozen mozzarella sticks for 8-10 minutes, flipping once halfway through. Serve hot with tomato sauce if desired. Enjoy!

KETO MOZZARELLA CHEESE STICKS RECIPE

- Freeze cheese sticks in the package overnight. The cheese sticks must be frozen solid. The cheese sticks will keep frozen in the freezer for up to 4 months. I always keep some stocked in the freezer just for this recipe! If you want mini cheese sticks you can cut the cheese sticks in half and freeze them in a freezer friendly zip lock baggie too.
- Place the 2 eggs in a small bowl big enough to fit the cheese sticks. Whip the eggs till fluffy. I use a mini bread loaf pan to hold the egg mixture so that when I dip the eggs it coats the cheese stick perfectly because of the height and depth of the pan without using more eggs.
- In another small bowl that's large enough to hold a cheese stick, add the pork panko, paprika, sea salt, Italian seasoning, onion powder, and garlic powder. Mix it until the mixture if fully combined.
- Unwrap the frozen cheese sticks.
- Dip each one in the egg mixture.
- Remove the cheese stick from the egg mixture and immediately dip it in the pork panko. Firmly press the panko around the cheese stick if you like the extra coating on your cheese sticks.
- Preheat the air fryer to 37o degrees.
- Place the coated cheese sticks on the air fryer tray.
- Bake at 370 degrees for 5 to 6 minutes. This is long enough to make them nice and soft but not too soft to where the melt through the tray. I have placed a sheet of parchment paper on the bottom of the air fryer too. This works nicely! The parchment paper is not required though.

LOW CARB KETO MOZZARELLA STICKS RECIPE

- Line a cookie sheet with parchment paper. Set aside.
- Place coconut flour in a small bowl. Beat the egg in a second small bowl. Mix the almond flour, pork rinds, and Italian seasoning in a third bowl.
- Dredge each piece of mozzarella in coconut flour. Dip it in the egg, shaking off the excess. Roll in the almond flour mixture until well coated, then place on the lined cookie sheet. Repeat with all the mozzarella (don't let the pieces touch on the cookie sheet).
- Place the cookie sheet in the freezer for at least one hour, or until ready to bake. (Don't skip this step! It's necessary to prevent the cheese from oozing out during baking.)
- Frying instructions (recommended):Heat 2 tablespoons oil in a skillet over medium heat. Once hot, fry the mozzarella sticks in a single layer, 1-2 minutes per side. They are done when they are golden brown and soft inside when pressed gently.Baking instructions:Preheat the oven to 400 degrees F. Take the cookie sheet out of the freezer and place in the oven (preferably onto the second rack from the lowest). Bake for 4-5 minutes, until the bottom side is golden. Flip and bake for 3-4 more minutes, until golden on the other side.
