Air Fryer Donuts made from scratch with yeast dough taste like the real deal. Better than baked and less fat than deep-fried!

- In the bowl of a stand mixer fitted with the dough hook, gently stir together lukewarm milk, 1 tsp of sugar, and yeast. Let it sit for 10 minutes until foamy (If nothing happens your milk was too hot or the yeast is too old, so start over).
- Add sugar, salt, egg, melted butter and 2 cups of flour to the milk mixture. Mix on low speed until combined, then with the mixer running add the remaining cup of flour slowly, until the dough no longer sticks to the bowl. Increase speed to medium-low and knead for 5 minutes, until the dough is elastic and smooth.
- Place the dough into a greased bowl and cover it with plastic wrap. Let rise in a warm place until doubled. Dough is ready if you make a dent with your finger and the indention remains.
- Turn the dough out onto a floured surface, punch it down and gently roll out to about 1/2 inch thickness. Cut out 10-12 donuts using a 3-inch round cutter and a 1-inch round cutter to remove center.
- Transfer donuts and donut holes to lightly floured parchment paper and cover loosely with greased plastic wrap. Let donuts rise until doubled in volume, about 30 minutes. Preheat Air Fryer to 350F.
- Spray Air Fryer basket with oil spray, carefully transfer donuts to Air Fryer basket in a single layer. Spray donuts with oil spray and cook at 350F until golden brown, about 4 minutes. Repeat with remaining donuts and holes.
- While the donuts are in the Air Fryer, melt butter in a small saucepan over medium heat. Stir in powdered sugar and vanilla extract until smooth. Remove from heat and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
- Dip hot donuts and donut holes in the glaze using to forks to submerge them. Place on a wire rack set over a rimmed baking sheet to allow excess glaze to drip off. Let sit until glaze hardens, about 10 minutes.

I love hot cinnamon doughnuts, but don't like or have all the oil to make the recipes. This version uses an air fryer. By using less oil, I can use tastier oil, thus my choice is butter. Serve and eat hot. Like traditional doughnuts they are much better hot than cold.

- Press 1/2 cup white sugar and butter together in a bowl until crumbly. Add egg yolks and stir until well combined.
- Sift flour, baking powder, and salt into a separate bowl. Place 1/3 of the flour mixture and 1/2 the sour cream into the sugar-egg mixture; stir until combined. Mix in the remaining flour and sour cream. Refrigerate dough until ready to use.
- Mix 1/3 cup sugar and cinnamon together in a bowl.
- Roll dough out onto a lightly floured work surface to 1/2-inch thick. Cut 9 large circles in the dough; cut a small circle out of the center of each large circle to create doughnut shapes.
- Preheat an air fryer to 350 degrees F (175 degrees C).
- Brush 1/2 of the melted butter over both sides of the doughnuts.
- Place 1/2 doughnuts into the basket of the air fryer; cook for 8 minutes. Paint cooked donuts with the remaining melted butter and immediately dip into the cinnamon-sugar mixture. Repeat with the remaining doughnuts.

- Grease a large bowl with cooking spray. In a small, microwave-safe bowl or glass measuring cup, add milk. Microwave until lukewarm, 40 seconds. Add a teaspoon of sugar and stir to dissolve, then sprinkle over yeast and let sit until frothy, about 8 minutes.
- In a medium bowl, whisk together flour and salt. In a large bowl, whisk together remaining ¼ cup sugar, butter, egg, and vanilla. Pour in yeast mixture, mix to combine, then add in dry ingredients, stirring with a wooden spoon until a shaggy dough forms.
- Transfer to a lightly floured surface and knead until elastic and only slightly tacky, adding more flour a teaspoon at a time if needed, about 5 minutes. Form into a ball then place dough in oiled bowl and cover with a clean dish towel. Let dough rise in a warm spot until doubled in size, about 1 hour.
- Line a large baking sheet with parchment paper and lightly grease with cooking spray. Punch down dough, then turn onto a lightly floured work surface and roll out into a ½" thick rectangle.
- Using a doughnut cutter or 3" and 1" biscuit cutters, punch out your doughnuts. Knead any scraps together and punch out more doughnuts or holes. Place doughnuts and holes onto baking sheets, cover with dish towel, and let rise again, 40 minutes to 1 hour more.
- Grease basket of air fryer with cooking spray and add 2 doughnuts and 2 doughnut holes at a time, making sure doughnuts don't touch. Cook at 375° for 6 minutes, until deeply golden. Place on cooling rack and repeat with remaining dough.
- Dip doughnuts in glaze (see below) or follow instructions for cinnamon sugar. Return to cooling rack and let set for 5 minutes before serving.

Steps:
- In a glass measuring cup, add warm water, sugar and yeast. Stir.
- Let the yeast sit until it proofs and is puffy. Set aside.
- In a large bowl, sift together flour, baking powder, baking soda, salt and sugar.
- Cut in the shortening until mixture is crumbly.
- Stir in the buttermilk and yeast mixture until a dough forms. (Add a bit more flour if the dough is too wet to handle.
- Flour a work surface and place the dough on the surface.
- Flour your hands and knead dough several times until dough is smooth and elastic.
- Divide dough into 20-25 pieces and roll into small balls. (can also make mini twists or mini donuts)
- Dip balls into butter and then place into the greased air fryer basket.
- Cook on 325 F. for 4 minutes. Let donuts sit in air fryer for an additional 1-2 minutes before removing.
- Remove from air fryer and immediately dip into the butter, letting excess drip off.
- Then coat in the cinnamon-sugar mixture.
- Repeat until all the balls have been cooked and coated.
- Serve warm or room temperature.

Well, after much testing, we cracked the code for creating a tender doughnut that is not deep fried - it's all about using a combination of all-purpose and cake flour. This recipe results in a tender doughnut that is lighter than air. Dusted in cinnamon sugar, these become simply irresistible!

- Sprinkle the yeast over the warm milk in a liquid measuring cup. Let stand until foamy on top, about 10 minutes.
- Beat the egg and oil using a stand mixer fitted with the paddle attachment on medium speed until combined. Add the vanilla, 2 tablespoons of the melted butter, and the yeast mixture. Mix on low speed until combined.
- Whisk the all-purpose flour, cake flour, 1/4 cup of the sugar, and the salt in a medium bowl. Add to the stand mixer in two additions, mixing on low speed after each addition until combined. Continue beating on medium speed, scraping down the sides of the bowl as needed, until the dough is no longer sticky to the touch, about 1 minute.
- Turn the dough out onto a lightly floured surface. Knead into a smooth ball. Brush a large bowl with melted butter. Add the dough and cover with a clean kitchen cloth. Let rise until doubled in size, about 2 hours.
- Turn the dough out onto a lightly floured surface. Roll out to 1/2 inch thick. Cut out 8 doughnuts with a doughnut cutter (or use a wide-mouth Mason jar to create the outer edge and the wide end of a metal pastry tip or a shot glass for the inner edge). Reserve the smaller rounds for making doughnut holes. Cover with the clean cloth and let rise for 30 minutes more.
- Place half of the doughnuts in a 6-quart air fryer and cook at 350 degrees F until golden brown all over, 5 to 6 minutes. Remove to a cooling rack and repeat with the remaining doughnuts and doughnut holes.
- Brush the doughnuts on all sides with the remaining 2 tablespoons melted butter. Combine the remaining 1/4 cup sugar with the cinnamon in a shallow bowl. Place the doughnuts into the cinnamon sugar and sprinkle to coat on all sides. Serve warm or at room temperature.

- Separate all of the biscuits and place them on the cutting board.
- Use a 1-inch cookie or donut cutter or similar to cut a hole in the middle of the biscuits. If you do not have a 1-inch donut cutter, you can cut with a knife, use the back of a pipping tip.
- Place 4 donuts in the air fryer and 4 donut holes. (I have a Cosori 5,8 QT) and I can cook 4 at the time with the donut holes.
- Bake at 350°F for 5 to 6 minutes or until golden brown.
- If you have a hot kitchen place the remaining 4 donuts and donut holes back in the fridge.
- Meanwhile, in a medium size (large enough to fit a donut) bowl combine the sugar and the cinnamon. Set aside.
- Place melted butter in a medium bowl large enough to fit a donut.
- When your donuts are nice and golden brown, take them out of the air fryer and place them on a plate. One at a time place the donuts in the butter and flip to coat both sides. Let the excess butter drip off and then transfer them to the bowl with the sugar cinnamon mixture. The cinnamon mixture will stick to the donut due to the butter coating.
- Let the donut rest on a rack.
- Repeat with the last four biscuits.
