AIR FRYER BEIGNETS
These beignets take on a wholesome aspect as they're cooked in an air fryer. You will need a silicone egg-bite mold, available through retailers like Amazon®.

- Preheat air fryer to 370 degrees F (185 degrees C). Spray a silicone egg-bite mold with nonstick cooking spray.
- Whisk flour, sugar, water, egg yolk, butter, baking powder, vanilla extract, and salt together in a large bowl. Stir to combine.
- Beat egg white in a small bowl using an electric hand mixer on medium speed until soft peaks form. Fold into batter. Add batter to the prepared mold using a small hinged ice cream scoop.
- Place filled silicone mold into the basket of the air fryer.
- Fry in the preheated air fryer for 10 minutes. Remove mold from the basket carefully; pop beignets out and flip over onto a parchment paper round.
- Place parchment round with beignets back into the air fryer basket. Cook for an additional 4 minutes. Remove beignets from the air fryer basket and dust with confectioners' sugar.

AIR FRYER BEIGNETS
This pillowy New Orleans classic is easy to make at home in your air fryer and uses far less oil than the original. As a bonus, you can use the same sweet yeasted dough to make air fryer doughnuts - just cut into rings and air fry at the same temperature as the beignets. Finish with a dusting of powdered sugar or a quick glaze.

- Combine the flour, sugar, yeast and salt in the bowl of a stand mixer fitted with the dough hook and mix to combine. Add the egg, egg yolk, milk, butter and vanilla and mix on low to combine. Increase the speed to medium high and knead until the dough forms a loose ball around the hook and is smooth and elastic, about 3 minutes.
- Transfer the dough to a floured surface and lightly knead by hand just enough to bring it together into a smooth ball. Brush a medium bowl with melted butter and add the dough, turning to coat. Cover and let rise in a warm area until doubled in size, 1 hour to 1 hour 15 minutes.
- Punch the dough down and roll out on a lightly floured surface to a square slightly larger than 10 inches by 10 inches. Trim the edges with a sharp knife or pizza cutter to make an even square. Cut the square in a 4 by 5 grid pattern to make 20 rectangles. Loosely cover the dough and let rise right on the countertop for about 15 minutes.
- Preheat a 3.5-quart air fryer to 350 degrees F. Spray the basket with cooking spray and add half the beignets. Spray the beignets lightly with cooking spray. Cook until puffed and golden, about 6 minutes. Remove and repeat with the remaining beignets. Dust the beignets with confectioners' sugar and serve warm.

- Preheat air fryer to 350°F for 5 minutes. Lightly coat the basket with cooking spray. Add 4 to 6 dough pieces to the basket, placing them 1/2 inch apart. Coat the dough pieces lightly with cooking spray. Cook until golden brown, 3 to 4 minutes. Turn the beignets over, coat with cooking spray and cook until the other side is golden brown, 3 to 4 minutes more. Brush the beignets with some of the remaining melted butter. Transfer to a serving platter and immediately dust with confectioners' sugar. Repeat with the remaining dough pieces.

- Combine the lukewarm water, a pinch of the sugar and the yeast in a bowl and let it proof for 5 minutes. It should froth a little. If it doesn’t froth, your yeast is not active and you should start again with new yeast.
