This recipe combines the flavors of the classic Caprese salad of fresh tomatoes, mozzarella, basil, and balsamic vinegar with fried chicken and tortellini pasta.

4 boneless skinless chicken breasts (4 oz./125 g each)
¼ tsp (2 mL) salt
½ cup (125 mL) all-purpose flour
2 eggs
2 tbsp (30 mL) milk
1½ oz. (45 g) fresh Parmesan cheese (⅓ cup/75 mL grated)
⅔ cup (150 mL) panko breadcrumbs
1 tbsp (15 mL) Italian Seasoning Mix
8 oz. (250 g) fresh mozzarella cheese
3 cups (750 mL) cherry tomatoes
1 pkg (9 oz./275 g) refrigerated cheese-filled tortellini
1 oz. (30 g) fresh Parmesan cheese (¼ cup/60 mL grated)
½ cup (125 mL) fresh basil leaves, loosely packed
1 tbsp (15 mL) olive oil
1 tbsp (15 mL) balsamic vinegar
¼ tsp (1 mL) salt

Steps:

  • Season the chicken with the salt. Add the flour to one Coating Tray. Whisk the eggs and milk together in a second coating tray. Grate the Parmesan with the Microplane® Adjustable Coarse Grater and combine with the panko and seasoning in the third coating tray.Coat each chicken breast in flour first, then the eggs, then the panko mixture.Divide the chicken onto two cooking trays of the Deluxe Air Fryer. Place the trays on the top and middle racks.Cut the tomatoes in half with the Close & Cut; place them on the drip tray of the air fryer. Turn the wheel to select the setting; press the wheel to select AIR FRY. Turn the wheel to adjust the time to 18 minutes. Press the wheel to start. Switch the trays with the chicken halfway through cooking (you'll hear beeps as a reminder). Cook until the internal temperature reaches 165°F (74°C).Slice the mozzarella with the Quick Slice. When the chicken is halfway through cooking, add the tortellini to the 3-qt. (3-L) Micro‑Cooker® Plus with enough water to cover the pasta. Microwave, covered, on HIGH, for 8 minutes.Drain the pasta and transfer it to a medium mixing bowl. Grate the Parmesan cheese into the bowl with the Microplane® Adjustable Fine Grater. Grate the basil into the bowl with the Herb Mill. Add the remaining pasta ingredients and toss to combine.When the timer is up, top each chicken breast with the mozzarella. Turn the wheel to select the AIR FRY setting; press the wheel to select. Turn the wheel to adjust the time to 2 minutes. Press the wheel to start.Add the tomatoes to the pasta mixture and serve with the chicken.

4 boneless skinless chicken breast halves (6 ounces each)
1 cup pasta sauce
1 cup shredded mozzarella cheese
Chopped fresh basil, optional

Steps:

  • Preheat air-fryer to 375°. In a shallow bowl, lightly beat eggs. In another shallow bowl, combine bread crumbs and Parmesan cheese and pepper. Dip chicken in egg, then coat with crumb mixture. , Place chicken in a single layer on tray in air-fryer basket. Cook until a thermometer reads 165°, 10-12 minutes, turning halfway through. Top chicken with sauce and cheese. Cook until cheese is melted, 3-4 minutes. If desired, sprinkle with basil.

2 boneless skinless chicken breasts (sliced in half to make 4 thinner cutlets, 8 oz each )
6 tbsp seasoned breadcrumbs (I used whole wheat, you can use gluten-free)
2 tbsp grated Parmesan cheese
1 tbsp butter (melted (or olive oil))
6 tbsp reduced fat mozzarella cheese (I used Polly-o)
1/2 cup marinara
cooking spray

Steps:

  • Preheat the air fryer 360F° for 3 minutes.
  • Combine breadcrumbs and parmesan cheese in a bowl. Melt the butter in another bowl.
  • Lightly brush the butter onto the chicken, then dip into breadcrumb mixture.
  • When the air fryer is ready, place 2 pieces in the basket and spray the top with oil.
  • Cook 5 minutes, turn and top each with 2 tbsp sauce and 1 1/2 tbsp of shredded mozzarella cheese.
  • Cook 3 more minutes or until cheese is melted.
  • Set aside and keep warm, repeat with the remaining 2 pieces.

1/2 cup plain panko bread crumbs
2 1/4 ounces Parmesan, grated (1/2 cup)

4 small boneless, skinless chicken breasts (4 to 5 ounces each), pounded to an even thickness
4 to 8 tablespoons homemade or jarred marinara sauce, plus more for serving
1 ounce mozzarella, shredded (1/4 cup), or to taste
Pasta, for serving

Steps:

  • Heat an air fryer to 350 degrees using the air crisp feature. In a shallow plate, mix both bread crumbs with the Parmesan and Italian seasoning. In a bowl, whisk the eggs.
  • Dip each piece of chicken in the egg, coating it evenly, and let excess egg drip off. Then press into the bread crumb mixture to evenly coat. Place the prepared chicken in the air fryer in a single layer. You may need to cook in batches. If you do, heat an oven to 200 degrees.
  • Cook until the crust turns deep brown, 7 to 8 minutes. The timing depends on the air fryer. Spread 1 to 2 tablespoons marinara over each breast, then sprinkle with mozzarella. Cook until the cheese melts and the chicken cooks through, an additional 4 to 5 minutes. If cooking in batches, keep the first batch warm in the oven while preparing the next. Serve immediately with your choice of pasta and sauce.

2 pounds chicken wings, separated into drumettes and flats
Kosher salt and freshly ground black pepper
4 ounces Parmigiano-Reggiano, cut into small cubes
1 tablespoon chopped fresh rosemary leaves
4 large cloves garlic, roughly chopped
1/4 cup all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon sweet paprika
1/4 teaspoon cayenne pepper
1/4 cup grated Parmigiano-Reggiano
1/4 cup heavy whipping cream
1/4 cup crème fraîche
1 tablespoon chopped chives
1/4 teaspoon sweet paprika
Pinch cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • For the chicken wings: Toss the wings with the 1 teaspoon salt and 1/4 teaspoon black pepper in a large bowl and set aside.
  • Place the cubed cheese in a food processor and pulse 6 to 8 times until the cubes break up into smaller pieces, then process until the cheese resembles coarse sand, about 30 seconds. Transfer the cheese to a large bowl and reserve 2 to 3 tablespoons in a small bowl for sprinkling on the cooked wings if desired.
  • Place the rosemary and garlic in the food processor and process until the garlic is finely chopped. Transfer to the large bowl with the cheese. Whisk in the flour, cornstarch, paprika, cayenne, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Place half of the seasoned flour on a rimmed baking sheet. Set the wings on top and pour the remaining seasoned flour over the wings. Press the wings firmly into the seasoned flour until they are completely coated.
  • Preheat a 6-quart air fryer to 390 degrees F for 3 minutes. Working in batches, lay the wings in the air fryer in a single layer so they are not touching. Cook, flipping after about 7 minutes, until the wings start to brown and become crispy, 15 minutes total. Transfer the wings to a platter and sprinkle with the reserved 2 to 3 tablespoons of cheese.
  • Meanwhile, make the sauce.
  • For the sauce: Combine the cheese and cream in a small saucepan over medium heat. Cook, stirring frequently, until the cheese melts into the cream, 3 to 4 minutes. Stir in the crème fraîche and cook until warmed through, 1 to 2 minutes. Transfer to a small bowl and stir in the chives, paprika, cayenne, 1/4 teaspoon salt and 1/8 to 1/4 teaspoon black pepper.
  • Serve the wings with the sauce on the side for dipping.

1 teaspoon dried oregano

¼ teaspoon kosher salt
freshly ground black pepper to taste
3 (6 ounce) boneless skinless chicken breasts, flattened slightly

Steps:

  • Place beaten egg in a shallow bowl, add flour to another bowl. Combine bread crumbs, Parmesan cheese, flax seed meal, lemon zest, oregano, cayenne, salt, and pepper in a third bowl.
  • Dip each chicken breast into flour, then egg, and lastly bread crumb mixture, fully coating the chicken on both sides. Set coated chicken breasts into an air fryer basket. Depending on the size of your air fryer, you might need to cook them in batches.
  • Set the air fryer to 375 degrees F (190 degrees C). Cook chicken breasts for 10 minutes. Turn and cook until chicken is no longer pink in the center and the juices run clear, about 5 more minutes. The coating should be golden and an instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
