Easy and healthy air fryer beef taquitos in under 30 minutes. These taco-seasoned ground beef with cheese rolled in a corn and flour blend tortilla are so tasty and crunchy. Make a few for a great snack, or a bunch for a dish the family will enjoy!

1 pound ground beef (80/20 preferred)
14 medium sized corn and flour blend tortilla (or 100% flour tortillas)
1 1/2 cups Mexican blend shredded cheese
1 teaspoon kosher salt
1 teaspoon oregano
1 teaspoon garlic powder
3/4 teaspoon cumin
1/4 teaspoon ground pepper
Oil spray (I use olive oil in my Misto sprayer)

Steps:

  • Preheat air fryer at 350 degrees Fahrenheit for 10 minutes.
  • Add salt, pepper, oregano, garlic powder and cumin seasoning to the ground beef. Mix well.
  • Add beef filling to tortilla, making sure to spread to the edges of the tortilla. Add cheese and roll tightly. Secure the ends with toothpicks.
  • Spray oil on all sides of taquitos.
  • Add the taquitos, toothpick side down, in a single layer in the air fryer basket.
  • Air Fry for about 8 minutes, until taquitos are golden brown and crispy.
  • Take out immediately and serve with dip/salsa of choice.

2 large eggs
1/2 cup dry bread crumbs
3 tablespoons taco seasoning
1 pound lean ground beef (90% lean)
10 corn tortillas (6 inches), warmed
Cooking spray
Optional: Salsa and guacamole

Steps:

  • Preheat air fryer to 350°. In a large bowl, combine eggs, bread crumbs and taco seasoning. Add beef; mix lightly but thoroughly. , Spoon 1/4 cup beef mixture down the center of each tortilla. Roll up tightly and secure with toothpicks. In batches, arrange taquitos in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook 6 minutes; turn and cook until meat is cooked through and taquitos are golden brown and crispy, 6-7 minutes longer. Discard toothpicks before serving. If desired, serve with salsa and guacamole.

The flavored ground beef mixture that fills each of these perfectly air fried crunchy taquitos is sure to make your mouth water!

1 ½ pounds lean ground beef
1 medium yellow onion (diced)
1 medium green pepper (diced)
2 tablespoons garlic powder
1 tablespoon paprika powder
3 tablespoons olive oil (for sautéing)
Salt and pepper (to taste)
2 eggs
24 soft corn tortillas
2 cups shredded Mexican cheese
Corn husk (torn into long strips, or kitchen string cut into 7" long sections)

Steps:

  • Heat olive oil in a large frying pan over medium heat, and sauté onions together with the green peppers, stirring until the onions sweated and turned slightly brown and the green peppers softened.
  • Add ground beef, stirring and breaking down any large pieces. Sauté until the meat turned slightly brown
  • Add garlic powder and paprika and continue to sauté until the ground beef are fully cooked and slightly crispy
  • Take the pan off the heat, season with salt and pepper to taste
  • Transfer the ground beef mixture into a bowl, stirring continuously to let the mixture cools.
  • Whisk 2 eggs in a small bowl
  • Once the ground beef mixture is cool (about 5-10 minutes), add eggs and mix well
  • On a clean work surface or a plate, lay down one corn husk strip (or kitchen string) sideways (in horizontal position). Place a soft corn tortilla on top of the strip
  • Put 1 tablespoon of shredded cheese on the tortilla, forming a line from top to bottom (vertically). Add 1-1/2 tablespoon of ground beef mixture on top of the cheese
  • Roll the tortilla. Start by taking the right side and bring it over to the left, covering the cheese and meat mixture. Tuck the edge under the filling mixture, then slowly and as tight as possible, roll the tortilla. Tie the corn husk strip/kitchen string securely around the middle of the roll. Push any filling that might have come out of the ends back into roll and cut off excess length of the strip/string
  • Repeat the process for the remainder of the tortillas
  • Spray the base and sides of your air-fryer basket with avocado oil spray, including the extra rack (if available).
  • Place as many taquitos in the basket and rack as you can without crowding them and spray the top with avocado oil spray.
  • If using the extra rack, set the heat to 375°F and timer to 8 minutes. Check the taquitos on the extra rack after 8 minutes, leave the ones on the basket below. Once the top surface is brown and crispy, flip them over so the bottom side can get crispy as well. Fry for another 4 minutes and check again, adding another 2 minutes of cooking time if necessary. Once they are brown and crispy, remove the taquitos on the top layer along with the rack. Flip the remaining taquitos over so the bottom side can get crispy, and fry for another 4 minutes.
  • If using only one basket, set the heat to 375°F and timer to 6 minutes. Check the taquitos and once the top surface is brown and crispy, flip them over so the bottom side can get crispy as well. Fry for another 3 minutes. Once top and bottom side are golden brown and crispy, take the taquitos out of the fryer. Add 2 minutes of additional time if the taquitos are not yet crispy.
  • Repeat the process for the remainder of the taquitos.
  • Serve immediately (see notes for suggested toppings)

2 Tablespoons olive oil for sautéing
1 medium yellow onion (diced)
1 green pepper (diced)
1.5 lbs ground beef
2 teaspoons garlic powder
1 teaspoon paprika powder
salt & pepper to taste
2 eggs
24 soft corn tortillas
2 cups shredded marble or Mexican blend cheese
corn husk strips or kitchen string (cut into ~ 7" long sections)
natural cooking spray

Steps:

  • Heat olive oil in a large frying pan over medium heat, and sauté the onions and peppers, stirring until the onions sweat and turn slightly brown and the green peppers are softened.
  • Add ground beef, stirring and breaking down any large pieces with a wooden sauce spoon. Cook until the beef is browned with no pink remaining.
  • Add garlic powder and paprika and stir to thoroughly coat. Take the pan off the heat, and season with salt and pepper to taste.
  • Transfer the ground beef mixture into a bowl, stirring continuously for a minute to help the mixture cool down.
  • Whisk 2 eggs in a small bowl. Once the ground beef mixture is cool (about 5-10 minutes), add eggs and mix well.
  • On a clean work surface or a plate, lay down one corn husk strip (or kitchen string) sideways (in horizontal position). Place a soft corn tortilla on top of the strip. (See notes below for corn husk prep.)

  • Repeat the process for the remainder of the taquitos.

1 tablespoon neutral oil, such as canola or vegetable
2 cloves garlic, minced
¼ cup yellow onion, diced
1 can fire-roasted diced green chiles, drained
1 teaspoon ground cumin
½ teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
1 ½ cups shredded rotisserie chicken
¼ cup chicken stock, or broth
1 tablespoon neutral oil, such as canola or vegetable
¼ cup yellow onion, diced
1 clove garlic, minced
2 teaspoons ground cumin
1 teaspoon chili powder
1 dried bay leaf
½ teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper
1 ½ cups shredded beef, or barbacoa
½ cup beef broth
16 corn tortillas
nonstick cooking spray, for greasing
¼ cup mexican crema
¼ cup crumbled queso fresco
guacamole
pico de gallo
1 bunch fresh cilantro, stems removed, chopped
2 limes, cut into wedges

Steps:

  • Make the chicken filling: Add the oil, garlic, onion, and green chiles to a medium pan. Season with the cumin, oregano, salt, and pepper. Cook over medium-high heat until the onion is translucent, 4-5 minutes. Add the shredded chicken and chicken broth. Cover, reduce the heat to low, and cook until warmed through, 5-6 minutes. Transfer the filling to a bowl and set aside.
  • Make the beef filling: Wipe out the pan. Add the oil, onion, garlic, cumin, chili powder, bay leaf, salt, and pepper. Cook over medium-high heat until the onion is translucent, 4-5 minutes. Add the beef and beef broth, cover, and cook for another 5 minutes, until warmed through and the beef is falling apart. Transfer the filling to a bowl, remove the bay leaf, and set aside.
  • Assemble the taquitos: Wrap the corn tortillas in a damp paper towel and microwave on high power for 30 seconds to warm. (Alternatively, heat each tortilla in a dry pan for 15 seconds on each side, until warmed through and pliable.)
  • Preheat the air fryer to 375°F ( 190°C) for 5 minutes.
  • Scoop 3 tablespoons of chicken filling onto the center of a tortilla. Tightly roll the tortilla and secure the end with 1-2 toothpicks. Repeat with the remaining filling to make 8 chicken taquitos total.
  • Scoop 3 tablespoons of beef filling onto the center of a tortilla. Tightly roll the tortilla and secure the end with 1-2 toothpicks. Repeat with the remaining filling and tortillas to make 8 beef taquitos total.
  • Lightly spray the bottom of the air fryer basket with nonstick spray. Place 3-4 taquitos at a time in the basket, leaving space between them, and air fry for 6-8 minutes, turning halfway, until brown and crisp. Remove from the air fryer and cover loosely with a kitchen towel or foil to keep warm while you fry the remaining taquitos.
  • To serve, arrange the taquitos on a platter. Drizzle with the crema and sprinkle with the queso fresco. Dollop a few spoonfuls of guacamole on top and spread over the taquitos, then spoon some pico de gallo down the center. Top with the cilantro and serve with lime wedges. Serve immediately.
