Air Fried Corn Nuts image

This simple and really tasty snack recipe for Air Fried Corn Nuts is easy and is gluten free, vegan, and low in fat. Share this simple snack with others!

16 ounces Hominy (- or large white corn kernels)
2 ½ tbsp Olive Oil
2 tsp Seasonings

Steps:

  • Prepare your corn (hominy) as described above by soaking them in water overnight. Then allow the corn to dry out on paper towels or a kitchen towel for about a half hour, padding them down as needed.
  • Preheat your air fryer to 400. I like to give my basket a quick spray with nonstick as well.
  • In a large bowl, whisk or use a fork to mix together your seasoning and the oil. Then transfer the kernels to the bowl, tossing them in the oil and seasonings. Use a large spoon to transfer spoonfuls of the kernels to the air fryer basket and then spread them evenly into a flat layer in the basket.
  • Bake the kernels for ten minutes. Shake the basket and continue to bake for another 10-12 minutes or until done. Tip: shake a third time if needed to prevent burning. While your kernels are baking, you can line a baking sheet with a couple of layers of paper towels or clean lint-free kitchen towel. When the kernels are done baking, transfer them to the towels and allow them to cool.

You will never eat store-bought corn nuts again after you taste these crunchy homemade corn nuts cooked in the air fryer. All you need is three ingredients: hominy, oil, and salt and about 45 minutes and you are set. Make them for game day, happy hour, or just a quick snack in the afternoon!

1 pound dried giant white hominy (mote pelado) - soaked overnight, drained, and patted dry3 tablespoons neutral cooking oil1 1/2 teaspoons kosher salt

Steps:

  • Preheat air fryer to 400°F (200°C). Place soaked hominy in a large bowl. Add oil and salt; stir until evenly coated. Place hominy in the air fryer basket in an even layer, working in batches as needed. Cook in air fryer for 12 minutes. Shake basket and cook until lightly browned, about 12 minutes more. Transfer corn nuts to paper towel-lined plate and let cool until crisp, about 15 minutes. Repeat with remaining hominy.

2 fresh ears of corn (, shucked and cleaned)

black pepper (, to taste)
oil spray or olive oil
2 tablespoons butter ( for spreading)

Steps:

  • Remove leaves and silk from the corn. Cut end of corn to fit air fryer basket. If needed for smaller air fryer, cut the corn in half.
  • Coat all sides of the corn with oil spray or olive oil. Season with salt and pepper around the whole corn.
  • Air Fry at 370°F for 12-16 minutes, flipping half way. Cook until kernels are tender and lightly browned. (Cooking time will depend on size of corn, how full air fryer basket is, & different models/sizes of air fryers).
  • Spread butter on the corn along with additional salt, pepper or your favorite seasonings, if needed. Enjoy!

14 ounces giant white corn (such as Goya®)
3 tablespoons vegetable oil
1 ½ teaspoons salt

Steps:

  • Place corn in a large bowl, cover with water, and let sit 8 hours to overnight to re-hydrate.
  • Drain corn and spread it in an even layer on a large baking sheet. Pat dry with paper towels. Air dry for 20 minutes.
  • Preheat air fryer to 400 degrees F (200 degrees C).
  • Place corn in a large bowl. Add oil and salt. Stir until evenly coated.
  • Place corn in batches in the basket of the air fryer in an even layer. Cook for 10 minutes. Shake basket and cook another 10 minutes. Shake basket and cook 5 additional minutes and transfer to a paper towel-lined plate. Repeat with remaining corn. Let corn nuts cool until crisp, about 20 minutes.

1 (15.5 ounce) can white hominy, drained and rinsed
1 tablespoon garlic powder
1 tablespoon chili powder
1 tablespoon vegetable oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with a sheet of aluminum foil.
  • Pat the rinsed hominy dry with paper towels and place into a mixing bowl. Sprinkle with garlic powder and chili powder. Drizzle with the vegetable oil, and toss until evenly coated. Spread onto the prepared pan in a single layer.
  • Bake in the preheated oven, stirring every 10 minutes, until the hominy is crisp and dry, 40 to 50 minutes. Allow to cool to room temperature before serving.
