AIR FRYER S'MORES
I know everyone likes s'mores, but I am a s'mores freak. When it's not possible to use a fire outside, I "roast" marshmallows on a fork over my kitchen burner, which is not ideal. Air fryers change the game: they cook the outside to golden brown perfection and the inside to the perfect gooeyness.

- Preheat an air fryer to 400 degrees F.
- Place the marshmallow inside and set the timer for 3 minutes. Meanwhile, place the graham cracker squares hole-side down on a plate and top one with the chocolate. After the marshmallow has cooked for 2 minutes, open the air fryer and place both graham squares inside. Roll the marshmallow onto the plain graham square and cook 1 minute more.
- Transfer the graham squares to a plate with a spatula, then sandwich them and eat while the s'more is still warm and gooey.
AIR FRYER SALTY CHOCOLATE CHIP COOKIE S'MORES
S'mores are very high on my list of favorite foods, but the item that likely takes the top spot is a chocolate chip cookie. I like for it to be, slightly salty, crunchy on the outermost edges but almost raw in the center, which if you think about it, is a very similar structure to that of a s'more. The key is to pick soft cookies because they will crunch up a little in the air fryer. And don't sleep on the chip! It will balance out the sweetness and help keep the chocolate and cookie butter inside.

- Preheat an air fryer to 400 degrees F.
- Place the marshmallow inside and set the timer for 3 minutes. Meanwhile, place the chocolate chip cookies flat-side up on a plate. Center the chocolate and arrange into a square on top of one cookie so there is no overhang. Place the cookie butter inside the chocolate square. After the marshmallow has cooked for 2 minutes, open the air fryer and place the cookies inside. Roll the marshmallow onto the plain cookie and cook 1 minute more.
- Transfer the cookies to a plate with a spatula. Top the marshmallow cookie with the potato chips, followed by the other cookie and eat while the s'more is still warm and gooey.
AIR FRYER COCONUT, CARAMEL, PEANUT BUTTER S'MORES
We were knee deep in Girl Scout Cookie season when I developed this recipe, and my partner and I had a lot of conversations regarding what are our favorite cookies. I like peanut butter-flavored Do-Si-Dos and he likes the combination of coconut, chocolate and caramel in Samoas. Thus a marriage between the two inspirational cookies was born in the form of a s'more.

- Preheat an air fryer to 400 degrees F.
- Place the marshmallow inside and set the timer for 3 minutes. Meanwhile, place the graham cracker squares hole-side down on a plate. Place the coconut chips on one graham square, then carefully center the chocolate on top. Spread the peanut butter on the plain graham square. After 2 minutes, open the air fryer and place the graham squares inside. Roll the marshmallow onto the peanut butter-topped square and cook 1 minute more.
- Transfer the graham squares to a plate with a spatula (you may have to pick up some coconut chips that have blown around and put them back on the square). AIR FRYER ELVIS S'MORES
I've been craving bacon in s'mores, but if we are being honest, adding only bacon felt like a little bit of a cop out. Elvis-inspired flavors seemed like the natural next step and in many ways, they act as the perfect s'mores "supporting actors." The bacon adds saltiness, the peanut butter amplifies the crunch factor and the bananas add to the gooeyness.

- Toast the marshmallow: Thread marshmallow onto a metal skewer and hold over medium-high heat, rotating, until golden brown, 1 to 2 minutes.
- Sandwich 1 peanut butter cup and 2 toasted marshmallows between 2 peanut butter cookies.

These peanuts are crunchy, spicy, salty, and addictive. I like to portion them out into plastic zip bags to take to work as an afternoon snack.

- Place coconut milk, pineapple juice, brown sugar, soy sauce, Sriracha sauce, and ginger in a medium sized bowl and whisk to combine. Add chicken strips and toss to coat. Cover with plastic wrap and refrigerate 2 hours or overnight.
- Preheat an air fryer to 375 degrees F (190 degrees C).
- Whisk eggs in a bowl. Combine shredded coconut, panko, salt, and pepper in a separate bowl.

- Break the graham crackers in half and place 9 halves in the air fryer, or as many as can fit leaving a little bit of space between each one for the air to circulate.
