2 boneless, skinless chicken breasts
salt and ground black pepper to taste
1 tablespoon Dijon mustard
4 slices deli Swiss cheese
4 slices deli ham
2 toothpicks
¼ cup all-purpose flour
1 egg, beaten
1 cup panko bread crumbs
⅓ cup grated Parmesan cheese
cooking spray

Steps:

  • Set 1 chicken breast on a cutting board. Hold a sharp knife parallel to the cutting board and along one long side of the breast; cut chicken breast almost in half, leaving breast attached at one side. Open breast so it lies flat like a book and cover with plastic wrap. Lightly pound with the flat side of a meat mallet to 1/4-inch thickness. Repeat with remaining chicken breast.
  • Season each chicken breast with salt and pepper. Spread Dijon mustard on top. Place 1 slice of cheese on each breast. Top each with 2 slices of ham and 1 slice of cheese. Roll each breast up and secure with a toothpick.
  • Place flour in a shallow bowl. Place egg in a second bowl. Mix panko bread crumbs and grated Parmesan in a third bowl.
  • Preheat an air fryer to 350 degrees F (175 degrees C).
  • Dip chicken first in flour, followed by egg, and finally roll in the bread crumb mixture. Spray chicken rolls with nonstick spray and let sit for 5 minutes while the air fryer preheats.
  • Place chicken in the basket of the preheated air fryer and cook for 10 minutes. Spray any chalky spots with nonstick spray again. Cook until chicken is no longer pink in the center, 8 minutes more.

12 thin sliced (36 oz total skinless boneless chicken breasts, 3 oz each)
salt and fresh cracked pepper
1 large egg
2 large egg whites
1 tbsp water
1/2 cup seasoned breadcrumbs
1/4 cup grated parmesan cheese
5 oz 6 slices thinly sliced lean deli ham, sliced in half
6 slices 4.4 oz Sargento reduced fat Swiss cheese, cut in half

Steps:

  • Preheat oven to 450°F. Spray a large non-stick baking sheet with cooking spray.
  • Wash and dry the chicken cutlets; lightly pound the chicken to make thinner and lightly season with salt and black pepper.
  • Lay the chicken on a working surface and place a slice of ham on top of the chicken, then the cheese and roll, setting them aside seam side down.
  • In a medium bowl, whisk eggs and egg whites along with water to make an egg wash.
  • In another medium bowl, combine breadcrumbs and parmesan cheese.
  • Dip the chicken into the egg wash, then into the breadcrumbs.
  • Place chicken onto the baking sheet seem side down. Spray the top of the chicken with more cooking spray and bake about 25 minutes, or until until cooked.

1/4 teaspoon salt
1/4 teaspoon pepper
4 slices deli ham
2 slices aged Swiss cheese, halved
1 cup panko bread crumbs
Cooking spray
SAUCE:
1 tablespoon all-purpose flour
1/2 cup 2% milk
1/4 cup dry white wine
3 tablespoons finely shredded Swiss cheese
1/8 teaspoon salt
Dash pepper

Steps:

  • Preheat air fryer to 365°. Sprinkle chicken breasts with salt and pepper. Place on greased tray in air-fryer basket. Cook 10 minutes. Top each with 1 slice of ham and a 1/2 slice of cheese, folding ham in half and covering chicken as much as possible. Sprinkle with bread crumbs. Carefully spritz crumbs with cooking spray. Cook until a thermometer inserted in chicken reads 165°, 5-7 minutes longer., For sauce, in a small saucepan, whisk flour and milk until smooth. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened., Reduce to medium heat. Stir in wine and cheese; cook and stir 2-3 minutes or until cheese is melted and sauce is thickened and bubbly. Stir in salt and pepper. Keep warm over low heat until ready to serve. 2 medium boneless, skinless chicken breasts
1 tablespoon Dijon mustard
4 slices Swiss cheese
4 slices deli-sliced ham
1/4 cup all-purpose flour
1 egg, beaten
3/4 cup Panko breadcrumbs, plain or Italian
1/3 cup freshly grated Parmesan cheese

Steps:

  • Place the chicken breast on a cutting board and press down on the long side of the chicken breast with the palm of your non-dominant hand. While pushing down on the breast with your hand, cut through lengthwise until you are ½ inch from the other side. Open the chicken breast up like a book.
  • Place a piece of plastic wrap over the chicken breast and gently pound it with a meat tenderizer, make it the same thickness throughout.
  • Season the chicken with salt and pepper and then spread Dijon mustard on pounded surface of each chicken breast.
  • Place one slice of cheese on top of the mustard, then top with the 2 slices of ham and the other slice of cheese.
  • Starting with the long edge of the chicken breast, roll the chicken up to the other side, tucking each layer in as you roll. Secure with toothpicks.
  • Place the flour in one. Place the beaten egg in the second dish. Combine the panko breadcrumbs and Parmesan cheese together in the third one.
  • Dip the stuffed and rolled chicken breasts in the flour, then the beaten egg and then roll in the breadcrumbs-cheese mixture to cover on all sides. Press the crumbs secure against the chicken breast to make sure they don't fall off.
  • Spray the chicken breasts with grapeseed oil and let sit for 5 minutes before transfering to the air fryer basket.
  • Air-fry at 350°F for 16 minutes, flipping the breasts over halfway through the cooking time. Let the chicken rest for a few minutes before serving.

4 (5 ounce) skinless, boneless chicken breast halves
2 slices deli ham
2 slices deli Swiss cheese
¼ cup all-purpose flour
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper
1 large egg, lightly beaten
⅔ cup plain dry bread crumbs
3 tablespoons unsalted butter, melted

Steps:

  • Place each chicken breast on a cutting board between 2 pieces of parchment paper. Being careful not to pound all the way through, use a mallet or a foil-wrapped brick to flatten each breast to a thickness of 1/4 inch.
  • Cut ham and Swiss cheese slices in half so you have 4 pieces of each. Stack 1 piece ham and 1 piece of cheese in the middle of each flattened chicken breast. Roll up like a jelly roll, tucking the ham and cheese inside the breast as you roll. Secure the ends and sides with toothpicks so the cheese won't run out. Transfer to the refrigerator for at least 15 minutes, or up to 4 hours.
  • Preheat an air fryer to 350 degrees F (175 degrees C), if recommended by the manufacturer.
  • Combine flour, salt, and pepper in a small bowl. Place beaten egg in second bowl. Place bread crumbs in a third bowl.
  • Dip each chicken bundle in flour mixture, then in egg, and finally in bread crumbs to coat. If you notice any spots that are just coated in flour, lightly pat with beaten egg and bread crumbs. Gently pat each bundle with melted butter and place in the air fryer basket.
  • Air-fry until crust is nicely browned and chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
