Steps:
- Prep the flax egg by whisking together 1 tbsp ground flaxseed + 3 tbsp water and leaving in the fridge for at least 15 minutes (or up to overnight). If using an egg skip this step.
- In a large mixing bowl, beat the softened vegan butter with the brown sugar and caster sugar until smooth and fluffy.
- Add the flax egg and vanilla extract and mix to combine.
- In a separate bowl, whisk together flour, cinnamon, salt and baking soda.
- Add the rolled oats to the flour mixture and stir to combine.
- Add dry mixture to the wet mixture. Fold everything together until combined. The mixture will be thick and sticky.
- Add the raisins and mix to combine.
- Roll the mixture into balls (each should way approx. 30g, about a 1-inch ball) and place on your lined baking sheet. Make sure there is enough space between them to allow for the cookies to spread as they cook. You may need to bake them in 2 batches. Flatten the top of each cookie ball slightly by pushing it gently with your hands.
- Air Fry at 320F/160C for 12 minutes.
- Transfer to the wire rack to cool. The cookies will be very soft in the middle when first removed from the oven but will firm up as they cool.

Steps:
- Set air fryer to 325 F. Cut out a piece of parchment that just covers the bottom of the air fryer insert.
- Whisk together the flour, baking soda and salt in a medium bowl.
- Beat together both of the sugars and the butter in another bowl with an electric hand mixer on medium-high speed until light and fluffy, about 3 minutes. Scrap down the bowl with a rubber spatula. Beat in the egg and then the vanilla. Reduce mixer speed to low, add the flour mixture and beat until just combined. Stir in the chocolate chips with a wooden spoon.
- Scoop out slightly heaping tablespoonfuls of dough and roll into balls. Working in batches (about 6 at a time), arrange them at least 1 inch apart on the parchment-lined insert. Air-fry until golden brown, 6 to 8 minutes. Let cool in the insert for a couple minutes and then transfer with a spatula to a wire rack and cool completely. Cook the remaining dough balls in batches.

- In a medium bowl, combine maple syrup and almond butter. Stir to combine. Add organic cane sugar, almond flour, oats, and salt. Stir to combine, then add almond milk and vanilla extract. Stir until all ingredients are incorporated. Fold in chocolate chips.
- Cut parchment paper to fit and line the bottom of the basket (careful not to touch warm sides!) of your air fryer. Allow for a little room around the perimeter of the parchment for air flow.
- Divide the dough into 4 sections. Roll each section into a ball, then slighly flatten with your hands into a disc. Place 2 cookie dough discs in the basket of the air fryer, spaced apart. If you have a larger air fryer basket, you can bake all 4 at once as long as there is room between each cookie for air flow.

- First, I always like to start with wet ingredients. So, I melt the butter in a microwave for 15 seconds. Transfer it into a large mixing bowl and add both the sugar and beat for a minute or two until the creamy and fluffy texture. Add vanilla extract, egg, salt, and beat it again until they are combined.
- After all the wet ingredients are done now it’s time to add your dry ingredients. Add all-purpose flour, baking soda, and mix until they combine. Finally, add the chocolate chips and stir with a spatula until combined.
- Now, preheat your air fryer at 350F for 5 minutes. Preheating the air fryer provides the cookie dough a hot platform that helps to cook the cookies evenly and fast.
- Meanwhile, the air fryer is heating, you start shaping the dough for cookies. Divide the cookie dough into the equal potion and gently roll it into a ball and place it in the working space.
