AIR FRYER TATER TOTS
Steps:
- Preheat the Air Fryer to 400 degrees Fahrenheit. Prepare the air fryer basket.
- Add the Tater Tots to the air fryer basket in a single layer.
- Cook the Tater Tots on 400 degrees Fahrenheit for 12 minutes, tossing the tots every 4 minutes. Add an additional 1-2 minutes for crispier tots.

Made these yesterday as a snack, and at the end decided to kick them up with some hot sauce and butter... glad that I did. I can see serving them as a side with a good pub burger or steak, and as a snack they are awesome. So, you ready... Let's get into the kitchen.

Steps:
- 1. PREP/PREPARE
- 2. You will need an air fryer, or an oven with a convection setting to make this recipe.
- 3. Gather your ingredients (mise en place).
- 4. Dice the potatoes peel on or off, up to you.
- 5. Add to a bowl of ice water and allow to soak for about 30 minutes.
- 6. Add the potatoes to a mixing bowl and toss with the oil and dry ingredients.
- 7. Add the taters to the basket of your air fryer, set it to 400f (205c), and bake until crispy and golden brown, about 20 - 25 minutes.
- 8. Every five minutes or so, give the basket a shake, to help the taters brown evenly.
- 9. Add the browned taters to a bowl and toss with the butter and hot sauce.
- 10. PLATE/PRESENT
- 11. Serve as a side dish, or just eat as a snack. Enjoy.

This is an easy side dish to assemble, and can be baked in a convection oven, as well as, your air fryer. To keep this recipe simple, and true to its natural flavors, we will only be using salt and pepper for the spices. So, you ready... Let's get into the kitchen.

- 1. PREP/PREPARE
- 2. Gather your Ingredients (mise en place).
- 3. Chef's Note: I tried several different varieties of potatoes for this recipe, and I found that a good waxy variety; such as: Yukon gold, or red potatoes hold up best in the cooking process.
- 4. Cut the potatoes into quarters, and then slice up the carrots.
- 5. Chef's Tip: Cut the carrots to the same thickness as the quartered potatoes. That way they will finish cooking at the same time.
- 6. Add the veggies to a pot of cool water.
- 7. Bring the pot up to the boil as quickly as possible, and allow to boil for 4 - 5 minutes.
- 8. Discard the water, but keep the veggies in the warm pot until the internal heat from the veggies causes most of the moisture to evaporate.
- 9. Add the veggies to a small bowl, with one tablespoon of oil, and one tablespoon of softened butter. Then toss to coat.
- 10. Chef's Note: The heat from the veggies will melt the softened butter.
- 11. Chef's Note: While tossing the veggies into the oil and butter, add a bit of salt and pepper, to taste.
- 12. Add them to the air fryer.
- 13. Set the temp to 375f (190c), and cook for 7 minutes.
- 14. Chef's Note: About every two minutes, shake the basket.
- 15. Remove the veggies from the air fryer, and return them to bowl you used to toss them with the olive oil and butter. Add the second tablespoon of oil, and butter, and toss.
- 16. Return veggies to the air fryer, and continue to cook until the veggies are crispy, and tender, an additional 7 - 10 minutes.
- 17. Chef's Note: If you really want to be decadent, toss the veggies in an additional tablespoon of butter, before serving.
- 18. PLATE/PRESENT
- 19. Serve with fish, chicken, pork... whatever. Enjoy.

- Preheat air fryer to 380°. In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. - Rinse chicken and pat dry. Place in a large bowl, drizzle with oil, and toss to coat.
- Combine paprika, chili powder, cumin, onion powder, garlic powder, black pepper, salt, and cayenne in a small bowl. Sprinkle over chicken and toss until evenly covered.
- Preheat an air fryer to 375 degrees F (190 degrees C) according to manufacturer's instructions.
- Arrange chicken in the basket of the preheated air fryer in a single layer, not touching. Cook until no longer pink at the bone and the juices run clear, about 12 minutes, turning halfway through. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). For crispier wings, increase temperature to 400 degrees F (200 degrees C) and cook for 2 to 3 minutes more.
- Let rest for a few minutes before serving.

I made these for a Sunday brunch last weekend, and they were a total hit... wish I had made more. Easy/peasy to make, and taste so good. I do not have a lot of photos, but the final photo says it all. So, you ready... Let's get into the kitchen.

- 1. PREP/PREPARE
- 2. It was not my intention to publish this recipe; I had just planned to make some simple fried potatoes. However, as I was working on them, the mad scientist came out in me, and I threw in the vinegar, paprika, and cumin, then tossed them with some melted butter before serving... Bwahahahaha!!!
- 3. The best potato to use: I think that any potato would work. The reason I like Yukon gold is because they crisp up well; while still staying soft and creamy in the center. For that matter red potatoes would work well in this recipe also. If you are using russet potatoes be careful not to overcook, or they will fall apart when you dice them.
- 4. The cooking time was based on the size of the potatoes I was using. They were the small variety that fit easily into the palm of your hand. Your cooking time may vary. When a paring knife slips into the potato with just a bit of resistance, they are ready.
- 5. Gather your ingredients (mise en place).
- 6. Add the potatoes to a pot of boiling water, and cook until they begin to soften, about 8 - 10 minutes. Allow to cool and cut up into 1/2-inch (1.2cm) cubes.
- 7. Chef's Note: I leave the skins on; however, peel them if you wish.
- 8. Chef's Tip: Cut up the taters as soon as they are cool enough to handle. You want them warm when you toss the diced taters with the vinegar.
- 9. Preheat your air fryer to 400 (205c), for about 5 minutes.
- 10. Toss the cubed taters with the vinegar and spices, then allow them to sit for 5 minutes, and soak in that vinegar. Finally, toss with the oil and place into the air fryer basket.
- 11. Cook until crispy, about 20 - 25 minutes.
- 12. Chef's Note: Shake the fryer basket about every 2 - 3 minutes.
- 13. This last step is optional, but yummy. After the taters come out of the fryer, I toss them in a tablespoon of melted butter. YES!!!
- 14. PLATE/PRESENT
- 15. Serve with a side, with scrambled eggs, sausages, and toast, or whatever you choose. Sometimes I will make a batch and eat them by themselves. Enjoy.

AIR-FRYER SPICY CHICKEN WINGS
Chicken wings turn out perfectly when they're cooked in an air fryer. Here, they are tossed with a bit of baking powder before frying, which yields a particularly crunchy, browned skin with a rough, craggy texture. It's a technique based on one from Ben Mims's cookbook, "Air Fry Every Day" (Clarkson Potter, 2018), which he learned from J. Kenji López-Alt from Serious Eats. After frying, the wings are tossed with a honey and chile-based sauce spiked with fresh lemon juice and zest. Sticky, fiery and impossible to stop eating, they are an easier, leaner version of deep-fried chicken wings, made without the mess.

- In a large bowl, toss chicken with baking powder, salt and pepper until the pieces are thoroughly coated. Spread the pieces out on a rack placed on a rimmed baking sheet and refrigerate, uncovered, for at least 1 hour and up to overnight. (The longer, the better.)
- Heat the air fryer to 400 degrees, if preheating is necessary.
- Arrange chicken on air fryer rack so all of the pieces are standing up against the edges of the basket, with as much space around each one as possible. Fry until golden brown and crispy, about 20 minutes.
- Meanwhile, in a large bowl, whisk together butter, lemon zest and juice, honey, Tabasco and sriracha.
- Immediately transfer the fried chicken wings to the bowl with the honey-chile sauce and toss well. Serve at once.
