BISON BURGER WITH GARLIC MAYO AND CARAMELIZED ONIONS

- To make the burgers:
- In a large bowl mix the bison, beef sirloin, onions, garlic, and parsley until just combined. Add in the onion powder, garlic powder, seasoning salt, ketchup, Worcestershire, and a few turns of freshly ground black pepper. Add it all to the meat mixture and mix well to combine. Heat a large saute pan over medium-high heat and cook a small portion of the meat. Taste the cooked beef to see if you need to add salt. Add salt to the meat mixture to taste. Divide the meat into 4 evenly portioned round patties and set aside.
- To make the onions:
- Heat the bacon fat over medium-high heat in a large saute pan and add the onions. Cook for 1 minute, then season with salt. Cook the onions, stirring a lot, until they start to turn brown. If the onions start sticking to the pan and turning too dark, pour in a spoonful of water and scrape with a wooden spoon to pull them off the pan. Continue to cook and stir the onions until they're dark brown and caramelized, about 8 to 10 minutes. Turn off the heat and set aside.
- To make the mayonnaise:
- In a bowl, combine the mayonnaise, parsley, garlic, salt, and pepper, to taste and mix well.
- To serve:
- Reheat the large skillet over medium-high heat and drizzle in some olive oil. Heat the olive oil then place the burger patties in the pan. Cook for 3 minutes on each side for medium-rare. Top the burgers with a slice of cheese. To assemble, spread some garlic mayo on the bottom of the toasted bun. Put the burger on the mayo, top with caramelized onions, and then arugula. Cover with a bun top. Stick a toothpick into a cornichon and then stick into the top of the burger and serve.

- Mix beef, red onion, garlic, salt, pepper, Worcestershire, and English mustard together in a mixing bowl.
- Form patties by pressing a ball of ground beef with your hand and rounding the sides to your desired size.
- Cook burgers in the preheated air fryer until firm and no longer pink in the centers, about 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

When I went to the grocery, l could not find ground beef. Ground bison was the last package on the shelf, so it went home with me. I made the family bison burgers in the air fryer, and they were better than burgers on the grill! Juicy, full of flavor, and the liquid smoke adds just the hint of a grill flavor. Steps:
- Preheat the air fryer to 380 degrees F (190 degrees C).
- Combine ground bison, onion, egg, bread crumbs, Worcestershire sauce, liquid smoke, salt, and pepper in a bowl. Form into 4 equal-sized patties.
- Carefully place in the bottom of the preheated air fryer and set the timer for 8 minutes. Open air fryer, carefully turn the patties, and continue frying until juices run clear, 4 to 5 minutes more. Place each patty on a bun.

- Preheat air fryer to 400F When ready set temperature to 400F Spray both sides of patty with fat free cooking spray Cook for eight minutes total Flip with spatula two three times during cooking to ensure even cooking. I like to flip at minute three and six.
AIR FRYER BISON MEATBALLS
Steps:
- In a large bowl, combine the ground bison with the bread crumbs, onion, pepper, jalapeno, garlic, chili powder, cumin, onion powder, smoked paprika, adobo sauce and eggs. Mash it all together until evenly combined.
- Measure out about 2-3 tablespoons of the bison mixture. Flatten the mixture between your palms and place a single cheese cube in the center. Wrap the meat around the cheese cube until it is completely encased. Repeat with the remaining cheese cubes and meat mixture. If the cheese is completely wrapped, it shouldn't leak out of the meatballs when melted.
- Working in batches, arrange the meatballs in the basket of an air fryer. Air fry for 10-12 minutes at 350 F.
- While the meatballs are cooking, combine the yogurt, mustard, lime, cilantro and chili powder. Chill until ready to serve.
- Let the meatballs rest in the basket for at least five minutes before carefully removing. They will be delicate until the meat has cooled slightly. Serve with the tangy southwest sauce and enjoy!
