CAJUN BLACKENED CATFISH
This is a recipe that I obtained from a very good Cajun friend who is a native of Lafayette, Louisiana. His family adopted me (friendly) many years ago and we have swapped Cajun and Creole recipes through the years.

Steps:
- In a shallow bowl, mix together the black pepper, garlic powder, onion powder, paprika, parsley, cayenne pepper, kosher salt, oregano, and thyme until thoroughly combined. Press the catfish fillets into the spice mixture to thoroughly coat.
- Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill. Melt butter in a glass or metal bowl. Light the burner, and place a large cast-iron skillet onto the burner over high heat. Pour about 1/4 cup of melted butter into the skillet; set remaining 1/2 cup of butter aside.
- When the butter in the skillet is smoking hot, lay the catfish fillets into the skillet. Cook until the spices are burned onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side. Don't breathe smoke from burning spices. To serve, pour remaining 1/2 cup of butter over the catfish.

AIR FRYER CATFISH

- Rinse fish and lay on paper towels, fold over to remove moisture from outside of fillets.
- In a shallow bowl whisk egg, in another add breadcrumbs, flour, salt, pepper and parmesan cheese. Mix together.
- Dredge each piece in egg, then breadcrumbs mixture. Allow excess to fall off.
- Preheat air fryer basket to 400 degrees F for 5 minutes. Spray inside of basket with olive oil spray.
- Lay coated fillets inside in a single layer without overlapping them.
- Cook for 15 minutes total (give or take depending on how thick your pieces are, check after 10 with 5 minutes on each side) flipping over half way through cook time.
- Remove when fork tender in thickest part of fillet and internal temp is 145 F.
- Plate and squeeze lemon on top and serve with tartar sauce.

- Preheat Air Fryer at 400 degrees.
- Trim catfish fillets and cut into nugget-sized pieces, if desired. Dry catfish thoroughly.
- Place cornmeal and salt into a zip-top bag. Add catfish fillets or nuggets and shake gently to coat.
- Spray/coat Air Fryer basket with olive oil. Place catfish in a single layer in the basket then spray fish well with olive oil. Cook at 400 degrees for 10 minutes.
- Use tongs to gently flip each piece of fish then spray the other side with olive oil. Cook for another 10 minutes.
- Cook additional 2-3 minutes to desired crispness.

SOUTHERN AIR FRYER CATFISH
Our Southern Air Fryer Catfish recipe is a healthier twist on traditional Southern deep fried catfish. The air fryer method fries without using oil.

- Preheat your air fryer for 2-3 minutes at 400 degrees.
- In a dish, measure and mix your cornmeal, flour, cheese, garlic and onion powders, cayenne, paprika, salt and pepper.
- In a different dish, use a fork or a whisk to scramble up your egg and buttermilk.
- Pat each catfish fillet dry with a paper towel, then dip into the egg mixture, coating both sides letting the excess drip back into the dish. A thin coating is all you need to get the crust to stick.
- Press the catfish into the cornmeal mixture on both sides of fish, making sure to coat fully and evenly.
- Using your tongs, carefully set your fillets evenly on the air fryer basket surface. If you wish to give a light spray of olive oil for extra crispiness and to prevent sticking, do this now.
- Set your timer for 12 minutes, turning with your tongs halfway through the cooking time. At the halfway point, you can also remove from the basket to spray a small amount of lemon juice or oil to prevent it from drying out. Place back in the basket and cook the additional time.
- Remove from air fryer and check to be sure that your catfish is cooked all the way through.

- Rinse off the fish fillets and pat it dry.
- Take all seasoning ingredients and pour it in a Ziploc bag. Make sure it's big enough to fit your fish!
- Put fish in the bag and shake it up. One fish at a time, shake up the bag until each fillet is well coated with the seasoning mix.
- Spray oil on every fillet.
- Put the fish in the air fryer and cook for 20 minutes at 400F. Flip the fillets half way throug cooking time.
AIR FRYER 3 INGREDIENT FRIED CATFISH
Steps:
- Pat the catfish dry.
- Sprinkle the fish fry onto both sides of each fillet. Ensure the entire filet is coated with seasoning.
- Spritz olive oil on the top of each filet.
- Place the filet in the Air Fryer basket. Do not stack the fish and do not overcrowd the basket. Cook in batches if needed. Close and cook for 10 minutes on 400 degrees.
- Open the air fryer and flip the fish. Cook for an additional 10 minutes.
- Open and flip the fish.
- Cook for an additional 2-3 minutes or until desired crispness.
- Top with optional parsley.

BLACKENED CATFISH

- The fillets should be at room temperature. Heat a large cast-iron skillet over very high heat until it is beyond the smoking stage and you see white ash in the skillet bottom, at least for 10 minutes. Meanwhile, pour 2 tablespoons melted butter in each of 6 small ramekins; set aside and keep warm. Reserve the remaining butter. Heat the serving plates in a 250-degree oven. Dip each fillet in the reserved melted butter so that both sides are well coated. Then, mix thoroughly all the spices for blackening mixture and sprinkle the Blackening Spice Mixture generously and evenly on both sides of the fillets. Place 1 or 2 fillets in skillet and cook uncovered over very high heat until the underside becomes deep brown, almost black (but not burned), about 2 minutes (the time may vary according to the fillet's thickness and the heat of the skillet). Turn the fish over and pour 1 teaspoon of butter on top of each. Cook until fish is done, about 2 minutes more. Repeat with remaining fillets. Serve each fillet while hot. To serve, place 1 fillet and a ramekin of butter on each plate.
